    Just made this for dinner the other night. It was INCREDIBLE! I can't recommend it enough. I used a 3lb roast for 3 people, assuming I'd have leftovers... nope, they loved it so much that they practically licked the pot! The red onion salad was especially divine. I'm keeping a container in my fridge from now on and putting it on everything. Thanks for sharing this recipe! 10/10!

On the other hand, I used to work for HelloFresh (as an outsourced customer service agent working minimum wage in eastern europe) and I am disgusted by their ways. Rigid money making off 3rd grade food and supermarket waste sent to customers in tons of plastic, with a subscription system that traps you into the 2nd box before you even try your first one.
      Sorry to ruin your day like this, I hope you can keep doing what you love and live a great life, have a lovely salary to feed your family, without dirty marketing money.

    This is great. I've been missing Egyptian shawarma for many years since I lived there. Shabrawy was my go to spot. Foul with egg, ketchup-mayonnaise, foul with fries salad boiled egg baladi pita bread and a bottle of Fanta. I'm salivating. Best breakfast I ever had, you can toss boulders all day and not get tired.

    Made this a couple weeks ago, and WOW!! So tasty! I used ground beef and it worked very well, didn’t need to marinate and cook a long. And I used home smoked salt to infuse a slight grilled taste. Making it again today!

    man... I was in Egypt once during holidays with my parents when I was young but I definitely wanna go there again.. though it is "not recommended" to travel there.. but I would love to see an entirely different culture for once, learn something new.. Hope the pandemic will be gone one day.

      How long does it cook in the instant pot? High or low pressure and pressure release? Did you add water or broth? Or does it release liquids quick enough not to give the burn notice?

    Made this in a pressure cooker. Once out of the pressure cooker, I reduced the liquid and fried it in a little butter. It took half the time and it was deeeeelicious. Thanks for another keeper Obi!

      @@strangulator123 depends on your pressure cooker. In mine,it took around 20 minutes on high to cook and then I opened lid and reduced juices for another 10 minutes

    Brother. I’m eating right now. This does not make any sense how good it is. Reminds me of a Lebanese joint I tried years ago and they had this amazing lamb shawarma. They closed so I never experienced that flavor ever again. I know this is beef and not in the broiler, but the flavor. That’s it. I’m so happy I found your channel. Love you bro.

    you're a hundred percent right Egyptians shawarma is the best. I used to stop at a little roadside stand on Faisal Street before heading down into the Faiyum where I lived in beni suef. I miss those sandwiches so I'll have to try yours thanks.

    Made this (and have never actually had schwarma before) for a dinner party, and it was absolutely delicious. Great for a group, and I was able to find the spices in my local grocery store, don’t leave them out. sumac is a new spice for me, and it had a lovely scent and color. Making this again for friends next week.

    I worked at a shawarma place for about a year here in Ontario, and our "beef" shawarma was really a combo of homogenized processed beef and lamb, shaved off and served as a wrap, typically with donair sauce (which I think is an Eastern Canadian thing?)
    It was fine, but a completely different beast (so to speak) than your gourmet work here. I also just love seeing how shawarma looks different depending where you are in the world. So interesting to see the diversity of this dish! Take care buddy! :)

      That would be closer to a Turkish Donner kebab than a shawarma. Most Donner is made from minced beef and lamb.

      Donair as it’s known in Canada is originally a Halifax dish. Meant to be eaten in an alley at 3AM after a fun night. The further west you go from Halifax, the weirder the donairs get. People in Edmonton put pineapples on their “donairs”.
      It was invented buy a Greek or Lebanese guy who wasn’t getting much business in his restaurant because maritimers find yoghurt spicy. Someone who tried his experimental dish asked what it was called, and he just blurted out “donair” (because he couldn’t think of a better name at the time). And the name stuck

    I'm looking forward to making this! Although I might not throw in all the beef at once, but first brown a portion of it in the pan until a solid fond forms, then throw in the rest with all the juices to cook off the fond. I'd hope this might make it taste a bit more "grilled". Also, toasting the pepper might be a way to cheat in these flavors as well.

    Thanks Obi for showing me the beauty and variety in Egyptian food. I went to Cairo and I don't know if restaurants are all clustered in one place, but I walked for miles around Doqqi and found only the odd kebab shop. I had great taameyya and asir but otherwise I missed out... Your videos are making up for it ❤️

      There are food shops all over the place in Egypt, so I'm not sure why you didn't find many. Dokki has loads of restaurants, but maybe it was Ramadan and things were closed?

      @Middle Eats No it was September 2019, so not Ramadan. I'm not sure where I went wrong! If I return I will do some very careful research on places to eat before I go.
      I made your Fasenjan, Aubergine Fatteh and Salata Meshwiya recipes - all turned out great! The chicken for the Fasenjan cooked down a bit much in no time, so people really need to follow the timings you gave. For Salata Meshwiya I put 6 cloves of garlic and I found it more than enough. Next step for Fasenjan will also be to splash out and make Pomegranate molasses from scratch or use a 100% pomegranate one (I sadly ended up with the same 17% one you use in your video). Really enjoying it, keep up the amazing work

    Also, if you're interested there's an excellent easy cheat to add "grilled" flavor to food! See if you can get some "Lapsang Souchong" or smoked tea - I put mine in an old spice shaker. Just a couple shakes of smoked tea over food adds the smokey grilled flavor back in!

      That's a good cheat! We actually do something else, we place a small amount of oil in a ramekin, and place that in the pot. Then we light a small piece of coal, then drop it in the ramekin and close the pot. It gets really smoky.

    This is an insanely delicious recipe and hats off Obi for the great video... The beauty of shawerma is you can have many recipes and they all taste great but this version is by far my favorite, especially you live in Europe and dont have shamee bread the brioche buns go really well.

    Please, let's not call these "cheap" meats. While I enjoy a good steak, tenderloin or roast, often these "cheap" cuts satisfy me even more. Deep, rich flavor, and if cooked right, no knife required. These less expensive cuts are in no way inferior to the more expensive cuts, and a pressure cooker is a Godsend for cooking them. I could practically taste this as you were cooking it, and I must admit, I was more than a little jealous watching you eat it! It looks like topside would be roughly equivalent to rump roast here in the States, but I'm betting chuck would be awesome in this recipe. Putting this on my to do list!

    Here in Kuwait we get shawarma sandwiches with Sammoun buns which are similar to Iraqi Sammoun bread but a bit sweeter and more fluffy, not to mention most of our Falafel shops serve sandwiches with it, I prefer it to the normal pita bread because how soft it is and it soaks shawarma grease and tahini sauce.

      I love samoun bread, the thing you described sounds great. Yeah the soaking of the juice is what makes the buns a good choice.

    I cooked it today, finally.
    Marinated overnight and cooked in a cast iron pot in the oven at 90C fan for 3 hours. I used beef chuck and a Moroccan ras el hanout blend and wrapped it dürüm style with salad in a Lebanese pita. So that was nearly all the way around the Mediterranean. Egyptians, please bear with me.
    It tasted great and was wonderfully messy to eat 😄

    Very interesting technique, i wouldn't have guessed that you'd do it this way! it makes sense though, when im making my best beef chili it cooks to this perfect amount with a gentle simmer to the best consistency.

      Yeah, the tahini sauce has a strong flavour which usually masks most grill/char flavour

    Sumac is non-negotiable. Nothing else in the world tastes like it. It is one of the most amazing spices I've ever used. Whenever I make hummus, I absolutely blanket the top with sumac and a home-made dried chili pepper blend.

      It's not as important with beef shawarma, because the tahini sauce has a strong flavour which usually masks the smokiness.

      Nice, I hope you like it. The bharat isn't 100% essential, it's just a mixed middle eastern spice, and it helps to add some flavour to the dish, but most of the flavour comes from the sauce and from the citrus

      I made the dish and it was fabulous! I used sirloin and added lamb tallow and it tasted quite lamby and delicious. Had it on brioche and served with a nice side salad. Thank you again, Oba and I wish you continued success and good fortune with your channel.
