Fresh ginger is always good as it has more Prana, especially for ayurvedic cooking. And also powdered ginger flavor. I can't guarantee how it would be in this khichdi
I commend your channel, your recipes, your earthen cooking. My only suggestion right now would be to use open flame, as the energy is organic & more holistic that way. The pot is coming into direct contact with Agnī Deva and in that way utilizes his energy in the Service of the Lord, Śrī Kṛṣṇa. Jai Gaura Hari!

My recipe repertoire is somewhat basic compared to your's but I am gaining inspiration from your association, which is the process by which devotees become more adept in a certain field of Bhakti - through association with the more adept devotees. To become developed in Pūja, one should take the association of a Pūjārī; to become more accomplished in giving Kīrtan, one should take the association of a Kīrtanīya; likewise, to gain skill in cooking Prasād, one should take the association of a nicely skilled cook. I bought one on etsy but I honestly found it very expensive for the size I received. I would ask u to look local on etsy as the sellers are a lot available in the states. One another person is on etsy has very good reviews but he is way more expensive. The handling and shipping charges are a lot.

Hing lasts for a long time around 6 months and unopened one should be good to use aslong as it doesn't have any starch ingredients
