great video- love this authentic recipe. ?~ is it preferable to use the yellow mung dal or could you use the green mung beans? and if you could use the green mung beans should they be organic and should you cook them with the rice since they need lots of cold water rinsing? ~ Thank you
You can use green mung beans, the cooking time may vary and you will have to adjust the water accordingly. More water. I think a cup more water. Rinse them thoroughly (and separately from the rice), and then you can cook them along with the rice. Organic, always, unless you cannot find an organic version.

I'm wondering regarding the mung beans, also dehulled as legumes they still contain lectins - so what about descumming and also water change within the process of cooking the mungbeans/lentils in order to reduce/remove the lectins (I know cumin and asafoetida help with that, but still I think/guess traditionally some sort of minor descumming and/or water change used to be made) ? Love
Good point, I regularly descum when the lentils are being boiled, and I don't think it is a good idea to change the water while the lentils are being cooked, you will end up losing a lot of nutrition if you do that. Rinsing the lentils under cold running water and descumming are the only methods that I would use.
@@RupenRao All the legume's antibodies go into the water, you might want to think twice :) I also have heard that they might potentiate when not being removed at the beginning, this is what I rather am trying to get to know. Thank you, Love
Sorry, I was down with COVID so I was not able to reply in detail the other day. Basmati rice is good for dishes such as pilaf and biryani. It is not good rice to eat with curries or lentils, because it is unable to soak the water and the flavor from curries, and it is too heavy. Eat short-grain rice, even jasmine rice is fine. Indian short grain rice would be sona masoori and amba mohar (fragrant) rice. I hope this helps, and happy cooking!

I wonder why you recommend short grain Jasmine rice instead of Basmati rice as is traditionally used?

No specific reason. You can choose brown basmati rice, make sure you add more water and double the cooking time.
