My dearest Becky. I am somebody who has suffered from deep depression for years. Most days I am barely able to get out of bed. For the last few years almost every meal I have is from Uber eats or door dash. (Despite me wishing I could cook like I used to) I have gotten so much comfort from your videos. You are so inspiring and encouraging. This past weekend I was very gentle with myself and wanted to make myself something lovely to get through this hard week so I made a batch of your pumpkin spice creamer for my coffee. Then I had extra pumpkin so I baked a batch of pumpkin spice granola. I noticed I had some peaches and plums that needed to be eaten so I cooked some compote to add to yogurt which I top with the granola. I was channeling my inner Becky and went ahead and made an egg bake with peppers onion sausage and cheese for breakfast all week. I haven’t done this much for years. It was so enjoyable and kept thinking of you saying “I’m thanking my previous self’s efforts” I just wanted you to know how much your videos have helped me and gently encouraged me to prepare delicious things for myself. You truly do make a difference in people’s lives and I wanted to thank you, from the bottom of my heart. ❤️🩹

I am not, my english is not that great anymore. At least written, I can understand and read almost everything.
I know Becky was homeschooled, maybe that plays into it? I see with my homeschooled kids that they just don’t have such a need to appeal to their peers. I think being at home allows people to grow fully into who God intended. I don’t mean any disrespect to teachers or public schoolers, I myself was public schooled and many people I love are teachers in public school.
@@Bex-rg8pj yes, each situation is individual. There is no one right answer. I think our society emphasizes academics over social IQ and character. I appreciate the flexibility I have with homeschooling because it allows me to raise my kids with lots of adult interaction and a focus on their character formation over academics. I also feel blessed to know them so well because we spend so much time together. 😁

These are the kind of recipes that made me buy a pressure canner and incentivized me to learn. Since we are nearly empty-nesters, it is so nice for hubby and me to be able to open a jar and have a meal that normally you would cook in bulk... and it tastes so good! I love the idea of doing multiple recipes per canning session!

I love that you are doing videos about pressure canning. I inherited my mom's old pressure canner and was too scared to use it! I went and got it checked out, and it is working beautifully. I successfully did tomato soup, and now want to branch out. Thanks for all you do and share, Becky!

I know you like the forjar lids but I’ve had many failures with them. So bad the lids buckled never in all my years of canning have I had that. I started using Superb I get from Azure and I have to say they are the best lids I’ve ever used. A++
Hello Becky and Renee, how nice to have you both together again. I was looking forward to this. I can soup and stews and they been fine. water caned. It just has to be canned at 100 Celsius for 2 hours at least. I have never had any problrms. Love to can barley soup and I gift it to my friend. Those meals all sound great and I am trying the one with salsa verde. This year I had enough tomatios 🙂 to make Salsa verde.
Yay!!! I was so looking forward to this video. You have to give beef in wine sauce a try! I found it in a Ball Canning book. All I do is crack open a jar and serve either with egg noodles or mashed potatoes. It quickly turned into a favorite quick meal around here.

Your mother in law is great at explaining about pressure canning. You all need to do more of this!
It was great seeing Renee in the kitchen with you. She has such a calm voice and is a joy to watch. I love keeping canned meals in a jar on the shelf. As someone who has health issues and not always up to cooking "real" meals, they come in handy. Just like keeping freezer meals. We're still eating homemade and cooked meals.
I always check my rims for knicks BEFORE I start filling and again as I'm wiping the rims. Any jar I find with a knick or flaw I apply a couple coats of dishwasher safe Mod Podge so that I know not to use it for canning but I can still use it for something else...like storing spices.

I love this! I live alone and always end up making waaay too much. I grew up cooking for a big family so all my recipes are for large amounts. This is a great way for me to use my recipes and not have so much food waste.

I would highly encourage you to watch Rosered Homestead regarding how electric pressure canners, depending on the viscosity of the contents, aren’t in the “kill zone” long enough to kill all the bad stuff. I’m sorry I don’t know how to link it or the exact name of the video but she was a professor and it’s a highly valuable lesson.
Love Rose Red Homestead! The biggest problem she had was ground beef pasta sauce. I assume chili could also be problematic. I updated my Ball book with her recommendations. With bigger chunks, these should be ok.

For the salsa verde, you only put 1/2 tsp to the 3rd jar

My stove is not suitable for pressure canning, so my hubby bought me an electric pressure canner for my birthday. Game changer!! It only does a few jars at a time, but it is basically foolproof. Highly recommend going the electric route if you're nervous. I've put up 40 jars so far and haven't had any failures.
I am also typically an "ingredient" canner, I just think it gives me more versatility on "the day of". But I think I'll try a couple of these, because as we go into fall, it will be really nice to have some chicken and beef soups all ready to go! I've heard that using bay in canning can make it way too strong, so will likely omit that for now.
I made the chicken and vegetables. The chicken pieces all stuck together in the bottom of the jar and the poultry seasoning stuck to the chicken. It was okay, but next time I will mix all of the ingredients in a big pan and then fill the jars. I would also use half the poultry seasoning. It overpowered some of the dishes that I made. Maybe just use a little sage and thyme.

At the end of the day it’s about feeding your family with the best food you can possibly provide. Homemade, homegrown is always the best in my opinion.

I have enjoyed this video as much as any you have shared. My freezer is so full and even though I have a generator I still fear loosing meat. I just ordered a Nesco electric canner.
