How To Make Pine Cone Syrup - Mugolio -The Cough syrup you can pour over Pancakes!

- Make Pine Cone Syrup with this easy Mugolio recipe! Pine cone syrup is a delicious and healthy syrup you can pour over pancakes, waffles, or ice cream for a unique and sweet flavor. This syrup is great for coughs and colds, and it's a great addition to your emergency medicine kit.
Here is how I make it:
2 Cups Green young Pine Cones
2-4 Cups of Organic Dark Brown Sugar
(Wear gloves if you don't want sappy hands.)
Dice up pine cones into 1/4 inch thick slices. Toss with the Brown Sugar and spoon into jar. (Fill completely and expect it to decrease in volume as it steeps). Set in a cool, dark place for at least 1 full month, or up to 1 year.
In the first week, let to lid be loose, or uncap the jar periodically to let the fermentation pressure escape. (Some people use an actual fermentation lid.) After this month has passed, empty all contents into a large saucepan and heat slowly over low heat. Stir and turn periodically until all remaining sugar granules are dissolved.
Pour into small (I use 4oz) jars that have been sterilized, screw lids on tight, and set upside down on a cloth until they return to room temperature. Store in a cool, dark cupboard or pantry until you give as gifts or devour. :) (Today I drizzled it over garlic seasoned pork loin. AMAZING!)
I want to list the kinds of trees I have collected that have been used to make delicious Pine Cone Syrup. However, please do your own research and make at your own risk. [It’s important to note that according to the National Library of Medicine, the Ponderosa Pine (Pinus ponderosa), Lodgepole pine (Pinus contorta), and common juniper (Juniperus communis) needles contain high levels of isocupressic acid that has been identified as the abortifacient in cattle and sheep. Because of this, I would use some caution with these pine cones. Also, Common Yew is poisonous.]
With that out of the way, these all have various (delicious) flavor nuances!
Mugo Pine (Pinus mugo)
Austrian or Black Pine (Pinus nigra)
Piñon Pine (Pinus edulis)
Scots pine, Pinus sylvestris
Ponderosa pine, Pinus ponderosa
Balsam Fir (Abies balsamea)
Siberian Pine
White Spruce
Blue spruce (Picea pungens)
Norway Spruce
Cedar (Thuja occidentalis)

A terrible storm knocked down a huge pine tree here in east Texas a couple of months ago. I had just learned about Mugolio and took the opportunity to harvest all the small green cones. My batch is setting up nicely! I'm about 6 weeks out. Thanks for the video clarification!

I’m back to update you on my Mugolio following your recipe...
It’s delicious! I used a large pickle jar to collect and mix my pine cones with the brown sugar. I let it sit for 45 days and finished processing it this evening. Initially (45 days ago) I thought I’d have a lot of syrup. I only netted 24 oz but it is delicious. Next year I’ll increase my batch so that I can give some away. Lol… I’m keeping this batch for myself.

My family (in Romania) makes the syrup and sends it to us sometimes. We use it mostly for cough. But also mixed with some mineral water (or the soda stream) to make a yummy drink out of it.
I will have to ask about the in ground storage, but I wouldn’t be surprised it was something our grandparents did. Thank for this.
Mix it with some booze and have a good drink!

It looks like the cooking stage would be a good place to use a double boiler to protect from the direct heat of the stove.

I learned about flour mills from you many years ago, and I finally got one nine months ago. What a difference in my digestive health since I starting baking with fresh milled flour, and get the whole goodness of the grain.
Just a word of caution: pine needle tea is not recommended for pregnant women because it can cause miscarriage. Might be a good idea to avoid any consumption of pine if pregnant, just to be safe. Thank you for the video! God bless!

I had to come back here and let you know that I waited ALL winter last year until early spring here in Wisconsin to make this recipe. I started it in June 2024 and let it sit in my pantry until today, one month later. Oh, my stars this is amazing! I now wish I had made more!!! Next early spring, I am harvesting more to make more and will let it sit for 6 months to taste the difference. My neighbor loves it too. What a wonderful taste and it's thick like honey. In Estonia we use spruce new growth same way. You pick the young green new growths in spring time and place them in jar with sugar. It gives nice clear syrup
The greens are used in salads as well. They are really soft and taste good. Some remove the spikes. Or you can just nibble them when taking a walk in forest. Spring vitamins :)
I am 71 and I wish I found this in the spring! We have a lot of pine trees but the cones are all squirrel ready now, but come spring...I'll be out there getting the green pinecones!! Great video!!! The heat breaks down vitamins, but allegedly so does metal. I raised my children in the 80s on homemade baby food, and was told by doctors not to grate fruits with metal and instead use plastic graters or glass, since when the fruit comes in contact with metal, it degrades the vitamins. It's also better to hand-cut vegetables (when you can) like spinach rather than cut it with metallic utensils, because of this. I knew this from my father also. I don't know if it's true or a wives tale, but I still practice this. I also don't stir fizzy Vitamin C with a metal spoon.
I wonder how candy like the cone bits would be if one dehydrated them after processing the syrup? Crunchy? Sweet? Just a thought to " waste not, want not". BTW, wonderful video! Thank you, Christa!
This is my second reply to this video this evening. In my first reply I mentioned that I’d need to wait till next spring to harvest cones. I decided to check tonight and to my surprise and delight the cones on my tree are perfect! I’ll be starting my batch in the morning. Again, thank you so much for all of the inspiration. Also, any suggestions that you have to remove the sap from my hands would be greatly appreciated. 😀❤️
How wonderful! I am glad you looked and excited you'll be making some! I really just washed mine off with good dish detergent. Some people use Goop or olive oil first, then dish soap. You could also just wear rubber gloves as some do. Let us know how your batch turns out!

Coconut oil takes it right off. I keep a "chunk" in the fridge. Just rub it on. We live amongst the pinon and get the sap on ourselves often!

Unfortunately, my pine trees lowest branches are 40-80ft up. I will have to start letting some of the saplings grow so that I can reach the cones.
You might not be able to use Lodge pole pine. You can't use the needles for tea. This look so fantastic. Thanks!

What a great recipe! I had no idea pine cones had vitamin C. I did know the pioneers had scurvy and were told by Brigham Young to not peel their potatoes to cure it.
