I love that the Sauce Stache channel is growing. I can tell this guy works like hell and he is passionate about what he does. I really like that he talks more confidently to the camera. He knows what he is talking about because he has blazed his own trail my doing his own food experiments and he gets Results! Keep up the hard work!
I just made the mushroom burger and holy crap. My partner and I were blown away by how good it was. I thought it would taste super mushroomy but the flavor was actually so subtle. The texture was also great, and the patty didn’t fall apart either! I got your book through the library and will probably be buying it now. Thanks for sharing your knowledge with the world!
I've never thought about adding whole oats into my veggie burger- and will probably not do so BUT tapioca might me a great touch! Will give it a go next time :D
chef you consistently slapped the cheese on the burger before giving us a view of the finished patties. However the craftsmanship of each and the finished "visible" edges of each looks amazing!!
I was making a veggie burger almost exactly like that first one, but what i found is that you dont want to add any liquid at all, in fact it'll be a lot less mushy if you dry off the beans by grilling them last minute w/ the onions and mushroom
Absolutely love watching your videos my friend. I’m not vegan/vegetarian but you’ve inspired me to lessen the amount of animal products in my diet and I must say I feel a lot better. Cheers!
Would be amazing to explore tempeh here. Maybe homemade... I can really see how it could work in a burger (maybe made out of black beans). Also what do you think about using Chinese black fermented beans as umami bomb?
Thank you for 3 burgers recipes. They all look great. Bob's Red Mill also make TVP and TSP. I've made a veggie chili with it. Pretty tasty as it takes on the flavorings you use with it. I'm definitely going to try these burgers out.
Oh wow. New cutting board!!! Love it. Thinking of you two eating “ micro greens “ was stressing me out. ☮️❤️and mushroom powder forever!!! Thanks so much for all the great content.
Hi again Saucie, Just have to say; Last week or the week before, my new Kove headphones arrived! It was a long wait, but sooo worth it! I am still excited, I just loooooooove them! I can’t believe that I got them for only $99, shipping to Norway included! The sound quality is really impressive, I must say, they’ve made me go «WOW!» more than once, even if I only tried them with music briefly a couple of times this far. One thing I also really love, is that I can use them with a cord if I want to. I bought a long extention cable on aliexpress, an all pretty fabric covered one and also a hard headphone case for travelling to use instead of the bag. And, the memory foam makes them sooooo comfy. I easily get pain in my ears from headphones, but not these and I probably had them on for 3-4 hours (fell asleep while watching YT vids) once, which never has happened before, it would simply be impossible, because they would hurt after a little while... I’ll climb down from my soap box now ☺️, thanks sooooooo much for the great headphone special through you!👏👏👏😊👍🌞
I love the corded option hahah I actually use it quite a bit on my computer and when I switch to my phone I just use the wireless!! I'm so happy you love them! I use mine daily
Try using peas in a burger. I make a nice pea and avocado with mushrooms burger. I use tapioca starch for a binding for my burgers though. I have celiac disease so I can't have gluten. I am also allergic to wheat. I had to stop eating red meat 15 years ago because I am allergic to beef and pork as well. I also am allergic to apples and bananas as well grapefruit. I suffered origin failure three years ago from my food allergies. I can eat fish and chicken as well as turkey though. I tried going full vegetarian and vegan but my health conditions don't do well with just veggies and vegan food. I need extra nutrition so I added fish and avocado oil as well chicken and eggs for protein. I love spinach and greens so I eat lots of salad. Also, cooking salad is healthier than eating raw salad so I do cook my spinach and greens before making my salad. I also like cooked carrots in my salad. I also make my own dressing. It's healthier to home cook your food because you can control what you eat. Processed food causes health problems and I have almost died from processed junk. I speak to my doctor's about my diet. They do have me on a special diet. You are an inspiration for me. I am learning how to make better decisions for my body. Thank you. ❤️
For those of you trying to maintain a low carb diet, you can sub in 1/3c of ground lupin for the 1/4c of oats in the mushroom patty recipe. Worked perfectly.
I mean... It's more of a seitan & egg burger than a mushroom burger, since the seitan is what is providing the body and binding everything with the egg...
I enjoyed the recipe you made with shredded coconut oil and vegetable protein, also do you have a chopper, that helped me so much with chopping the coconut ice cube into a good minced
We can’t easily get potato protein here in Australia - but really keen to try making tvp burgers. Can you link your original recipe? Or suggest an alternative to the potato. Thanks legend 😊
I could just cry. I tried a few time to make veggie burgers (several years ago), like a legit, not fake meat veggie burger, and I failed over and over. This sounds so good😋 So glad you are here! I was always afraid to check out vegan channels due to all the attitude that seems to come from, I'm sure, the nuts of the community. And also because I don't think I can have too much soy, cause my hormones are nuts anyway. Thank you (tytyty) for being so informative and respectful! This channel makes me hungray😆
If beans are not cooked they are 100% toxic and you should be dead in a week! Watch the movie into the wild, he ate dried beans uncooked and died at the end of the movie, from what I know all legumes " MUST be cooked.
Can I sub the potato protein with something else? I really would love to try the TVP burger!! Beyond is getting too pricey and it's the only good gluten free vegan patty out there. Thanks for your recipes btw!
Wow. They all look so good. Now if you can come up with a white castle one that would be great. Lol. I know the way they cook it with the onions is what makes it taste so good.
Great video Mark! Love all three and I’ve got pretty much everything but the methyl cellulose. I wonder if i could use just egg in the tvp recipe to bind it instead of the mc. 🤔 What do you think?
Mark could try to make a vegan version of Cajun gravy? Popeye's has a decent one I guess. I remember enjoying putting it on mashed potatoes, baked potato wedges and french fries.
@@SauceStache if you're ever in Arizona, hit up the cuttingboard cafe, their chickun and waffles are amazing! They have a vital wheat gluten fried chickun, with cornbread waffles, and all I can say is wow they're good!
Hey! I love your videos, but I struggle with all the powdery chemical things. I want to learn. Could you please make a kitchen pantry video that shows all the things you have to make your crazy awesome recipes?!! Basically a hey, this is methlelos celulate, and it does this, you can buy it here. And this is vital vegan soul protein powder (red head free) , etc...
Where does one get that much mushroom powder? Amazon sells 2 or 3 ounce packages for around $10 or more. And they have added salt. Too expensive. I thought about dehydrating store bought mushrooms but I don't have a dehydrator and the lowest temperature on my oven is 170°F.
In the US, Trader Joe's sells a mushroom powder in their spice section that is cheap. BUT, if you really want to save money, just buy dried mushrooms and use a high-power blender to grind them up into powder.
First 30 seconds is just Mark talking like a 2010 SEO person trying to get his website to rank for “burger” and “plant-based” 😂 But anyways, great great content as always, really appreciated!
I am quite a burger addict. I definitely gonna try those receipt once I got all that powders and stuff. - there is just. Why don’t you make your own buns? The best burger is destroyed with a bad bread.
Are you and your sweetie going to put out a cookbook? My hubby and I just love it when you get scientific with your cooking! Those burgers look so good, I’m swallowing hard just looking at them.
I'm really grateful with the second recipe. Why you didn't put some MSG? I know you love it. Can I try it? or you think just with the mushrooms powder it's enough. Thanks
Another Great video, I made hybrid burgers with beans, tvp, mushrooms, everything, the kitchen sink, no vital wheat protein though. I thought you had to knead and boil that ingredient to activate it?
Thanks for all these. I've been tinkering with this here in mexico to try and offer a legit vegetarian burger as options are limited. Some of these things like Methoceluose are hard to get but most of these variants I have. Today I was cooking the mushrooms and the textures Soy first in the oil because they absorb a lot and that way I get a savory texture base. Is there a reason not to cook oil into this so we can get more of a hamburger profile.
I just found your channel and have been binge watching! Love the food science! I spent a lot of time researching the potato protein- it seems a fairly new item and very hard to find except an expensive order from Europe. Wondering if your scientific mind can figure out an easily purchased substitute for everyday people?
That potato protein is not cheap. If my calculations are correct, $30 for 200 grams of potato protein, that 1/4 cup you used is $9 alone, not including the other ingredients to make the burger. As it stands, it is cheaper to buy the Beyond Burger meat in the store.
Yes!! I used the Aquafaba liquid from the chickpeas!! Aquafaba is a better binder per weight than black bean liquid! I wanted less liquid and more bind! The super wet black bean burgers are the ones that fall apart easier

I'd love to see your take on marinating a plant based meat premade of from scratch to taste like carne asada for a full vegan carne asada super fries like they serve in SoCal Albertos/Alfredos restaurant chains. I'd get all the fake sourcreams, shredded cheddar, plant based meats just to get that taste experience in a 2lb styrafoam box at 3 AM experience again as a vegan.
