Keto French Macaron Shells | The Recipe That Works | 0.4g net carbs

  • After much testing here is my take on keto French macaron shells. There are many options to create your own filling, a thick ganache, sweetened heavy cream or perhaps a custard. You can also flavor them however you like...so do make your favorite.
    Please note an oven shower is a process of dehydration where your would dry the baked goods. For short periods you can do this by leaving the baked goods in the oven after you have turned it off. For longer periods please set your oven temperature to the lowest setting which will provide the drying environment required. Mine took 2 hours so you will use the second option.

    Makes 46 Shells or 23 Pairs (1.5"/4cm Macarons)
    Nutritional Information/2 Shells:
    Cal: 44 | Net Carbs:0.4g | Fiber: 0.52g | Total Carbs: 0.92g | Fat: 3.53g | Protein: 1.57g
    Ingredients:
    3/92g Egg Whites, room temperature
    1 Pinch Egg White Powder, sifted
    ¼ cup/55g Heavy Cream
    ½ tsp/2g Extract/Flavoring
    1 cup/150g Sweetener
    1 tsp/5g Butter, melted
    2 tsp/8g Baking Powder
    1 cup/ 115g Almond Flour, sifted

    These look delicious! Thank you for the heads up on the monk fruit sweetener. I've never used it and just got some a couple days ago to try. Now, I won't think I'm weird or that something is wrong with what I bought!

    I’m sure you’ll perfect it. Quick question, do the macaron baking mats not work well for this recipe?

    Mel these look great!! Could coconut flour possibly be substituted? I’m on a low oxalate diet and almond flour is a no no for me! I love your recipes and should make them more!

      Yes you can use coconut flour but please use half the amount required for the almond flour. Yes yes you need to make more of my recipes 🤣🤣🤣

I’m not a lover of macarons but I do think I’d like those, so thank you. Please don’t give that husband of yours a hard time, he’s a man, they’re delicate! You have to treat them with kid gloves if you want anything out of them. 🙄🙄

    Interesting. I know the "keto upgrade channel" was trying to do a french macaron recipe using coconut flour but also has not been pleased with the results. Maybe you guys could join forces!?

    If you're still using almond flour, why not use the traditional recipe and replace the sweetener? I think allulose might make them slightly darker but keep the texture, possibly too soft so combining sweeteners might work better, erythritol gets crispy. The almond flour has to be made extra fine in a food processor.

      Tried the traditional recipe and was a fail. I guess you could try making them yourself to see how painful the process is of trying different recipes and not getting a good result...lol that was my entire week. Erythritol worked great as I used it in my recipe and I worked with it because a few countries have banned allulose...which is a little upsetting for those who can't get it. I sifted the almond flour for those who don't have a food processor and even though my almond flour was fine I got plenty of grains that was not. Lol isn't this an interesting investigation. I too was curious as to what the problem was. Thanks for the chat 😊

    Have you tried holding the egg whites back to be folded in just before folding almond flour in? It looks fantastic regardless and better then my attempts a couple years ago😁

    Have you tried placing your flours/dry ingredients together into a food processor with the serrated S blade first, before adding to the wet ingredients, to make the particles smaller and finer?

      Hello. No I didn't because I sifted the almond flour first so I get fine grains... and I powdered the sweetener so to me that would achieve the same result. But I guess either method works.

      Also, why do you add all of the hot sugar liquid to the egg whites all at once? Doesn't that deflate the egg whites? I thought this was going to be more like an Italian meringue method. I'm not sure if monk fruit sweetener works like that though.

      Because without the cream the result is too dry.
      Maybe you should do your own experiment
