I skip the fluff the egg whites. I’ve been doing this for years I’m surprised more people haven’t cut onto it however I don’t take the yolks out because that’s where truly all of your nutrition is. If you’re going to eat an egg eat the yolk that’s where the love of God comes from! Nice video

Egg yolk seems to exacerbate Rhumatoid Arthritis. Cheese is not good as well for RA. They are inflammatory food. If you have been doing these for years and no effect on you, good for you.
generally i would go 1 full - 2 whites. Yolk is where all the fats and vitamins are but its also stacked with calories that add up quickly. There is 3-4 times more calories in a yolk than the white.

Melt them into ur coffee or make keto ice cream, throw them in a pan of eggs ur scrambling, and wrap up in the egg-cheese wrap 😁 Some carnivore eat them slightly warmed in a bowl, with their meat or to dip the meat into. Kind of like a soft boiled egg idea. Raw yolks have more nutrition preserved. Whites do better cooked.
I would like to add that you can put the tortilla in the pan with the parchment paper on the BOTTOM. Cook the first side, flip them over together, and the paper will peel right off when the tortilla is ready. This method can also be used for many other delicate foods like breads, pancakes, eggs, fritters, fried cheese, etc, or even if your pan isn't nonstick
Seeing this comment 1 year later, and I had issues with the dough just completely adhering to the parchment paper. I had thought to maybe to just cook the one side with the parchment paper first, but I wasn't sure. Nice to see it is mentioned. Could you also maybe refridgerate the dough after mixing?

Made these today ………. first one was a disaster 😵💫, used my tortilla press and covered it with baking paper (not a good idea) the mix stuck and I had to scrape it off. I flattened it out and still cooked it, tasted great just looked nothing like a tortilla 😂. Then I covered the press with cling wrap …….. what a genius I am 🤣😂🤣, this worked a treat and ended up with tortillas that actually looked like yours. So happy, so now we can have pulled pork with salad in wraps for dinner ….. yay!!! Thank you Mel for a great recipe……🥰🥰🤩

OMG, I made the spinach and egg tortilla right away and boy, they taste delicious 😋 😍. I added my favourite spices to the mixture then blended it all, cooked using 1 x calorie spray olive oil...yummy. Better than the flour tortillas in my opinion ❤❤. Thank you sooooo much 👏🏾👏🏾👏🏾🙏🏾

I was surprised how well these turned out. Very flavorful and good texture. Hardest part was just getting them into the pan. I didn’t have any xanthan gum so I just used 1 Tbls of gelatin for for this recipe and it worked fine.
I'm so pleased that you shared how much gelatine you used leaving out the x.gum. Alot of people saying flipping the tortilla into the pan with the baking paper works really well. I mean only remove the top layer of baking paper, place into the pan with the baking paper then when the one side is cooked it's much easier to flip and remove the 2nd layer of babking paper. Hope that helps 😊
I saw your recipe last year and only just now made them. Boy, have I been missing out! They taste like giant Cheez-It Soft taco shells. The only issue I have is that they are high calorie. 311 calories for 2 small taco shells. If you can work your magic and make these lower calorie, I would be very interested. These are the absolute best tasting Keto tortillas I've ever tried, and I have tried a lot. UPDATE: I completely forgot until just now that I made 6 instead of 5, which resulted in smaller tortillas, about the size of corn tortillas, and 258 calories for 2, so that's not too bad. And they are so filling and so tasty!! Love, love, love these!
Oh wow thanks so much Janine. To be honest the caloric count is dependant on the cheese you use...and mine was high. I wonder if you worked out your own macros using your brands if it would lower it. I can only manage one tortilla, it's so filling.

Try it with fried shrimp with onion and poblano peper, them a little cheese and top with hot sauce and some raw cabagge in one of this tortilla. It is called taco gobernador....fantastic !

Have you tried ketoconnects pizza crust? It’s made with canned chicken (sounds silly right?) but it comes out like dough and taste so amazing! Even when we fall off the wagon we still prefer this over the carbs.

Lisa you sound like a Great friend. I’ve seen Keto tear a lot of friendships and relationships apart. I hope your friend appreciates the support system you provide. Maybe if I had people in my tribe like you I would be able to stick with Keto. Instead I have to hide my keto lifestyle from friends and family. Mel , save your self the parchment paper the roller pin , the the pot cover ....use 1 clear dinner dish and two plastic sheets. And there you go. ! Perfect round tortillas ....place your 1st plastic sheet on flat surface 2nd put your dough 3rd place the second plastic sheet over it 4th use your clear dinner plate to press ..enjoy 😁

The egg white tortillas you can buy, aside from being expensive, were just a little weird. Certainly doable and it was nice to make some fajitas with them. But the rubberiness was nothing like a tortilla. Looking forward to trying Mel's. Maybe worth pointing out that two corn tortillas only have 21g carbs (19 net). That's enough for me and 19g is well below my threshold for staying in keto as long as the rest of the day is in check. Still hoping these low-carb versions make the cut.

Just tried this and it was perfection, love them! I tried a half recipe to try and made 3 with my smallest pot lid. Just one was not only tasty but also filling! I took someone else's suggestion and had one with cream cheese and smoked salmon

Thanks, thats amazing. Gonna give it a try. Also, the extra lengths you went to to test freezing and defrosting is cool. Reheating after freezing could also work in a oiled pan or just at room temp for 10 minutes. Can't wait to see try and taste these. It might be my new bread alternative.

Have you tried them with taco meat? So many keto taco shells turn to mush as soon as the hot meat hits them. These really look the best of any I've seen and I do have the ingredients so I definitely want to try them. Thank you.
Hello hope you're well. No I have not filled them honestly...I was so focussed on all the other factors but here's the thing. If you fill with cold meat it will hold its shape. If you fill with warm meat they will soften a little, and I think only at the bottom because I would normally add salad on top of the meat. Hope that helps.
I made these and although I struggled with getting the dough right as mine was too dry to start with...(yes I followed your recipe precisely). I added one egg yolk and some water to get it to hold together. In the end they turned out awesome!! My question is, do you use freshly grated parmesan or do you use pre-shredded? In the video it looked like almost powdered form. thanks for a great recipe. Cheers
Hi Mel, these tortillas look amazing . I'm mostly impressed with how pliable they are in video. However, my first batch didnt come out that way. I can fold them over in half but thats it. They seems to crisp up a bit. I'd really like to make them as pliable as they are in the video. I'm interested in making breakfast burritos with them. anyone have any suggestions ? 😃
Hello Joe. When cool they do become stiff. Did you test them when warm? If you still have them you could warm them by reheating in the frying pan then shape them to how you like. When cooled they take the shape you created them in. Please let me know if they were crispy even warm because all the above would not be helpful.

180g grated cheese of choice 1tsp baking powder 2tsp xanthan gum 1 tsp gelatin (Mix thoroughly and get a separate bowl for wet ingredients!) wet ingredients: 2 egg whites pinch of cream of tartar (then beat until stiff peaks) (note: if you use egg whites from a carton, use 1/4 cup) Instructions: mix fluffy egg whites into dry mixture a little at a time. once mixed, form into balls weighing approx. 53g. each. roll out each ball in between 2 sheets of parchment paper (without the parchment paper covering the top and bottom of dough ball it will get stuck to rolling pin or counter) use a knife or the lid of a small part to trim the edges for a more round tortilla place tortillas into a pan at medium heat and cook until both sides are covered in golden brown spots. NOTES: you can also make the tortilla dough with no baking power and egg whites, but tortillas may be slightly less fluffy. For large tortillas make dough balls approx. 84g To store: wrap tortillas in parchment paper then in cling wrap. place in freezer and take out when ready to use. microwave in 10 second intervals to heat. DOUGH can ALSO be used to make a PIZZA CRUST

I was surprised how well these turned out. Very flavorful and good texture. Hardest part was just getting them into the pan. I didn’t have any xanthan gum so I just used 1 Tbls of gelatin for for this recipe and it worked fine.
I'm so pleased that you shared how much gelatine you used leaving out the x.gum. Alot of people saying flipping the tortilla into the pan with the baking paper works really well.
I mean only remove the top layer of baking paper, place into the pan with the baking paper then when the one side is cooked it's much easier to flip and remove the 2nd layer of babking paper. Hope that helps 😊

I saw your recipe last year and only just now made them. Boy, have I been missing out! They taste like giant Cheez-It Soft taco shells. The only issue I have is that they are high calorie. 311 calories for 2 small taco shells. If you can work your magic and make these lower calorie, I would be very interested. These are the absolute best tasting Keto tortillas I've ever tried, and I have tried a lot. UPDATE: I completely forgot until just now that I made 6 instead of 5, which resulted in smaller tortillas, about the size of corn tortillas, and 258 calories for 2, so that's not too bad. And they are so filling and so tasty!! Love, love, love these!
Oh wow thanks so much Janine. To be honest the caloric count is dependant on the cheese you use...and mine was high. I wonder if you worked out your own macros using your brands if it would lower it. I can only manage one tortilla, it's so filling.

Try it with fried shrimp with onion and poblano peper, them a little cheese and top with hot sauce and some raw cabagge in one of this tortilla. It is called taco gobernador....fantastic !

Mel , save your self the parchment paper the roller pin , the the pot cover ....use 1 clear dinner dish and two plastic sheets. And there you go. ! Perfect round tortillas ....place your 1st plastic sheet on flat surface 2nd put your dough 3rd place the second plastic sheet over it 4th use your clear dinner plate to press ..enjoy 😁

The egg white tortillas you can buy, aside from being expensive, were just a little weird. Certainly doable and it was nice to make some fajitas with them. But the rubberiness was nothing like a tortilla. Looking forward to trying Mel's.
Maybe worth pointing out that two corn tortillas only have 21g carbs (19 net). That's enough for me and 19g is well below my threshold for staying in keto as long as the rest of the day is in check. Still hoping these low-carb versions make the cut.

Just tried this and it was perfection, love them! I tried a half recipe to try and made 3 with my smallest pot lid. Just one was not only tasty but also filling! I took someone else's suggestion and had one with cream cheese and smoked salmon

Have you tried them with taco meat? So many keto taco shells turn to mush as soon as the hot meat hits them. These really look the best of any I've seen and I do have the ingredients so I definitely want to try them. Thank you.
Hello hope you're well. No I have not filled them honestly...I was so focussed on all the other factors but here's the thing. If you fill with cold meat it will hold its shape. If you fill with warm meat they will soften a little, and I think only at the bottom because I would normally add salad on top of the meat. Hope that helps.

I made these and although I struggled with getting the dough right as mine was too dry to start with...(yes I followed your recipe precisely). I added one egg yolk and some water to get it to hold together. In the end they turned out awesome!! My question is, do you use freshly grated parmesan or do you use pre-shredded? Hi Mel, these tortillas look amazing . I'm mostly impressed with how pliable they are in video. However, my first batch didnt come out that way. I can fold them over in half but thats it. They seems to crisp up a bit.

Hello Joe. When cool they do become stiff. Did you test them when warm? If you still have them you could warm them by reheating in the frying pan then shape them to how you like. When cooled they take the shape you created them in. Please let me know if they were crispy even warm because all the above would not be helpful.

180g grated cheese of choice
1tsp baking powder
2tsp xanthan gum
1 tsp gelatin
(Mix thoroughly and get a separate bowl for wet ingredients!)
wet ingredients:
2 egg whites
pinch of cream of tartar
(then beat until stiff peaks)
(note: if you use egg whites from a carton, use 1/4 cup)
Instructions:
mix fluffy egg whites into dry mixture a little at a time.
once mixed, form into balls weighing approx. 53g. each.
roll out each ball in between 2 sheets of parchment paper (without the parchment paper covering the top and bottom of dough ball it will get stuck to rolling pin or counter)
use a knife or the lid of a small part to trim the edges for a more round tortilla
place tortillas into a pan at medium heat and cook until both sides are covered in golden brown spots.
NOTES: you can also make the tortilla dough with no baking power and egg whites, but tortillas may be slightly less fluffy.
For large tortillas make dough balls approx. 84g
To store: wrap tortillas in parchment paper then in cling wrap. place in freezer and take out when ready to use. microwave in 10 second intervals to heat.
