  • Today we are canning fresh pineapple that does not require a simple syrup nor does it require a ton of work. If you choose 2 can it in ring form you will need Wide Mouth Jars.

    Hello again, Mrs. Homestead Heart. Please tell me how long you let your pineapples sit before they are ready. I noticed that your pineapples are mostly golden color. I've purchased pineapple before and let them sit on counter, but by the time the entire pineapple was all golden like yours, I noticed they were a little too over ripe. Some had mushy parts and some had sour taste. I didn't do anything with those, but chop up the good parts and just ate them. Are your using "Golden Pineapple" from the store already golden. Or is there a guideline on how long to let pineapple sit out to ripen. Thank you for your time....

      Great Questions. I purchase them green. Make sure they are very firm at the time of purchase.
      Place them on the counter and once they start turning in color check the firmness daily by gently squeezing all around the pineapple.
      If you notice any semi soft spots, can it up as soon as you can.

    I just canned 45 pineapples our Kroger's had a sale for. 99 cents each that is a good sale for Ohio. I am doing topping today. I do this every year and I don't buy any more until next year. I also froze some and froze the left over juice and make pineapple water.

      I always try to get the real yellow ones. They are the ripest. Is there anything different to canning them if you want crushed style besides running them thru a processor?

      I only canned twice so far (2and time was same batch, to re-do it) a d I Know it will be addicting
      I went a d bought a couple hundred lids and am still trying to build up the jars stash which have been used as fast as they were bought, to store various things. I still need a pressure canner though.

    I became certified as a canner from the State University of California and lemon juice preserves the product from any bacteria contaminating the canned product and also prevents discoloration. You will see chefs squeeze it over a fresh salad, with apples, avocado,etc. the fruit won't turn tan or brown.

      Is that really a College class you can get a certification for?? Wow! Maybe I should go! Wish I had learned a lot about canning growing up. We canned tomatoes & some peppers but that was it!! These videos sure help!

      My daughter is Allergic to lemon, I don’t want to put a sorbic acid do you have another alternative? I was thinking vinegar but not sure?

      @@dorisagape9768 Yes, you can use vinegar in place of lemon. You can use apple cider, red wine, and white wine vinegar (I’ll use champagne vinegar when I can get it, but it’s pricy). Make sure to only swap the other 5% acidity kinds of vinegar in for the white distilled. As long as the vinegar has the same acidic concentration, you can always pull out one vinegar and replace it with another.

    Cut the pineapple parts off the top, put the top in water and let it root, then you can put it in the ground to grow.

      Sarah I twisted mine off (recommended in a video). I put it in a jar of water for a few days to rehydrate the roots. I just potted it yesterday, so fingers crossed that it takes.

      @@sandrahall3396 I live in Florida and just put it straight into a pot of dirt and you must keep it from drying out. We have four plants so far, but the leaves are like a serrated knife! Mulch around it and it grows well where it doesn't freeze.

    You are a national treasure, lil lady. I woke up feeling awful this morning and for some reason stumbled upon your video. I will probably try canning pineapples now even though I've never canned anything before in my life..hehe. i ordered one of those a pineapple gadgets and got some cans! You cheered me up, made me laugh, and inspired me to try something new during quarantine. I love that you boil down the shells for juice and jelly. No waste at all!     We usually boil the skin with ginger sweeten to taste...and just like that you have pineapple juice.

      I was thinking the same idea. But I would use the hot pineapple juice instead of plain water.

      Are pineapple sprayed on the outside. Wouldn’t those chemicals go into the juice with cooking?

      @@bonniekrause-gams1769 well think about it...it also would penetrate the skin so we're also eating it....at least when boiled with ginger hopefully that will help cut down whatever is on it....unless we produce 100% of our food...we will always be vulnerable.

    I LOVE the idea of taking the "carcasses" and cooking them down for pineapple jelly! I have always wanted to can pineapple and now I can do it without wasting a bunch of stuff.

      Yeah I was thinking about putting them in the crock pot so they could be upright and all the juice centered then spoon and pour. Not sure if it will work, but gonna try it.

      Take pie pumpkins,put in crockpot to soften,& cool,Deseed,& jar up for pumpkin pie.Cut up in chunks,Not smashed

      She inspired me also. I shopped all over to find the Presto canner (because that's what she used). I've canned lima beans, peas and green beans. I'm planning on doing pinto beans today. I absolutely love watching her!!!

    Yeah, been meaning to warn against tipping the jars to pour off the water on top.
    Every jar is still under pressure until all the oxygen is sucked out and the lid is pulled tight to the jar (sealed). Tipping a jar that is not completely sealed could cause the contents to come spewing out, and burn you.
    Better to lift it straight out and set it on your drying mat. The water on top will evaporate in seconds.

      Indiana Berry you can still use wax mostly used in jelly and jams. Most don’t use that method anymore. Your kitchen your rules!

      Linda, I wish I had read that tip earlier!! I canned butter yesterday and tipped a jar to dump the water off the top. I was surprised when butter came spewing out!

      @@JazzyMamaInAK I have to share my oops canning jams with wax. My mom taught me to make jam that way and I have no idea why. Maybe the ham didn’t last long. Fir me I canned a ton of jam with wax and every single one got mold under the lid snd into the top of the ham. I hate to admit this (I was 25, now 76). I would never advise someone to use wax if the product will be stored long. My larder was dark snd cool too.

    When I was a child, we would fight over the core. So my mom would rarely remove the core. Of course, my auntie worked your Dole in Hawaii so we never had a lack of pineapple in our home. I'm in Maryland now and I sure do miss that. I love what you're doing... thanks for sharing your journey.

    I love that hint of lemon as well. I was just thinking about tomato sauce earlier how I prefer lemon over vinegar in my tomato products. It don't mean a thing if it ain't got that zing. Mmm. Great video I need one of those pineapple gadgets.

    You are so adorable! I enjoy watching you do anything, you are so sweet. I am 63 years young and I use to help my Daddy can along time ago. He loved growing things and canning them for his family. I am 1 of 8 children, so I guess this may of been out of need, lol. But you got me wanting to start doing it again.     I always just used a butter knife to get the air out of my jars when canning. I never knew you could can pineapple though or not use sugar. My how the times have changed us into the correct ways to see things when it comes to living a clean life.

    Hello....i am a new subscriber and I came across this wonderful perfect HOW TO for canning pineapple. Your video was fun and entertaining too. The NO FRILLS way of canning is great....people were always scared it seems to can their own food....but you have shown that there is NO FEAR and it's easy. I've been canning since I was about 8 yrs old, watching my Mom in the kitchen after bringing in vegies / fruits from our garden years ago in the 50's. I just lost my Mom a month ago today, June 22, and this is such a WARM WONDERFUL REMINDER of days gone by, when she and I would can food and have so much fun. She was 9 shy of her 96th birthday, July 1st. I have been BLESSED being the youngest of 9 children, and I had my Mom for 12 days over 70 yrs.
    Thanks so much for this...I plan to watch many many more of your videos.

    Great video, I 💜💜💜 pineapple.
    Being in my 60's and taking a MFP classes (Master Food Presser) in the pasted, it's my understanding is that you shouldn't tip your jars when removing them from the boil bath or pressure canner, that little bit of water will evaporate off your lids. By tipping them may compromise your jar seal.

    I LOVE canning pineapple and making pineapple jelly, but I also save some of my pineapple cores and make pineapple vinegar. It is so good. I use a little mother from my apple cider vinegar. Thank you so much for this great video. Wonderful job!

    I think the lemon does something to the fruit. I know with jelly it makes it clear. There is a reason to use it. Thanks for sharing.

      It keeps stuff from getting darker in the jars it's a little more acid so it slows down oxidation in your fruits etc.

    For those who enjoy mixed drinks, one could place ice cubes and their favorite spirit in the pineapple after it has been cored. It still has juices in it. Excellent idea.

      We eat at a Mexican restaurant that uses the cored pineapples to serve drinks from their bar....not sure which drink they use it for but they look amazing with a little umbrella and all. I keep saying I'm going to get one....one day I will. yummm

    Pineapple is one of my favorites! I would have to restrain myself from not eating them before they can make it to the jars lol. I will be investing in one of those pineapple corers and canning some! Thank you for sharing!

    My dad would have thoroughly enjoyed this presentation ,,, he used to do some canning on occasion ,mostly jams , well into his mid 80s ,, this would have really been one he would have tried. Thank you for a very nice , clear, precise demonstration ,, besides that , it was just plain fun to watch ... good ol , down home style cooking ...

    Hi, I just love watching your channel. Today I decided to try my hand at this canning technique/recipe. I just removed my jars from the water. The rings were quite loose. I hope this doesn't cause a problem with the seal🤔Thanks for producing great content. God Bless❣

    When you core those, it might be easier to get it out if you slice down the side. I've always cut off the bottom along with the top before, but I like your way better. Maybe use a tea kettle for your boiling water.👍

    Put a hole in thee bottom of the pineapple before you start the coring and it will pull out easier.

    If you put the cut off tops in a bowl with water (1 per), put in clean water every other day & within a couple weeks they'll start rooting & you can plant them in a large pot (1per) & grow your own pineapple that will reproduce every year & put off 2 per plant the 2nd year. So easy to grow & are beautiful plants. You can also grow them in the ground. The 1st way is easy for those who don't have the space for an actual ground garden & thankfully is becoming more popular!! We have to know how to grow our own food which unfortunately is becoming more important than ever. Thank you for all your wonderful video's. God Bless

    My grandma had a storm cellar that was filled with her canned foods. It was always cool,underground& dark. Shelves lined on the inside with the canned foods & was so pretty & colorful.

      How did you slice them for dehydrating? And did you have to put anything on it like that Fruit stuff to keep it from darkening? (Can't think of the name of the stuff.) Thank you for any advice!!

    i like your channel. i happen to see the snake videos of you shopping and your husband killing those two snakes. personally i hate snakes and seeing them damn things hang there gave me the creeping jeebies. snakes are 'sticks that move' on the forest floor. i live in the northeast and most areas are poisonous snake free because colonial times raised pigs and the pigs ate the snakes besides farmers killing them. this is my point. field raising hogs to clean out the snakes. pasture them around your homestead and let them root the darn things out. they will clean out your problem. that and a .410! :)

      She boils them in water to remove the juice to make jelly. They can also be used to make ginger beer.
