Can we use pearson correlation matrix while using the total of the composite variable?
or we have to use the total of items because my research is not supporting this Ave method

You can use composite score to calculate correlation.
For AVE you will need to calculate it using loadings of individual items

meanwhile when i do pearson corelation matrix and the sum of all the items / questions my answers don't give the results that i need
while using the composite of variable and the composite total this method is supporting my work
is it possible that i use composite correlation and the total of composite variables for validity analysis?

For validity, the calculation is based on item loadings not on mean scores.
