Kunal, I noticed that you don’t burn many things in your kitchen/videos while cooking, unlike a few other chefs. Just by the look and colour of the dishes you cook in your videos, I feel that it’s handled with care and cooked to perfection. Great Job! Wish I get to try your food for real one day!
Even if something gets burnt they can shoot that scene again .I don't think they want to show audience those scenes..so they only show the best :D..this is not live cooking 😀
In Bangalore and in Tamil Nadu we eat Ragi ball, ragi roti, ragi malt, ragi ganji, ragi dosa etc. It was our main food aside rice. These days everything is refined.

I would like to share a chutney recipe from Kerala, Allepey district. Take 11 madrasi onion, pierce it through a skewer and roast it on open flame. Do the same with red chilli 11 or less according to your taste. Let it cool, then add fresh kadipatha 13 to 14 , salt and grind to a paste. Heat a tadka kadai with coconut oil and pour it over the paste. You can store this chutney in the fridge.

You can soak urad dal for four hours & grind it mix it with ragi atta, keep it overnight & make dosa in the morning . Since Urad dal is high in protein, its good for health.

Hi chef, one thing I found about dosa experience is that cast iron pans are so better... They take time to heat up and prepare, but once we start making dosa, they turn crisp and cook so fast...
