- Served with a red wine reduction sauce, this homemade Japanese hamburger steak (Hambagu) is incredibly juicy and melts in your mouth!

INGREDIENTS (Please check the website for detailed info)
For the Hambagu Patties
½ onion (5 oz or 142 g)
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
¾ lb ground beef & pork combination (12 oz or 340 g; The good ratio for hambagu is 3 (beef) : 1 (pork). You can make hambagu with 100% beef; however, it will not be as juicy and tender as combined meat)
½ tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt)
freshly ground black pepper
½ tsp nutmeg
⅓ cup panko (Japanese breadcrumbs) (20 g)
2 Tbsp milk
1 large egg
For Cooking Hambagu
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
3 Tbsp red wine (for steaming)
For the Sauce
1 Tbsp unsalted butter
3 Tbsp ketchup (Adjust the amount - some ketchup is sweeter than others)
3 Tbsp tonkatsu sauce (Sub: You can use Worcestershire sauce. However, you have to add sugar to balance out the sourness as Tonkatsu sauce is sweeter than Worcestershire sauce. You can also make Homemade Tonkatsu Sauce.)
3 Tbsp red wine
3 Tbsp water

How to Make Hambagu (Japanese Hamburger Steak) (Recipe) ハンバーグの作り方 (レシピ)
I just made this recipe today for the first time! I think it's the best hamburger I have ever made. Even without the sauce, the burger itself already tasty. When we eat it with the sweet & sour sauce, it's the bomb!! It's so soft & juicy inside and little bit crispy outside (I freeze the meat first for an hour then broil them 7 mins each side instead of pan fried them). My picky eater husband & son approved! They say it's really good! My husband super duper rarely says my cooking is good hehe..My 6 yo son who usually doesn't like to eat meat, ask for more burger (I made his burger smaller size only 75gr each, so in total my son ate 150gr burger meat!!)... I remember the first time I had this in Japan I was like what is this because it didn't look like any steak I was use to but it was very delicious and you can't really find any restaurant in America that can make it like in Japan. 🇺🇲🇯🇵

Hamburger Steak has always been my favorite example of cultures influencing each other. We see so many dishes in America that are 'Japanese inspired' or from other cultures, but that Hamburger Steak looks so much more delicious than any hamburger I've eaten in America. Of course, I may be biased because the this is the favorite dish of an anime character I take as a role model, but either way, this dish looks fantastic and I can't wait to try the recipe.
PS; I love the music in the background it's very soothing and helps me to engage and learn

Looks absoluetly amazing, will try it this weekend. It is interesting that basically the meat is made how we in Europe make meatballs. The difference here basically is, that a Hamburger doesn't contain breadcrumbs and egg :)

When I was growing up, when making burgers we would drizzle soy sauce around the burgers in the hot pan and called them "sizzle burgers". :-D Tasted so good!

I've desperately missed hambagu steak, but since I'm in the middle east, no easy way to find pork...
You've written that it can be 100% beef, but it won't have the tenderness of combo meat, so... any other suggestions? I absolutely want to try this, and having tried other recipes from you, I know this will be amazing! 💕

I’ve always enjoyed Japanese Hamurgu, it was cheap and satisfying. I liked that I could cut it easily with my chopsticks as well. I’m going to try this recipe, and explore the sauces a bit more. I prefer Japanese Hamburgu’s to western hamburgers because you can change it up so much with side veggies, fries and of course the sauces, n cheeese. Yeah I have good memories of different types of hamburgu’s in Japan:). Thank you:)y”

Maybe a stupid question but why do you toss the patties 10 times in your hands?
To release the air pockets, and it'll prevent from cracking when you cook the patties. I explained a bit more in the blog post. :)
Can confirm it’s a legit technique. I just came back from Japan, and I saw the chefs do this many times at multiple places. Now I know why!
