This is Taiwanese traditional dessert called "bai - tang - tsun (白white糖candy蔥scallion/pulled candy)". The name scallion because it is hollow and white just like scallion.(Actually I think more like celery). It is very crunchy but taste like cotton candy.
When I was young I melted some jolly ranchers then touch them straight out of the microwave. No hesitation anything I got this huge blister. It's healed now.
That wasn't the sound I was expecting to hear when they broke the candy in bits, but I love it. Also, hope the candy master is doing alright seems like he has a bad back...
