I just discovered blending strawberries for jam. The grandkids were always complaining about all the fruit floating to the top. Even shaking after the jars sealed but we’re still liquid. Blending makes a wonderful jam!
I grew you canning, I have not canned much since I married. We have celebrated out 38th Anniversary. The past several years i have only canned tomatoes and peaches.. I have so much more to learn. Hey Leisa! Thanks for this great video!! There is NOTHING like fresh farm grown Michigan Strawberries. Ours are the best. Made 23 pints of Freezer Jam yesterday (husband thinks he would die if we had store bought. Only wants strawberry freezer jam. If we divorced, he would fight for custody of the jam. Today is strawberry pie filling and strawberry sauce day. Thanks for the idea for the syrup. I've got 24 quarts all together, so I can make a ton of the syrup!
Just a note: make sure you use a heavy bottom pot for strawberry jam. You don’t want your jam scorching. This happened to me but I was still able to use it…I just avoided scraping the bottom of the pot. Lost a bit of jam, but it still worked.
Just finished my strawberry syrup! I ended up with 9 half pints (we did a LOT of berries). So happy to have this on my shelf. My youngest tried it and said "yay, now I don't have to go to IHOP anymore!" Thanks again
Pie filling - time 1 = alot of anxiety about the right time etc, time 2 = confidence, I got this process, exceptions are when the filling burps out scalding hot filling on your skin and across the kitchen (no need to express the calamity associated with that) :) I do like making it and the absolute requirement is to be attentive during the cooking process. I made strawberry jam, but ran the puree though a fine mesh strainer, twice, to remove as many seeds as possible. My father in-law can't have produce with small seeds, because of a health condition he handed down to his daughter and one son, thankfully, not my husband! It turned out great, and I used low sugar pectin, and organic cane sugar, so I feel it's better for those eating it. I made cranberry/jalapeno jam, using a can of whole berry cranberry sauce, cranberry juice, and about 5 jalapeno slices from a jar. I did the same thing, using canned peaches and jalapeno slices. They both made delicious spiced jams, to eat on crackers, with green onion and chive cream cheese. It makes delicious treats for watching TV with my husband, or to set out for family gatherings.
I did a bunch of syrups using 1/2 of the recommended Pamoma's pectin for a jam recipe. It worked out great! It was low sugar and just as sweet as I wanted it while still having a thickness to it.
im knee deep in them right now so far we did strawberry jam strawberry pie filling frozen plain frozen with sugar and strawberry rhubarb pie filling today im doing strawberry shortcakes and that will round out my strawberry season we are good till next june now one nice thing about berries they keep on giving every couple years i throw a few new plants i never stop getting berries then
Your recipe is almost identical to my family recipe, but I never thought about canning the filling! The difference is we also add (for 1 pie) a couple of heaping tablespoons of strawberry jello for extra yummy flavor and color. I wonder if that could be used in your recipe? Thanks for the ideas!

2028 ft elevation. canned strawberries for 35 min in my steam canner. I left at least 1 1/4 " of space. I sliced my strawberries, blanched them like you did. only have of my jars stayed sealed. I had only a bit of overflow but they are all at the top of the jars. Lots of bubbles in the jars that stayed seal and yes, I used my poker...LOL. Haha, 6 bottle of strawberry filling...two eaten by the guys already...just made crisps. Lazy me but it's pie day this weekend(the unsealed ones are in the fridge)
I was gifted 16 QUARTS!! I made 17 half pints of low sugar jam, freeze dried 5 quarts and froze the rest. 🍓 I’ve had both strawberry and strawberry rhubarb pie! So good! I whiz my berries up in the blender too. 🤷♀️

My mother-in-law makes a fresh strawberry pie that I bet could be adapted with home canned strawberry pie filling. In her recipe, you basically make a strawberry pie filling without as many strawberries (glaze), and then you put fresh strawberries in a pre-baked pie crust into which you have spread about 3 ounces of softened cream cheese, then pour the strawberry glaze over the strawberries and refrigerate until the pie sets up. Serve with whipped cream. It's delicious! I bet you could just use strawberry pie filling and do the rest the same. She makes a similar fresh blueberry pie - also delicious, and good for you because it's mostly raw blueberries.
I just made pineapple jalapeno preserves with canned pineapple and Mt. Olive sliced jalapenos! Best preserve I've ever made! Sweet heat! Spooned over baked boneless chicken thighs topped with coconut!

Strawberry and Raspberry jam are my absolute favorites and we go through those the most, so definitely making those jams this year! Oh, and I am definitely making strawberry jalapeño jam this year and strawberry syrup and strawberry tops vinegar!

My grandmother was a huge jam maker. She would bake some loaves of bread and every kid got some bread and a small bowl of foam. It was heaven ❤🍓
