Ok CJ time for me to give you some kudos. This one looks good and worth a try. But the real Kudos is I made your skillet enchiladas (The Best Enchiladas You Will Ever Make) for the boys at the Jeep rally last weekend, and they loved it. I made mine with pulled pork that I smoked to take on the trip and red enchilada sauce. Fast easy and when your already well let's say not sober they were the perfect thing to make. I think the steak bites would have gone over really good too......
Food great. Laughs lots. Amusement level 10.

I was able to find some sirloin flap/churrasco so I gave it a try. Flap steak loves a marinade so I made one that was just like the sauce you made except I added some oil and omitted the honey to reduce the viscosity and reduce the sugars in the marinade. I added onions to the peppers and made the sauce/glaze you made and coupled it all on some baby golden potatoes that I cooked up on the other side of my Blackstone. Long story long, it was delicious.

Just when I thought you couldn't get any dumber... YOU TOTALLY REDEEM YOURSELF!! Dude I'm really impressed that steak was still pink inside after you glazed it. Did you drop the heat after you pulled it the first time? Super amazing cook and those red chilies are a very nice touch. Now I have to go spend $50 for a thick rib eye so I can see how it tastes.

Full disclosure…these were sooooooo good. And yup, I believe better. Certainly better technique to get a better steak bite. But the flavor of both versions are awesome.

That looks awesome! I like the technique of cooking the steak part way prior to cutting up. Like you, I also used to cut it up prior to cooking. Much better the other way. Something I definitely learned from you guys. Always a fun time watching you guys!

It absolutely is possible to do a reverse sear! In fact we filmed an episode with Bruce Mitchell where he did just that thing.
