  • This past weekend we went to a U-Pick strawberry farm and picked quite a bit. So with part of that haul we are canning strawberries!

    Ok 2 THINGS!!
    1) I used way more sugar than I intended to. Ball book says to use 1/2 to 3/4 cup sugar per quart. I meant to measure out for 1/2 cup per quart and instead measured out 3/4 cup.
    2) I should have packed them strawberries in a lot more. But regardless ... it's all good :)

    Watching this video is like meditating. Sometimes canning videos stress me out but this is both peaceful and helpful!

    I've done that a few times because we got that big strawberry farm in Ponchatoula LA
    What I did is filled with max berries added juice and the leftover juice I cooked down and made strawberry syrup for pancakes etc.

    We picked strawberries one summer, when my parents lived in Kentucky. We made strawberry preserves, strawberry jelly, strawberry syrup & strawberry pie. They were so good. I’m sure y’all will really enjoy those. Use vinegar to clean off the top of the jars. It cleans better than water, especially greasy stuff. I also saw on another channel that the gold lids rust easier than the silver lids. They can a whole lot, like thousands of jars. Just thought I’d pass along the info. Y’all are doing a great job.     I water bath canned 7 pints of blueberry pie filling last week and had terrible siphoning. So far, all but 3 of the jars had broken seals. I'm overdosing on blueberry filling, lately. I've made fried pies, blueberry cheesecake, and eaten some right out of the jar.

      Oh wow sorry to hear that. Our daughter Faith LOVES blueberries. If we have them, she will eat them non stop all day LOL

    Just reduce the left over juice into a syrup and put it over waffles or icecream

    Doing this for the kids is the greatest. They remember everything we say 😂 if we say we are doing something tomorrow we always follow through. Very important. 😊

      That is true! They can remember anything we say as long as they benefit. However, they don't remember when we say to clean their rooms! Haha! Thanks for watching!

    I have just water bathed our strawberries with a syrup, its amazing on yogurt and pancakes etc

    MMMMM strawberries... Looks great.. My wife had me drill holes in a ladle for canning juicy stuff, pack more solids and pour the juice over. (She could have drilled those holes)
    I enjoy watching your videos first, they pop up hours before the rest wake up. My simple pleasures.

    Find a well made plastic/metal straw...Rub the edge on an emery board to make it thin and a little sharp...Then use it to push thru the strawberry ...tip to stem...Hollows them out without losing the best of the berry...works with cherries...save the straw for next year...good canning tool are hard to come by...I have a collection of kitchen implements that goes back about 100+ years...I have my Mother-in-laws that she bought over 70 yrs ago, when she got married, with the receipt from the F & W WoolWorth 5 & 10 cent Store...Everything she needed top of the line...cost her all of $4.85...Her Mother-in-Law yelled at her, said she'd never save any money and that her son was in big trouble...Well she's getting her money's worth...Wouldn't you say...

    In the 70 in California they would open the strawberry fields after they did the main picking and it was for free, use to love moms strawberry jelly and yes she froze a lot for the winter, loved loved lover fresh free strawberries but have a real issue paying big bucks for strawberries, I normally don't pay over .99 cents a quart but when o can find it at those prices I buy them by the flats but im afraid those days are over.

    This year try slicing and dehydrating! Theyre great to add to teas, oats, yogurt, snack mixes, and you can also rehydrate them and use them as you would canned strawberries. It gives a little more versatility to them, and rehydrated theytaste better than canned (in my opinion!).

    Those are going to be awesome in a pie! Have you ever dehydrated strawberries...we recommend it!

    I water bathed some strawberries using a little sugar, BUT instead of leaving them in the bath for 10 minutes, I forgot they were on the stove and they boiled for about 45 minutes. The berries lost their color! :'(
    My plan now is to strain them and make pancake syrup and strawberry jelly. I may do some with jalapeno too. Hate I ruined 12 half pints of strawberries.

      It's amazing how quickly things like that can change, too. We have burnt strawberries when trying to make jam. It was too hard to even get back out of the jars. Lessons learned!

    Always love family outings that have a dual purpose. You know the kids will appreciate it all even more because they were part of picking fruits and it sure looks good! I've got a box of peaches that have ripened and today we'll be canning as well. Enjoy and have a Happy Fourth of July! ~ Jan :-)
