Vegan Lentil Burgers with the Works

  • Forever have vegans and vegetarians have been searching for a burger that has the perfect balance flavor and texture, and finally we have found a recipe worthy of the masses. The mixture of sweet potato and the hearty lentils won't leave anyone asking, "Where's the beef?".

    Ingredients:
    2 tablespoons (30 mL) of vegetable oil
    1 onion, chopped
    ½ pound (227 g) of mushrooms, freshly sliced
    4 cloves of garlic, freshly chopped
    2 cups (500 mL) of cooked lentils
    1 cup (250 mL) of bread crumbs
    ½ cup (125 mL) of peanut or almond butter
    2 tablespoons (30 mL) of miso paste
    2 tablespoons (30 mL) of soy sauce
    2 tablespoons (30 mL) of dried thyme
    ¼ cup (60 mL) of chia seeds
    2 cups (500 mL) of sweet potato, grated
    Directions:
    1. Splash the oil into your skillet over medium-high heat. Toss in the onion, mushrooms, and garlic and sauté until they become brown and flavourful, about 10 minutes. Transfer the mixture to your food processor. Add all the remaining ingredients except the grated sweet potato. Puree the mixture until everything is smoothly combined. Transfer the mixture to a mixing bowl and stir in the sweet potato by hand so it does not break down in the machine. Rest the mixture for ten minutes, giving the chia seeds time to work their magic.
    2. Using your hands, shape the mixture into evenly formed patties. They may be cooked immediately, refrigerated for several days, or frozen for a month.
    3. When it is time to cook you have lots of options for these burgers. You may fry them in a lightly oiled sauté pan on your stovetop, sear them on your griddle, grill, or BBQ, or even bake in your oven at 400°F (200°C) for 15 to 20 minutes. Whatever method you choose, keep in mind that these burgers brown relatively quickly so medium-high heat will allow the centers to keep up while the exteriors cook.

    I'm a 71 yr. old male long time Vegan, I started experimenting with lentil burger six months ago and they're great. I picked up a couple tips here. It took a heart attack, a tripe by-pass, and a Vietnamese lady surgeon to wake me up at 56. She told me if I didn't quit eating meat and dairy I would be back in ten yrs. or less, and I have to tell you this scared the hell out of me. A typical American doctor would have never advised me like this and I feel very fortunate, and yes I did listen to her.

      What can I say you can eat anything but all in moderation the last time I had a burger was 6 months ago and I am sure I will have another in a few months but if you want to keep your arteries unblocked just eat Natto I do twice a week and that will keep your heart in good order look at K2 all the best Bob

      gladtidings4all thanks for adding. It inspired me to go off recipe. When I cooked my lentils I added three dried hatch New Mexico chili’s a bay leaf cumin and Mexican oregano and one tablespoon of thyme because I read in another comment someone thinking the thyme was too much (in the end after blending I added the extra tablespoon because I think that’s what cancels out the peanut butter taste!! The extra thyme worked. I threw in my onions midway into cooking lentils instead of using oil. I drained the little bit of liquid left over and let sit. Then cooked mushrooms in pain I cooked lentils in...cooked off the moisture in mushrooms which grabbed a lot of the lentil stuff left in pan. And then added lentils and onions for a few minutes to cook off extra moisture. When blending instead of soy sauce I used just a dash of liquid aminos and a dash of smoked salt and regular sea salt. I also sprinkled probably a 1/4 tsp of Tapioca powder in. I didn’t have sweet potato so I shredded some carrot and some butternut squash drizzled just a little bit of maple syrup and salt put it in oven at 300 degrees for 5 minutes to cook of moisture and then added it into mixture after blending. Turned out really good and satiating.

    I would add smoked paprika, jalapeño peppers, roasted red peppers and nutritional yeast. I would then roll them in breadcrumbs before cooking/frying.

    Made this burger tonight. WOW, followed the recipe exactly and it was wonderful. I usually do a bean/rice burger, which can get sloppy. Very impressed with how this one sticks together so well and when you grill it up it actually looks like a meat burger with so much great flavour. Simple ingredients too, this is gonna be my go-to burger recipe for the next little bit. Thanks!

    A great recipe that turns out firm tasty burgers, I played a bit with the spices, added cumin and ground coriander , white pepper. I am gluten free so I replaced the bread with millet flour and it turned out fantastic. Thanks for a great recipe.

    I’ve tried numerous burger recipes over the years and end up with disappointing results. This recipe, though, looks to be FABULOUS! I’m gonna make this as soon as I can get to the store for the one ingredient I don’t have, which is a sweet potato. Thanks so much for this!!!

    This Chef makes lentils cool! The secret is chia seeds. My lifelong struggle... burgers that do not fall apart like the walls of Jericho. I find myself adding handfuls of flour to my soggy patties to no avail. Thank you for explaining the "architecture" of creating a successful vegan burger. I really want to commit to a vegetarian lifestyle as a newbie 7th Day Adventist. Meat dishes eg Roast lamb dinners, are such an integral part of Western culture, particularly in traditional agricultural economies such as New Zealand. Still, it is a paradigm shift that I am willing to make towards a healthier, biblical-based lifestyle.

    OMG!!This the best veggie burger I’ve ever made! Rivals any store bought! This definitely is on my ‘go to’ recipe list. I did do a couple different things. I wanted to avoid bread crumbs (I know that’s kind of anal). So per Jeff Novic’s burger recipes, I used oatmeal. I have a cheap burger press and made patties about 3.5 oz. I got 10 patties. Then I baked them for about 20m at 350f, then flipped them for another 15m. A little thinner burger seems to bake and hold together a little better for my tastes. Well these burgers kick butt! Thx ever so much!!

      If you eat eggs then adding an egg with the mix will keep burgers mix together if you don't have chia seeds

    Eaten alone or combined in various dishes, lentils are incredibly delicious, any way you eat them. They are also a high source of protein, folate, iron and a great source of other minerals and vitamins. Lentils are also inexpensive compared to meat.

      Swap out the peanut butter for almond butter, OMG! so much better. But I have to warn you, I highly recommend you put on a bib before you taste it, it is so good, your mouth will be on full out drool mode. :)

    Great video I always look at "umami" as "essence of life". Sure, obviously found in animal flesh and such... but importantly, you get it from preparation... Time is what makes the difference. Sun dried tomatoes, fermented soy, miso, kimchee, yeasts, dried mushroom (personal fave), pretty much any dried or smoked vegetable... these ingredients changed my life.

    I love your lentil recipes I have used some of them love the lentil and rice recipe I've added sauteed onions and garlic and herbs mm good these burgers look amazing and tasty I've made lentil rice and veggie burgers before but these look even better

    I was literally about to make my burger. I have my red beans on the stove. I looked in my kitchen and I have lentils and oats and sweet potato . And then your recipe pops up. Great minds think alike! I'm definitely going to add some peanut butter. No mushrooms today but I'm sure I'll find a replacement. That's the great thing about being vegan. You use what you have and magic happens 🥕🥕

      Epic fail. Mooshy mush. Should have trusted my gut and added way more oats. Also I think lentils where over cooked. My oat sausages always turn out great. Oh well, lesson learned.

      Okay more feedback 😁 The burgers my 3 year old made were much slimmer. Turned out great. My batch was too thick hence the mooshy texture. Just make sure not to overcook your lentils if you're reading this. And throw in some oats for good measure.

    Used to watch you Michael on t.v all the time , never see you on anymore .. how is little girl , you have a new kitchen there I see, I am on a plant based diet now no dairy or meat, I love lentils too , this will be perfect for me to make , not using much oil at all though .. Love everything you cook ..     Thank you for the tips. You are very helpful with your tips on the burgers. We are from Pakistan and eat lentil [daal] which is the Urdu word for lentils. I will share my recipe for you.
    1 cup of Masoor Daal [ orange lentils]
    1 cup of Moong Daal [ white in color]
    wash and soak these daals overnight in cold water in a large bowl.
    Next day, throw the water out and wash it one more time. In the meanwhile, here is how I cook the lentils.
    Ingredients:
    1 medium size onion
    2 medium size tomato
    1 teaspoon crushed garlic . [2 cloves]
    4 cups of water
    Spices:
    1 teaspoon leveled salt
    1 teaspoon Red pepper flakes
    1/2 teaspoon Haldi [Turmeric]
    1 teaspoon ground cumin powder . [ please buy the whole cumin seeds from the Indian Grocery store and grind 1/2 cup at a time for weekly usage. You can store the whole cumin seeds in a tight container in your fridge.]
    Directions:
    Brown the onions, add the garlic and tomatoes plus spices. Fry on medium flame for 3 minutes. Add the lentils and water to your cooking pot. Now bring to a boil and simmer cook the lentil for about 45 minutes.
    It should still be liquid but not thick soup.
    Serve with Naan or boiled rice.
    Enjoy!

      if you soak the chia in 3 times its volume of water for several hours you get the consistency of an egg ...makes it easier to bind everything together ......

    Using your hands, shape the mixture into evenly formed patties. They may be cooked immediately, refrigerated for several days, or frozen for a month.
    The burgers may be barbecued on a grill, fried on the stovetop in a lightly oiled sauté pan or baked in the oven at 400 degrees F for 15 to 20 minutes. Keep in mind that they will brown relatively quickly, so use heat no higher than medium-high to give the centres time to heat up.

    Consider undercooking the lentils (in a veg or mushroom broth) by 5-7 mins and then adding the undercooked lentils to the mushrooms as they cook and release water. The lentils will continue to cook and absorb mushroom's (and onion's) liquid, making the dish drier while also making it more flavourful. Also, you don't need to add breadcrumbs for a grain if you're serving the burger on a bun that's made of wheat--as the bun serves as a significant amount of grains.

    i just made these. friggen tastes amazing, i think i overcooked my lentils by 3 minutes and i had a bit too much moisture in them, i tried to counter with more bread crumbs but wasnt enough. either way this is the best vegan burger recipe ive ever had.

    That looked amazing! I have went back to my vegetarian way of eating and am trying different replacement dishes. I just made a batch of black bean burger mix, enjoyed it although will delete a few items I used next time. But your recipe and the finished product looked so mouth watering! I can't wait to pick up some of the ingredients to try it. I could almost taste them and they looked so firm. I never liked lentils because they were either undercooked or overcooked when I ate them as a child so hated them and refused to eat them ever again. But I received several pkgs of the things from a friend and decided to put them in my storage area for "hard times". Instead I am going to take them out and try your recipe as soon as I make it to the store to pick up a few other items. Thanks for sharing.

      I didn’t use peanut butter I put a few grated walnuts I to sprouted alfalfa and mung beans I make for my sister and husband who are vegan they say that they are the best burgers they have tasted and when her vegan friends go over she serves these and they two say the same and want the recipe with a smile she says my sister makes them for me , bless her she works long hours and away from home a lot

    Oats! I use plain old rolled oats soaked in a little hot water. So presoak the later 1:1.5 with hot water then add mushrooms and onions, garlic etc. Fantastic result too

    👍 this mix holds well so was able to make modifications - I replaced the mushrooms with aubergine and the miso with the Korean doenjang which gave it a spicy kick. They are delicious cold so smaller bite-sized patties tossed in sesame seeds and served with a hummus style dip is delicious. Thank you for the recipe!

    I am trying to make a tasty lentil burger and this was a helpful video. I have some chia seeds and am thinking about implementing those. Other ingredients I think could work:
    - worschestershire sauce
    - quinoa (could also add a nice texture on the outside if it gets toasted in the griddle)

    I'd use Westchester sauce in the place of soy, and egg yolk instead of peanut butter.That sweet potato sounds lovely omg..
    I'm going to try this..
    With this Coronavirus we shopped for beans and found nothing but lentils left I'm so very happy I found this video, I'll be going back for them lol

    Michael, this is an AWESOME video, thank you. Two Canadian Dietitians put out a book long time ago "Becoming Vegetarian". They say, as does research, that "combining" is not needed. The fact is, if you get enough calories, you are getting more than adequate protein. Babies at the breast receive about 7%, at their highest rate of growth. This myth can put people off trying vegan or vegetarian. It is my Personal Opinion Only (POO) that excess protein is a huge culprit in our diet, resulting in high rates of kidney disease in North America. Let me end by saying that the video was so well produced & enjoyable. THANK YOU!
