About the "stunat" thing, I think that many italian-american expressions are not necessarily in standard italian, but more in some dialect (often from the south of Italy). Here in Naples for example we could very easily say "Mi sento tutto stonato/stunat" and it means something like "I feel fuzzy/dizzy (or more specifically tipsy/drunk, if you say it after a few drinks). It's funny to see how all these sayings and phrases mashed toghether when they "arrived" in America :) Anyway, nice video as always!

My "signature dish". Learned it exactly that way from my Grandma in Locarno, Italian part of Switzerland. For vegetarians, there is no big harm if you do it with a vegetable broth. The only difference in the family, we put additionally two rosemary sprigs during the cooking process, then take out most of it once it is finished. Why? Because Grandma said so...

My late husband's grandmother was from a small town near Milan. She taught me to cook Italian dishes. She made risotto with chicken broth, carrots, celery and onion. She would stuff chickens with it and roast them. Delicious. It looks delicious with beef broth and saffron, too.
I would like to try this! I have only had saffron one time and it was in a paella and the saffron flavor was extremely strong. I didn’t care for it at all because the one flavor was so overwhelming. But this seems like a better mix of flavors and you said the saffron flavor was light.

I grew up eating risotto at least twice a month and now I make it for my family just as often. Another northern dish I grew up eating is polenta which I also make about twice a month. Yum!
Riscotto I have a great memory of that, I was on my honeymoonm ironically in Milan (one of many spots my husband & I went to), I had a mushroom riscotto at this resturant where our server added the parm to my plate by adding the riscotto on the cheese & lettting it combind together then she added it to my plate. So delicious my only regret is that neither of us had our phones to take the video but we have the memory.

We had this risotto a lot when I was younger (I'm Swiss). My mother used to make it in the pressure cooker, though, which is much faster :D
