Those were pieces of pickled turnip. A lot of the time pickles in the middle East are made using cauliflower, carrot, turnip and cucumber in the same jar. Maybe you can find it at an Arab store.
@@MiddleEats is it similar to gardinaira? Or jardinaira however you spell it... I’ve had individual pickled things from Lebanon and Israel and Iran but nothing that’s like a medley.

I love home made pita but I found that I like non yeast ones better than yeast. I have to make them myself because I can’t find organic pita here in the USA.

The Lebanese fast food restaurants here in Ivory Coast have tons of stuff they add (or give as options) in their shawarma like onions, tomatoes, but my fav is red pickled cabbage. That garlic and pepper sauce is AMAZING 🤩
This looks delicious! Best chicken shawarma I ever had was in Riyadh, loaded with the perfectly thick garlic sauce, pickles and fries. I loved paring it with an amazing fresh cool fruit juice you can find at the local fruit stand.
Just wanted to come back to this video to give my praises. This is, without a doubt, hands down, the BEST recipe for that restaurant-level chicken shawarma. So many other recipes were maybe 70-80% there, but were always missing something. I followed the recipe completely with the exact ingredients that Obi mentioned, including the toppings and sauces. Undeniably the best source for learning to cook Middle Eastern cuisine on RUclips. Growing up, I never really understood the nuances of the various cuisines across the Middle East, from Egyptian, Syrian, Palestinian, Lebanese, Moroccan, etc. Growing up, I simply considered it all to be "Arabic food" (which is a disrespect to the various cuisines and their individual cultures). just made these this weekend, I'm glad I did the oven grilled skewer method because they rendered out a LOT of fat while cooking. I think next time I do them I'm gonna leave them in for a little longer after the last flip though since I didn't quite get the char I was looking for with them. Tasted amazing.

If you had a deeper baking tray to cook the meat on, one technique that could add great flavor is placing vegetables below the cooking chicken, so all the marinade, fat, and flavor dripping off the chicken is caught by the veggies! Great vid👍
Dude this is legit the best shawarma I've ever had. I made the marinade almost exactly as you did, accidentally doubled the tumeric, and after tasting tripled the black pepper and chili, also added a pinch of MSG to ratchet it up a notch. As for the chicken I went with half breast, half thigh. With this part I veered a bit farther from your recipe because I cooked it soovide and then only seared it on the pan. So I got an exact, and mouthwateringly soft, consistency on the inside of both the breast and the thigh. I also threw in the bag a couple throats for the taste and gelatin. The marinade and juices I reduced in a pot while searing the meat, so I could then coat the meat up with it without it being runny. I also like to assemble my pita quite different than you, but the core element here is the marinade which came out fantastic. This was the first video I ever saw by you, and I made this like two days later. This is now my new workdays lunch. Already recommended the recipe and your channel to anyone willing to listen.

That's one of my favourite recipes I've done so far, so incredibly delicious and like you said the onions are insane. They'll also go good with shawarma, or you can wrap the shawarma in Lahmacun instead of bread. So many delicious combinations to try!

Great video! I've been trying to cook this at home without the same results and I will definitely use this technique next time. However, I will add fries inside the sandwich (something I tried while in Beirut) which I think adds both flavour and texture.

This recipe is LEGIT. I followed the recipe exactly and used the grill pan method to cook it. I also followed the linked recipe for toum. The final result tasted like the real thing from overseas (tasted in Palestine and Jordan). This is one of the best I've ever tasted in the U.S. and I can hardly believe it was made in my own kitchen! Thank you for the recipes. Keep up the amazing videos!

Awesome! Awesome! Awesome! Very glad this channel's picking up! And excellent recipe! One tip which imo makes the skewer method probably the easiest: instead of slicing the thigh before skewering, score it deeply instead. SCORE IT ON BOTH SIDES! This makes it tremendously easier to skewer than thin strips since it will still be in one piece and yet still exposes the meat to the marinade and creates little bits that char up nicely under the grill! Then once cooked you can slice it/break it apart as desired. Keep up the good work man! Can't wait for next week!
Great tip, in fact I think doing that in an accordion method to stretch it out will be even better. You could also thread the thigh on fully then slice into strips working your way around the skewer. Thanks for watching, I appreciate having you around!

Maybe I'd stretch to include some pickled turnip, but once they've been in the jar for that long, they all taste the same anyway. You could of course put anything you want in them, cheese works well!
@@FuriousCheddar Yeah it makes sense. Actual Egyptian shawarma is quite different from this recipe in terms of seasoning but also it's served in buns and sometimes with cooked onions and peppers. I was trying to emulate what is served at Syrian Shawarma places I've tried in Cairo, Syria and here in London.
I had no idea what this would taste like so I decided to try it. I'll admit I was worried during the process of making the sauces, baking the bread and skewering a million pieces of chicken that I wouldn't like it after putting in all that work, but it was definitely worth it.
after I had Shawarma with Saj bread in some places in Ontario, I can never enjoy ones with thicker Pita bread as much as I used to Saj bread is such a game changer and super good

I've wanted to try Shawarmas for sooooo long! They've always looked so delicious! I recently moved to Arizona and it seems like the population here is rather bland in restaurant selection I hope I find a place soon that makes delicious authentic honestyle food I really desperately want to try an authentic Shawarma!
living in arizona, we truly do lack restaurants besides fast food. ive found 2 good middle eastern restaurants so far within a reasonable distance, though undoubtedly there's more i probably havent found. otherwise its all burger and pizza chains and mexican food

In Canada, sharwarma is served with garlic, hot sauce, and humus. A salad mix, pink turnips, taboulleh and sesame sauce. It can be a wet mess. Stay away from the chains. Go mom and pop.

In Jordan I never really had it with the spicy sauce, And beef shawarma with those purple onions and tomatoes is the holy grail of Shawarma in my opinion. This looked amazing though will def make at home!

I could do either, but I'd have to buy skewers for the oven style. It seems to me that a BBQ would yield similar results. Either way, thanks for sharing 👍 🙏
Thanks for watching, I really appreciate it! Grilling is a great idea, and you can grill whole then slice to make your life easier. The issue I have with pan grilling it whole is that you don't get much char and there's nowhere for the juices to go. But definitely give grilling a try over some charcoal.

Had a big party for 20 here last night and made this schwarma for the first time 3X the recipe. Since we have vegetarian friends I used the same marinade on portobello mushroom steaks and tofu. All three were awesome. Rave reviews by all. I paired them with your cumin rice recipe 2X and both were a hit.
I dated a Lebanese woman once. She told me authentically it should have a toum tahini sauce with chopped parsley. And they never eat a sandwich with fries or chips. Lebanese just eat two sandwiches if they feel they are still hungry. After eating Lebanese shawarma I whole heartedly agreed. I eat two every time, no chips or fries necessary. With a lemongrass lemonade, oh my god do I miss that woman..
Genius! The way the chicken is cut in strips and skewered to give the same appearance as chicken shawarma off the vertical spit is clever. Great recipes and easy to understand. I loved the Thom and chilli sauce video too. Thank you for the videos.
Obi, this has become a favorite in my house. I think I make this version of chicken shawarma or your express version once a week now. It’s easy, especially if you make a big batch of the dry mix ahead of time. It is the perfect quick dinner with fattoush or tabbouleh.
I’ve found that the most low effort method for this is to first roast the chicken in the oven and then cutting it up into slice and brown them in a hot pan for a couple mins to get that slightly burnt flavour
Rofl humus instead, it's not j ust a cardinal sin it's a complete misunderstanding of food and cooking at their core. Completely different substances with hugely different ingredients, that happen to share a few.

We have a lot of Lebanese restaurants in Quebec and what you call chicken shawarma is called shish taouk. I think taouk means chicken but I don’t know about shish.
Tawouk means chicken, from the Turkish word Tavuk. Shish though refers to skewers and shish tawook is chunks of whole chicken breast or thigh that are grilled on a skewer. Shawarma is thin slices though.
@@MiddleEats Now that is really interesting, because they sell skewers but also thin meat on a rotating spit. I suppose the confusion must have appeared in the local non-Arabic-speaking population and it just stuck.

This recipe is LEGIT. I followed the recipe exactly and used the grill pan method to cook it. I also followed the linked recipe for toum. The final result tasted like the real thing from overseas (tasted in Palestine and Jordan). This is one of the best I've ever tasted in the U.S. and I can hardly believe it was made in my own kitchen! Thank you for the recipes. Keep up the amazing videos!

One tip which imo makes the skewer method probably the easiest: instead of slicing the thigh before skewering, score it deeply instead. SCORE IT ON BOTH SIDES! This makes it tremendously easier to skewer than thin strips since it will still be in one piece and yet still exposes the meat to the marinade and creates little bits that char up nicely under the grill!
Then once cooked you can slice it/break it apart as desired.

Great tip, in fact I think doing that in an accordion method to stretch it out will be even better. You could also thread the thigh on fully then slice into strips working your way around the skewer.

More pickle variants and a small salad only add, not subtract, from the shawarma, brother.
Maybe I'd stretch to include some pickled turnip, but once they've been in the jar for that long, they all taste the same anyway. You could of course put anything you want in them, cheese works well!
@@MiddleEats I think its a regional preference. I think in Egypt your style is much more common but where I'm from its more mixed.
@@FuriousCheddar Yeah it makes sense. Actual Egyptian shawarma is quite different from this recipe in terms of seasoning but also it's served in buns and sometimes with cooked onions and peppers. I was trying to emulate what is served at Syrian Shawarma places I've tried in Cairo, Syria and here in London.
I had no idea what this would taste like so I decided to try it.
I'll admit I was worried during the process of making the sauces, baking the bread and skewering a million pieces of chicken that I wouldn't like it after putting in all that work, but it was definitely worth it.

I recently moved to Arizona and it seems like the population here is rather bland in restaurant selection I hope I find a place soon that makes delicious authentic honestyle food I really desperately want to try an authentic Shawarma!
living in arizona, we truly do lack restaurants besides fast food. ive found 2 good middle eastern restaurants so far within a reasonable distance, though undoubtedly there's more i probably havent found. otherwise its all burger and pizza chains and mexican food

In Canada, sharwarma is served with garlic, hot sauce, and humus. A salad mix, pink turnips, taboulleh and sesame sauce. It can be a wet mess. Stay away from the chains. Go mom and pop.

In Jordan I never really had it with the spicy sauce, And beef shawarma with those purple onions and tomatoes is the holy grail of Shawarma in my opinion. This looked amazing though will def make at home!

Question: While I understand doing it on skewers is probably the best of the three, how about grilling it? I could do either, but I'd have to buy skewers for the oven style.
It seems to me that a BBQ would yield similar results.

Grilling is a great idea, and you can grill whole then slice to make your life easier. The issue I have with pan grilling it whole is that you don't get much char and there's nowhere for the juices to go. But definitely give grilling a try over some charcoal.

Had a big party for 20 here last night and made this schwarma for the first time 3X the recipe. Since we have vegetarian friends I used the same marinade on portobello mushroom steaks and tofu. All three were awesome. Rave reviews by all. I paired them with your cumin rice recipe 2X and both were a hit.

I dated a Lebanese woman once. She told me authentically it should have a toum tahini sauce with chopped parsley. And they never eat a sandwich with fries or chips. Lebanese just eat two sandwiches if they feel they are still hungry. After eating Lebanese shawarma I whole heartedly agreed. I eat two every time, no chips or fries necessary. With a lemongrass lemonade, oh my god do I miss that woman..

Obi, this has become a favorite in my house. I think I make this version of chicken shawarma or your express version once a week now. It’s easy, especially if you make a big batch of the dry mix ahead of time. It is the perfect quick dinner with fattoush or tabbouleh.

I’ve found that the most low effort method for this is to first roast the chicken in the oven and then cutting it up into slice and brown them in a hot pan for a couple mins to get that slightly burnt flavour

We have a lot of Lebanese restaurants in Quebec and what you call chicken shawarma is called shish taouk. I think taouk means chicken but I don’t know about shish.
Tawouk means chicken, from the Turkish word Tavuk. Shish though refers to skewers and shish tawook is chunks of whole chicken breast or thigh that are grilled on a skewer. Shawarma is thin slices though.
@@MiddleEats Now that is really interesting, because they sell skewers but also thin meat on a rotating spit. I suppose the confusion must have appeared in the local non-Arabic-speaking population and it just stuck.
