I think I might use hummus in between the patties, if i was trying to go vegan with this. This is what I do with pizza. Its not cheese, but everyone likes it, including the meat eaters.

That's why I have a huge problem with "fake meats" because rather than making that product like tofu or the like taste good on it's own merits, you're trying to make it something it isn't. The focus should be making the best black bean burger, not the black bean burger that tastes closest to meat.

Maybe add a dusting of more corn starch or potato starch to the outside right before cooking? That'll add some more of that crusty exterior that we know and love from traditional smash burgers

A quick not about making this completely vegan: One could use a 3:1 mixture of water and ground flax or chia seeds (perhaps the chia seeds don't even need grinding) in order to replace the egg, and there are vegan cheeses, which are definitely better melted, and are there mostly for the texture anyway.
If we don’t have MSG, will Cavender’s All Purpose Greek Seasoning work instead? It has MSG in it. But it also has salt, black pepper, corn starch, garlic, oregano, parsley, “5 other spices,” and something in it called “flavor base seasoning” which consists of: hydrolyzed corn soy protein, sugar, onion powder, and spice extractives.

So I still think the best veggie burger I have ever had is the J. Alexander's Veggie Burger. While this is cool, I've always wanted to know how to make a J. Alexander's Veggie Burger at home! In terms of taste, presentation, juiciness, everything, it is the veggie burger that I find to be the most overthetop. (and who would have thought that it would be a steak themed restaurant chain?)
I used to mix1/8" chunks of cheese into the bean burger mix to spread the gooey juiciness through the patty. I like this double layer thing though, it's far less work for the same effect.

Hmmm I'm not the biggest fan of just pure black bean burgers. I myself like to add some sweet potato and additional flavorings like paprika. I find tapioca can help hold it together as well (vs corn starch)

Made this but then totally ruined it by trying to cut on the diagonal. It started as a circle and I cut a bit off but it didn't seem diagonal so I just kept chopping and before I knew it I was late for work. They fired me. I didn't even get to try the burger and now my dog has run off.

Awesome! I think you can make the patties feel jucier by adding a little bit of fat/oil in the bean mix.

For the burger just use (sort of frozen) coconut oil instead of egg and use dairy free cheese mixed with a little sauce

Flax egg works well. 1 part flax to two parts water (usually 1tbs flax, 2tbs water) let it set 5 min in the fridge.

3:50 The raw egg is not already cooked...I mean I eat raw cookie dough, so I don't think it seems like a huge health hazard, but it doesn't sound like it would tasty nice raw.
how would you make this vegan? just water to moisten and more starch? i don't think flax would do anything here.

Made this but then totally ruined it by trying to cut on the diagonal. It started as a circle and I cut a bit off but it didn't seem diagonal so I just kept chopping and before I knew it I was late for work. They fired me. I didn't even get to try the burger and now my dog has run off.
ok, eggs are not vegetarian it's a subcategory Ovo-vegetarian. most people who are vegetarian will not go for eggs.

Why do you use only metric? We use Imperial measure in this country. Does your dad speak in grams? At least use both.

I am not a vegan, but I prefer the black bean burger to any other meat substitute burger, it really is tasty (but I always liked black beans even before I started eating bean burgers) I wish they had them in more places I go out to eat. there is no Smashburger near me.
