Majority of the videos just cut the fish, and rarely people talk about the direction of the muscles and cutting direction. This is why this video is better than other 90% videos. My fish has been more awesome after realising the cutting direction.

+Rodolfo Martin (ImJustRodo) I am using a regular western style chef's knife in this video. It's an 8 inch Victorinox Forschner Fibrox that sells for about $30-40. For removing the skin, you'll need a boning knife. The slicing for sashimi and nigiri is best done with a one sided Japanese style knife called yanagiba. The Salmon that is in the video clip is not match for the sushi or sashimi grade as well as the meat had broken down quite too much. Also, the way that cut crossed against the grain is very very wrong for the sashimi, but that is usable for making a nigiri.
Actually, the fish should ( but not necessary ) be salted for about 20 - 35 minutes first then wash off with 2 parts water and 1 part rice vinegar. This will prevent a build up germs and will make a salmon meat more firm.
Very interesting method of slicing salmon... I read some ugly comments here, you m know what I say? there is no correct way or wrong way in slicing fish as long as you can get a piece to serve on the table. But, a good slicing technique will give you more pieces...
