Kalma boys I'm kitchen staff. My kitchen even not that big and professional but we clean as fuck. I think it's depends on who controling kitchen. If head chef is clean then everybody is clean.

Being a very much novice in the field poke/sashimi/sushi worker on a raw bar in a very fusion based restaurant, the cut across the grain silver skin side made me realize that the way the fish will come apart is so much a part of the experience Than I realized I have much to learn.

Can find tuna here but it's never the same as fresh tuna when you catch it and eat it straight away it's a different story compare to tuna that's being sitting in the cooler for God knows how many hours
