    I am a meat eater - but I really like veggie burgers too. Cook them until crispy on the outside, cheese slice, ketchup, onions, lettuce - stick it in a slightly toasted bun - job done 👌

    I’m obsessed with these veggie burgers. I’ve made them twice this week. Couldn’t find holland peppers so I used 1 jalapeño and a 1/4 red pepper.

    Pretty basic, “almost” veggie burger (-egg), but I always like to put roasted chopped walnuts in the batch, along with scallions and diced mild Jalapeños.

    This is too much prep time. Just pan fry a portobello cap until med-soft. Then in same pan, the patty then put em togeth on whole wheat bread toasted or not. Add tomato, raw onion, lettuce and/or cheese. Yum.

    I made this tonight. My husband was in shock how good it was . I mixed black beans and black eye beans . Did not have mushrooms but did not need it .

    I do this kind of cooking a lot, and my general advice is: use tapioca-starch instead of flour, it will become a much more "cheesy" kind of crust. This gives what I name the "chicken mcnuggets" mouthfeel. Also: Experiment not only with mushrooms and beans, but also do beans and quinoa, beans and tofu, mushrooms and tofu and so on, this all makes nice patties which you can also eat in wraps, burritos, as a side to salads and potatoes and what not. This kind of "mix-fiber-starch-and-protein-into-a-patty" is very versatile and Tapioca starch gives nice chewy crusts. Pro-Tip: get some methylcellulose. I know it sounds disgusting, but it is really nothing more than harmless fiber with a weird name. It will make binding anything together much easier, you can skip the egg, and the flour and the three-times-mixing, and maybe grinding some parmesan, and then the ratios are not right, ah its a nightmare. Just add a spoon of MC, knead for a moment, if it feels sticky, it is sticky and will withstand any cooking in the pan, not fall apart, it just works. I cannot overestimate enough how much my cooking went easier, when I researched on MC, found that it was harmless, and it has become a staple in my kitchen ever since. So, next tip: Fry on low heat, but longer. It will not stick, it will not burn, it will just develop a nice crust on the outside. If you do it too long, well it gets a little darker but it takes a looong time from right to burnt piece of coal, which has ruined many dishes when I was using higher heat (I was doing some cutting while waiting, and forgot about my sizzling pan). Maillard reactions start at 130C (which you easily reach with low heat, as you dont have to heat a whole bucket of oil like in deep frying), so your crust quickly evaporates water, and than faces the oil dry, ie. the full oil temperature. And this rises quite high even on low heat. And at 180 degree or so, stuff gets bad real quickly, so just have it "in the safe zone" at a low heat. Just plan on cutting stuff like salad, tomatoes and what not while waiting for the patties.
    Last tip: use some soy-sauce/msg and nurtitional yeast. It makes a much richer and satisfying. You get a satisfying, chewy, crusty piece of goodness. It does not taste like meat, but it tickles all the buttons that meat does.
    Yes, thats about it, you will have many nice meals that dont take forever to make in the future, making these kind of patties has become a weekday-thing for me since you can make it really fast. Especially the MC thing gets me rid of having to do the egg-cleaning, the many jars of flour and starch and oats and what not, oh boy it is so much faster making this kind of stuff with MC. And its vegan, btw.

      Lineseed should work well. If you crush them in a blender and mix with liiittle bit of water they turn slimy like eggwhite

    I actually really like black bean burgers, especially with roasted corn (whole). The pop of the corn gives it a little more juice that you don't really get from the blended bean/veggie mix.

    I made these last night and I gotta say these are pretty damn good. Cooking with the flour, egg, panko technique was a great addition to keep the burger well structured. That, on top of having caramelized onions, and a buttery toasted brioche bun was just heaven with a hint of honey BBQ sauce.

    Made these for my wife last night. Used a variety pack of fresh mushrooms instead of one type. Fried them about halfway in a cast iron and then onto the charcoal grill for a quick finish.
    They were awesome. Great recipie 🤘

    Dietary constraints due to health issues has me looking more and more into the whole vegan realm for food alternatives. Problem is, they all put in way to much salt/sodium to try and make the flavor work. This, this is something I'd be willing to give a whirl in the processor - see what I did there?

      @@frankwhite555 There is a difference in types of Vegetarians. Typically there are 7 categories that are expressed today. Lacto-Vegetarians, Ovo-Vegetarians, Lacto-Ovo Vegetarians, Vegans, Pescatarians, Pollotarian and Flexitarian. Honestly, the burger that Sam and the Boys made, would follow the Lacto-Ovo Vegetarians the closest. Typically they keep dairy and eggs in their diet for protein (or other) reasons. If you wanted to move the burger to something like a Vegan diet, the most restrictive, then you could use a liquid egg substitute (which I ment to include Sub in my comment before) and Plant based cheese in the place. It just depends what degree of Vegetarian you want to go. I am sure it was an over sight on Sam's part. I, myself, am neither of these categories but I had done some extensive research awhile back for a friend...and trying to change some of my own eating habits.

    My favorite veggie burger recipe: sunflower seeds (pulverized in a food processor), grated carrots, onions, garlic, optional mushrooms, roasted red and/or green bell peppers, parsley,basil, thyme, paprika, soy sauce, salt, pepper, optional mashed sweet potato, binder(1egg or cornstarch/flour/overcooked brown rice/oats and/or breadcrumbs), garbanzos, but the seeds-to-bean ratio should be at least 60%. Loosely based on the original recipe, from "Nature's Banquet", Living Springs, in Hudson valley,NY. If you use raw sunflower seeds you'll need a bit more salt, soy sauce or shoyu tamari.
    I have no doubt that this one is delicious. It really does look like a well done burger.

      My fav vegan "burger"; buy a bunch of non-fat, seasonings and condiments. Stick them all randomly in a bun (maybe). Get hungry again two hrs later and make a quarter-pounder with cheese....
      Less calories, and feel more satiated one day later.

    I would very much like to try that burger. Maybe with the mushroom/bean ratio leaning more to the mushroom side, as the beans are there mostly for color and texture, while baked shitakes bring the pleasant flavor. Very solid effort anyhow with the onions and peppers.

      @@snaponron most vegetarians are lacto-ovo, which means they consume dairy and eggs. What you're looking for is a vegan recipe which would exclude the egg and the cheese used in this recipe. JustEgg would also be a good substitute.

    I tried subbing half of the black beans with red beans, the result was so good, even my carnivore self thought it was great.
    For best results, sweaten with corn.

    I love black beans, and haven't found one of these I like. I'm really excited to try this one.       vegetarians usually will eat eggs and dairy, they are lacto/ovo vegetarians. Vegan do not eat any animal products. They would have to use an egg substitute and eliminate the butter to make this vegan.

      @@davidojeda830 No it is still veggie if you have egg in it - or selected cheese (some insist on vegan) .. Well kept chickens do not cross the line of vegetarians ... if they live a happy life outdoors and are well looked after then they are happy chickens and they WILL lay eggs so these need to be used. And the chickens need to be looked after. Ask me how I know. My wife decided to keep chickens years ago. They are fun, sweet, great eggs but I can tell you they have cost me MUCH more than store bought eggs would have to keep them safe (from foxes and badgers etc) and to feed them. Our chickens have an idilic life they have a nice big safe area to graze and a safe coup - and they get lots of treats. They are pets that lay eggs - so why not make use of the eggs. The alternative is to kill all egg laying chickens in the world and then we don't have to worry about people eating chicken eggs - your call, let us know when the cull should start.

    Black beans are shelf stable, so perfect for burgers when camping or adding to meat burger to stretch it.

    Try adding a teaspoon of tapioca flour to the mix to help hold them together and add a bit more firmness.

    I got my wife to watch this video with me. She rolled her eyes and I laughed my butt off when you whipped your mouth with a roll of paper towels !!!     From a real vegetarian, I'd never use canned beans. Soak your dry beans the night before and cook them al dente. Also the amount of mushrooms should be greater. Also you can make even better burgers by experimenting with other types of mushrooms like trumpet, oyster and wood ear.

    Looks pretty damn good! Glad you didn't add lentils or quinoa or oats or anything. I would most def eat that. In fact, I'm going to make that exactly the same. And one with Swiss and mushroom sauce. And bacon.

    Used some pantry staples to whip up six of these. Had to blend up toast for my breadcrumbs and rehydrated a Cali chili and added a block of tempeh to the mix. Topped with gouda I had leftover. THE CARAMELIZED ONIONS THO... oh man. Keep it up Sam!

      I just feel like vegetarians shouldn't call this a "burger." As much as I love meat...I've done kale, mushrooms, bell peppers, onions and carrots, when I did 30-days vegan (no cheese or beans). It didn't taste bad at all...I just would not add unhealthy condiments to it, put inside a bun, and call it a "burger."

      Btw- I’m not vegetarian, but do enjoy meatless options regularly.

    I'm from Texas, the Texan part of Texas (not the greener, earthier parts of Austin or Dallas), and my burger patty needs to at one point in the past have had a future and a face. Now being from Texas I am no stranger to beans and especially black beans. A black bean salsa is a staple at my house. I'll make this and give it a shot, but right beside it on the grill will be a 20 oz Akaushi ribeye. Love what you do Sam.
