      Me. LoL. I’m in NE Florida and it’s been Spring here for over 3 weeks. My potted flowers are in full bloom and our cars are covered in pollen from the oak trees. 2 weeks of winter isn’t long enough. Today’s high, 85. 🥵

      @@theirishcailin333 that’s why Ireland is greener than green, right? All that lovely rain. My sister in law lives in Ireland around Dublin, just outside. We flew into Ireland this past October on our way to Rome but only stayed in the airport. Hoping to go back next year (or the one after) and have a proper visit. Beautiful country. 💚

    i dont leave comments on videos very often but becky, i just wanted you to know that every other day/every few days when i see you have a new video posted, i get really excited to watch, and your videos always brighten my days. i am disabled so i dont have a whole lot to do each day; i check everyday and always look forward to seeing your new videos! i just inherited a house in northern ontario with a large yard. though the growing season will be pretty short, im very excited to start my own garden and preserving, and learning from you along the way.

    I'm hoping that I can keep the squirrels away from my strawberries this year. I heard about painting rocks to look like berries so when critters try to eat them, they give up on the hard fruit. If I get a good-sized harvest, I'm looking forward to making the strawberry/lemonade concentrate. I am surprised the recipe calls for fresh lemon juice. All the canning recipes I've seen specify bottled lemon juice because the acidity of fresh lemons is so variable.

    I agree with those saying that moving the strawberries might not be a good idea. Once beds are established, it’s not always easy to establish them elsewhere.

    Jam was the first thing I learned to preserve in my mid-20s. Twenty years later, I haven’t purchase jam or jelly since then. You cannot beat the fresh flavor or the satisfaction, especially when you grow the fruit, too.

      That's so funny because I'm in my mid 20s ( only just switched from "early twenties" to "mid twenties" so that's kinda weird to say 😅😅) and I just started canning my first batches of fresh jam! It's been very satisfying and fulfilling, and I've already started thinking about other jams to make!

    Rule #1 in canning. Don't ever, ever take a hot jar out of a canner holding a baby. If that jar explodes it's going straight on your baby and will give 3rd degree burns. I had a jar explode on me while taking it out of the canner once. I was in the burn unit for a week with 3rd degree burns on my face and arm and almost lost my eyesight. Thank goodness it was only beans and not jam. I still can foods but I don't open that puppy till the next day. That was 13 years ago.

      if u leave them in the canner overnight it can lead to something called flat sour which though not harmful will ruin the flavor of ur food

    A strawberry margarita mix is a great idea! I usually freeze half my pineapple in chunks so that I can easily toss some in the blender for a frozen pineapple margarita 😋

    Dear Becky , I have to explain that in Germany we don't waterbath jam. We cook the fruit with the jamsugar 1:1 or with spezial jamsugar 2:1(taste more after the fruit) for 4 minutes with good bubbels. Then we fill the very clean glases and put on the lids ( I cook them first in water) quickly . And that is it. My jam is good many years. Only the colour changes sometimes spezial by strawberryjam. Second time greetings from germany

      I'm from Sweden and that's the way I've always done it too. Although I've started to water bath applesauce because then I can make it shelf stable without sugar.

      You can make them almond meal by blending them or almond flour by blanching and blending. It will help your granola stick!

    Something i recommend to try is using gooseberries in your jam! They have all the pectin you need so you can sub in gooseberries for your pectin additive and make honestly my favourite jam (home grown gooseberries of course. Its the way my grandma used to make jam amd its still the best.)

    Until I was around 12 I was allergic to strawberries. They are absolutely my favorite though and finally as a pre teen I grew out of that allergy. Great uses to preserve your strawberries I bet it was so rewarding getting them out the freezers and on your shelves.

    I don't know if you will read this or not but I have an. Idea for you in the garden. Take a large tub and fill it with water, put a smaller clothes basket inside to rinse the produce and reuse the same water to water your plants. Hope this helps!

    The strawberry lemonade is amazing! One of our absolute favourites. Try making a peach lemonade and a blackberry lime concentrate too. Sooo good with tequila or rum.

      I love the strawberry lemonade as well! I’m still “new” canning. I’ve been doing it about a year so I’m still learning what’s safe and what’s not. To make alternative flavors and can them, do you just substitute with equal amounts of fruit?

    I may be wrong, but you may not have needed 6 cups of the purée to make the lemonade. I think the recipe calls for 6 cups of hulled strawberries and then you purée that, which makes about 3 cups of purée 😊

      You're correct. The measurement should have been when the berries were frozen instead of cooking them first.

    Please forgive me for being "that" person, and I hope you take this in the spirit I intend, which is that of constructive criticism. I frequently hear you say "this is Josh's and I's favorite..." The correct way to express this thought is to say, "this is Josh's and MY favorite." I love watching your videos and enjoy very much seeing the way you improvise and experiment with ingredients and methods. You have a wonderful innovative spirit in the kitchen! I once wrote a book for someone very dear to me called Improvisational Cooking so I could help her learn how to do just what you're doing , which is to cook with love and without fear. I'm old enough to be your mother so I know how to cook, but many people your age don't, for whatever reason. They're intimidated and afraid of failure. In showing both your successes and your failures - we all have them - you are giving a lot of young women confidence in the kitchen and thereby passing on a deep love for cooking and feeding loved ones.     I'm allergic to strawberries, but a few years ago we planted a few and now they are now a wonderful ground cover. The birds love them! Enjoy your jam!

      Thanx for thinking about the birds, me on the other hand loves strawberries and do not want the birds to eat me strawberries. So my son show on Pinterest a tip and did it for me. He painted small river stons to look like strawberries and I put them in the plants before the real strawberries ripen. The birds try to eat them and find the are hard so learn to ignore the strawberries and my real strawberries are safe. 🍓❤️😂

    Strawberry Jam, I'm so jealous I used to love making jams, Jellies, and Marmalades every August/September. I'd also make some in smaller jars to use as Gifts during Christmas. Creating gift bags of jellies and jams, and homemade cookies and I would also make a set of Christmas ornaments every year. This way when I would stop by someone's house during the holiday I could throw a gift bag together and show up with something for my host. It was great fun.

    For those who havent processed their strawberries yet. Please try Strawberry Honey Butter from the Ball canning book. Let me tell you...I think it is better than regular strawberry jam. Very, very tasty especially with freshly baked warm bread.

    I can attest this pectin recipe for low sugar is the best. I’ve won multiple 1st place awards for my jam at the Oregon state fair using this exact pectin. It sets up really well and uses the right amount of sugar to make the fruit absolutely pop with flavor.

    If you wanted to make the granola cluster-y without adding gluten, you could grind up an additional qty of oats into flour and use that instead (or use pre-ground oat flour).

    Fresh strawberries come out in May each year. I buy as much as I can, clean and hull them and flash freeze in the freezer and bag them up and vacuum seal them and put in the freezer. Most of the time I will have 20 gallon bags of frozen strawberries in my freezer each year. I use thawed and puréed strawberries to make strawberry cakes, thaw some and slice them and use in between chocolate cake layers, and of course strawberry shortcake. But my absolute favorite way to use them is to throw frozen ones in my food processor and turn them into a frozen granulated strawberry mixture and add some sugar or sugar alternative, mix well, put them in freezer jars and then I can take a small jar out and eat it like a icee, or sorbet, or add it to vanilla or strawberry ice cream. Got to love how versatile this fruit is!

      So true! My husband and I bought a half cow and whole pig (inspired by Becky) and oh my goodness I never knew burgers could be so divine! (And everything else). Just one of many fresh and better than restaurant examples.

      @A. Lee my sister used to have a vineyard. She allowed a "Shepard" to graze his cows on her property. She was able to purchase beef from him at a very low cost. This meat was delicious. I'm happy for you. Debbie Lavigne

    Keep a close eye on the freeze dried berries. The seeds can possibly have moisture left and cause them to go soft. Also slicing them helps to ensure they're dry all the way through

    The strawberry lemonade canning recipe is delicious!!!! I’ve also done raspberries but need to strain the seeds out for that one.

    Freeze dried strawberries take way longer than you think they will, because the seeds hold moisture so much longer than the flesh. I do mine a minimum of 30 hours, even starting from frozen, sometimes more like 40. Slicing makes them dry faster, but they will still take a long long time because of the seeds. Maybe not such a big deal to get them completely dry if it's for something you'll eat within a few weeks, but for long-term storage you need to make sure they're very very dry.

    I always just weigh my strawberries to calculate how much sugar etc I need. I know its not American (I am Dutch), but so easy and I can process them straight from the freezer!

    It is strawberry season in Fla. & I can't wait to try some of these! I love your cutting board!!! I would get some mineral oil & rub it in. It helps preserve the wood. You are looking wonderful Becky. Love n Blessings from Fla.

    Both the granola and the lemonade concentrate look amazing! I loved seeing all those strawberries! We have a nice ‘strawberry patch’ as part of our garden and they were prolific last year as well. Nice work, thank you for sharing.

    That strawberry jam looks amazing. A little tip, if you add vanilla, the flavor of the strawberries will be enhanced.

    I love the low sugar pectin. I refuse to make jam that has more sugar than fruit. Beautiful berries.

      Have you tried the Pomona's Pectin? I fixed some blueberry jam the other day with it. I will have to try another one before I'm all in lol

      If you don't mind the flavour, apples have lots of pectin, I think plums too?(check that). I made 2l of damson jam and 2l of apple (one with elderberries) in 2021 no added pectin and still have nearly half left. We don't have much of a sweet tooth! I need my dad about, he puts it in porridge.

    For a low-fat version of your granola instead of adding the cup of oil you can also add a cup of ground up dates blended with just a touch of water to make kind of like a “date syrup“. Great option for people who think they might be headed towards heart disease

    The strawberry recipe for lemonade is 6 cups whole not puréed so you’ll be able to dilute yours more when rehydrating

    If the stove you have is powerful enough you can easily tripple recipes… But if you need too much time to heat the batch to boiling, you can destroy the pectin, therefore it may not set.

      @Sandra Areias The recipe in the Ball canning book says to mix a 1:1 ratio with water. I have made it and found that to be too sweet for our taste, so we do a 1:2 ratio. It also mixes well with 7up and ginger ale. 😊

    I made your granola recipe last year and you’re absolutely right - I don’t think any other granola. I put it in Greek yogurt with maple syrup or add milk and eat as cereal.

    I have been making strawberry lemonade concentrate for years! One of my first canning projects. Now I also make raspberry, watermelon and blackberry Lemonade concentrates also!! ❤️❤️❤️

    I’ve made your granola receipt twice now! Once with maple and pecans and this last time with cranberries, cashews and added some semi-sweet chocolate pieces. I’m hooked. No one wants yogurt unless there is granola.

    Am I wrong in thinking you shouldn't touch or tap the lids until after 12-24 hrs, depending on the recipe?
    And I've wondered on recipes like strawberries and tomatoes, do you measure before or after you cook them down?

      You are correct. Leave them untouched for 24 hours. And follow what your recipe says for measuring exactly.

    My family and I have been canning strawberry jam for ages, using jam sugar (with pectine already added) in a 2:1 ratio (2 fruits, 1 sugar)and we've never had any problems!
    In the stores around here (Germany), you even get 3:1 jam sugar for fruits with high acidity and or pectin levels. It tastes so fruity!

    Dear Becky. Strawberryjam changes its colour very fast. I purree my strawberries after the harvest and put them 1 kg per batch in the freezer to cook them to jam fast if i need it. So it taste and look fresh. In Germany jamsugar need 1 kg of fruit. Excuse my bad englisch. Many greetings from Germany.
