Millet & Urad Dal Nashta, Veggie Dip
Ingredients:
Millet Atta - 1 cup
Urad dal - ½ cup
Salt (नमक) - to taste
Curry leaves (कड़ी पत्ता) - a sprig
Ginger, chopped (अदरक) - 1 tbsp
Cumin (जीरा) - 1 tsp
Water (पानी) - 1 cup
Green chilli, chopped (हरि मिर्च) - 2 nos
Onion, chopped (प्याज़) - ⅓ cup
Carrot, finely chopped (गाजर) - ⅓ cup
Tomato, chopped (टमाटर) - ⅓ cup
Capsicum, chopped (शिमला मिर्च) - ⅓ cup
Coriander, chopped (ताज़ा धनिया) - handful
Curd - 3 tbsp
Baking soda- 1½ tsp
Oil (तेल) - as required
Healthy Veggie Dip:
Cabbage, chopped (पत्ता गोभी) - ¼ cup
Carrot, grated (गाजर) - ¼ cup
Capsicum, chopped (शिमला मिर्च) - ¼ cup
Onion, chopped (प्याज़) - ¼ cup
Salt (नमक) - to taste
Pepper Powder (काली मिर्च पाउडर)- ½ tsp
Lemon juice (नींबू का रस) - 2 tbsp
Curd - 1 cup
Pepper powder - a pinch
For tempering:
Oil (तेल) - 3 tbsp
Heeng (हींग) - ½ tsp
Dry Red Chilli (सुखी लाल मिर्च) - 2 nos
Chana Dal (चना दाल) - 1 tbsp
Urad Dal (उड़द दाल) - 1 tbsp
Mustard Seeds (सरसों के बीज) - 1 tbsp
Ginger, chopped (अदरक) - 2 tsp
Green Chilli, slit (हरी मिर्च) - 2 pcs
Curry Leaves (करी पत्ता) - a sprig

Sir recipe is amazing. But one suggestion if u r added udad u no need to add soda.u can keep batter for 3 to 4 hrs or 8 hours and sllow to ferment naturally. It will be more healthy.u can always add salt in batter and allow to ferment. We always do this way in tamilnadu. We add salt in batter and keep for fermentation. It ferments well.

This is a sure shot recipe...healthy and very tasty.
I come from a generation who grew up eating millets as staples. In fact in my family we used to grow finger millet, , fox millet and little millet (Ragi, Navane and Saame in Kannada). Like you over the decades they made way to wheat flour, Maida and other grains and cereals.
However in the recent years I have been using millets regularly to make several traditional dishes like dosa, uttappam, Paddu, bisibelebath, kichdi and upma etc. but didn’t know that multi millet flour is available in the market. That should make life a little easier. Will definitely try it out.
Your pancakes are very close to our uttappam or Adai. I normally add grated cabbage and carrots to the batter along with the veggies you have added. We eat it with coconut chutney or tomato chutney. But your dip looks so different and interesting that I want to make this. Also pair it as a side dish to pulaos or vanghibath etc...
