    Thanks for making these videos. As a vegan I often find it difficult thinking about all the cruelty and suffering in the world, and can get swallowed up by the doom and gloom of it all, so to have your videos pop up on my feed is a really great reminder that things are moving in the right direction! Plus you're really funny, so that helps 😅

    Great episode. I am so happy for Chloe - what a triumph. Elmhurst is one of my favorites for milk. I didn't know their story. That's cool.

      Yes I love the Elmhurst backstory! Unfortunately I don't buy their milks often because their "classic milks" don't froth up well for lattes. But they have so many new products now! Which of their products do you like?

    7 vegans (and plant based) athletes won medals this olympics! two women at the brasil volleyball team are vegan, and diana taurasi won gold in basketball, making history on winning 6 golds in 6 olympics

      Thank you for letting me know!! I hadn't kept track of many of them other than Vivian and Diana! I was bummed Diana didn't play in the gold medal game but she seemed to play really well throughout the series! Love that stat about her making history! 💪🏻🥇

    Another brilliant video 💚
    I was thinking today about how meat eaters fear vegan things for having ‘too many ingredients’ as if they don’t eat recipes.
    They take offence with finer particles (spices and salt are exceptions for some reason): if something is larger than 1mm like sesame seeds and cubes of carrot and chunks of dead animal it’s okay. But if it’s particles of oat or soy it’s bad.
    They also don’t like thicker formed things. So if it’s soup it’s okay but if it’s firm or springy like seitan it’s bad.
    The more solid the more they hate it. So tofu, vegan cheese, vegan ice cream are bad.
    They don’t like things that look like other things. That’s well established. But they are happy to call things other things like hot dogs.
    Maybe they would feel more comfortable if we made vegan products’ ingredients lists pictures like hieroglyphs so they can see that even though very small pieces they did come from real natural things. And perhaps more public demonstrations need to be made with things like fruit pectin and seaweed to show them the remarkable safety of congealing coagulating food things alongside demonstrations of oils that are hard at different temperatures and that firmer items are not to be feared.
    They seem to be safe around the idea of cottage cheese which is the breast milk of another species unnaturally mechanically manipulated so that it separates into both a fine particle thing and a firm springy thing and this gives hope that in time they may come to terms with micro-recipes.

      Really interesting observations! Especially about liquids vs solids and biases against thickness. And you're so right; much of this comes down to perception and exposure. I, too, was initially freaked out by things like tofu and even hummus! The hieroglyphs thing is funny but it's actually a good idea! Especially when people eat so many of these ingredients anyway, in much more processed and modified forms (i.e. soy, corn) than in vegan foods. And yes there's such cognitive dissonance about processing and number of ingredients. I saw a graphic once that was a list on one side of a bunch of ingredients in a salad. Then on the other side it was just "lard." It was meant to demonstrate that less ingredients ≠ healthier.

    I know all about "By Chloe" and the story behind it. However, if you're not from NYC, many of you won't know the other story that involves Chloe. I'm not looking to start drama and this is anecdotal, of course, but it affected me and mice. I know that sounds odd but let me explain: a young lady who worked in the kitchen of By Chloe at their Bleecker St location reached out to a local animal rights group (don't recall the name) about the excessive use of glue traps in the kitchen and pantry areas. She stressed out over this and even managed to save a few and take them home. She sent the group a picture of a mouse stuck on a glue trap and detailed account of the chef's indifference and bullying over this abuse. This chef was also quoted as saying, "We should just put butter in this dish. It's not like they're going to know.".
    So this is the environment created by the father-daughter team that controlled Chloe. Two very toxic individuals. Anyway, this young lady was getting scared to release more info because she was worried about losing her job and word got back to the chef about the vegan community knowing about the use of glue traps in the restaurant. He was pissed and let everyone in the kitchen know that they better keep their mouths shut or else. My gripe with Chloe on this is, she could've stepped in and stopped it. She was a partner after all so that was telling.
    Then, the construction of their second location on 23rd st, began, which was literally across the street from my job at the time. And wouldn't you know it, chef Chloe came by to check on the work. I happened to be outside walking by and saw her come out of the soon-to-be eatery. I waved at her and asked if we could talk for a minute. She had to take a call but agreed. I waited a good five or ten minutes and turned my head and noticed she was halfway down the block walking toward Sixth Ave. but not in any hurry. That was also telling. I get she was under pressure and saw that when I bumped into her at my local Whole Foods. She had no makeup on and was looking really depressed. I didn't bring up the glue traps and never saw her again. Speculate if you will but no matter how screwed up I am, I'm not going to let an animal suffer if I can help it. I'm not telling you this so people can hate on her. I get, in some way, what that partnership had done to her but I don't excuse those two actions. I did remind her on X to keep glue traps out of the new restaurant but she will never admit to such a thing so I received no response.
    Remember; there are vegans who are "dietary vegans" and the vegans who embrace the whole philosophy. I wish her luck and hope for a brighter future for any mice that happen to find their way into her establishment.

      I appreciate you sharing this information. With the limited knowledge I have from what you shared, I can’t really fault Chloe for these stories. Of course glue traps are horrendous but if I had to guess I wouldn’t think Chloe had much control over this situation. It sounds like she was in way over her head with her partners and I would not be surprised at all if they had already started undermining her power at that point. It also does not sound like Chloe *at all* to be flippant about adding animal products to food, but it does sound very much like what we’ve heard about the partners not “getting” or caring about veganism. As for Chloe “not caring” about the mice situation, I believe she had to be going through her own personal hell at that point; the things I shared from her legal filing were only the tip of the iceberg in terms of the alleged bullying and harassment she was receiving from her partners. Lastly, I have to emphasize I do not believe Chloe Coscarelli is a “dietary vegan” in any sense of the term. I have been following her on social media for many years and have seen nothing that would suggest that. She champions vegan fashion companies, rescues animals, lends her voice to vegan causes, and seems to care deeply about the word “vegan” and all that it encompasses.

      @@TotallyForkable I should've been clear that the chef was not Chloe but another chef they hired. I guess he did the lunch shift. I'm aware of her story with her partners and I saw the stress first hand but one can only speculate. I can say for a fact she walked off without a word which was rude. We all go through stuff but you can choose to have manners or not at one specific moment. You can save an animal or not at one specific moment. If a vegan doesn't step in to help despite all the negatives going on in that vegan's life, who will step in when an animal is suffering, especially a mouse. This girl did bring this up to Chloe but nothing happened. I can only give a person so many passes.

    Great all around news update, once again, Marielle! I knew nothing about Chloe's former restaurant(s) or her back story until now. So, thanks for filling-in the clueless folks like me :) Indeed, her triumphant legal battle victory seems very positive news for this community! I'd love to visit her re-opened location one day. Also, I think It's possible I might be as intrigued by the TerraMeat product as you are. Lol And lastly, the twin study does indeed seem like the gift that keeps on giving. As you say, just confirming to us what we secretly already know. 😉

    well I am glad that the olympics is going vegan and eco - and hope they keep it up. If anyone knows about an olympic vegan recipe book - I'll be all ears. I haven't seen one yet - but it really makes me want to look into creating one. Half about the vegan olympians' go-to consuming, as well as what the olympics serves that is vegan.

      I'm glad I shared it! I always assume people know the same vegan lore as me, which isn't always true! Joke or not, I'm slightly ashamed to admit that yes I usually drove 😂😂 (In my defense it was inside a Whole Foods 365 so usually I was bundling my visits with a grocery trip so that was my excuse. I _did_ walk quite a bit in that neighborhood though, so don't judge me too hard!)
