This is a sure shot recipe...healthy and very tasty. I come from a generation who grew up eating millets as staples. In fact in my family we used to grow finger millet, , fox millet and little millet (Ragi, Navane and Saame in Kannada). Like you over the decades they made way to wheat flour, Maida and other grains and cereals. However in the recent years I have been using millets regularly to make several traditional dishes like dosa, uttappam, Paddu, bisibelebath, kichdi and upma etc. but didn’t know that multi millet flour is available in the market. That should make life a little easier. Will definitely try it out. Your pancakes are very close to our uttappam or Adai. I normally add grated cabbage and carrots to the batter along with the veggies you have added. We eat it with coconut chutney or tomato chutney. But your dip looks so different and interesting that I want to make this. Also pair it as a side dish to pulaos or vanghibath etc... Thank you as always for nicely explained recipe. Chef I hope you got to make such interesting millet dishes for the G20 guests.

I really love that Kunal Sir is bringing millets back to mainstream cooking as millets are a nutritious and sustainable crop. Looking forward to more millet based recipes using individual millets like jowar, bajra, ragi etc that can be purchased from the open market and will reduce brand dependence. I am not against brands per se but the benefit to an individual farmer would be more if there is no brand dominance in the millet market.
Sir recipe is amazing. But one suggestion if u r added udad u no need to add soda.u can keep batter for 3 to 4 hrs or 8 hours and sllow to ferment naturally. It will be more healthy.u can always add salt in batter and allow to ferment. We always do this way in tamilnadu. We add salt in batter and keep for fermentation. It ferments well.
Hi Kunal I really like the way you present. Very simple. Can I make this pancake only with any one millet flour like jowar flour or little millet flour etc
