    Hi Sweet Friends, Today, I am sharing a NO SUGAR Strawberry Jam Recipe with Step by Step Water Bath Canning Tutorial. And yes, you can use absolutely no sugar in this jam…or you can add any “alternative” sweetener you like. And don’t worry if you just want to pop your jam in the fridge.       Hi Ana, Definitely. If you use Stevia, you will want to add 1/4 to 1/2 teaspoon of the liquid Stevia.

    I know the tops of the strawberries are still good to use and still nutritious but if you throw them out onto your lawn next spring you will have strawberries come up. I do this all the time and my backyard is full of them. They are not as big as the strawberries you can get in the stores but its a fun little project for the kids

    Sorry, very long comment: Mary darling, thank ever so kindly for this video and all of your videos. You are such a gracious blessing to all of us. I always learn so much from you. We all have our own ways. Many years ago I was taught to can by both my Maternal Grandmother, in Massachusetts, and some years later by a 96 year old woman named Miss Dewey in California. Nana was born in 1906; Miss Dewey, 1873. Each had canned from the time they were girls. Coincidentally, each cautioned me never to use a butter knife or other metal instrument to de-bubble. They stated that sometimes just lightly touching or barely tapping the inside of the jar, especially on the bottom, can cause a jar to crack, break, or burst in the canner or while cooling. I have followed thier tips for more than 50 years of canning on my own, and have never had a jar crack, break, or burst. Both used a slim, flat, wooden stick with rounded edges and bottom for de-bubbling. It was reserved only for canning. Both sterilized it before and after each batch by soaking it in several changes of almost boiling water poured into a canning jar with a small splash of distilled vinegar, (white vinegar), and a pinch of salt. The last soak was just plain very hot boiled water. Each also prepared thier jars and all utensils alike. After numerous rinses to remove all traces of dish soap or detergent, they rinsed their utensils, rings, and jars with water and a splash of distilled vinegar; followed with a good final rinse of plain hot boiled water. Each stated that the water with vinegar rinse helped remove every last trace of possible grease and went a long way toward protecting against spoilage. Each used pieces of sterilized, plain natural cotton muslin dipped into boiled water with distilled vinegar to clean the top rims of their jars before placing the rings.

    It never ceases to amaze me how you go out of your way to include all types of people's needs on your channel. I am amazed because , for example," sugar free" is not what your channel is about and here you are offering a NO SUGAR alternative for canning jam for those of us in need of that. I want to thank you for that because it takes a lot of work to just do your "normal" work for your channel. It is enough to just focus on nutrition rich foods which are the focus of your channel. Also, when people don't have a piece of equipment for one reason or another you constantly give us alternative things to do to achieve the same results that you do but without the "perfect" equipment for the job at hand.. My glucose numbers aren't the greatest in the world and I am always looking for ways to cut down my sugar intake. This was a great alternative to full sugar strawberry jam (my fave btw). I don't always eat the way that I am supposed to as far as that is concerned, but today, with this recipe, I have NO MORE EXCUSES!!😂 That electric water bath canner is NOW on my birthday wish list !!. Fingers crossed for that gift!! ❤️

      Strawberries have tons of natural sugar (fructose) and should only be consumed in moderation by diabetics.

    I am new to canning and especially interested in healthy, no or low sugar recipes. Your videos gave me ALL the confidence to make apple butter, blueberry vanilla jam, and orange marmalade over the weekend. In addition, while doing all my peeling, chopping, etc. I binge watched so many of your videos... and I have fallen in love with your whole family !! I'm 57 years old and dyslexic and ADHD. My dyslexia didn't get diagnosed until middle school, and by then I hated school and was miserable, and a very angry adolescent. Your journey with your son melted my heart, and I'm so impressed with the relationship you have with him and your husband :)

    Well MARY A FIRST for me... No sugar jam.... I love strawberry and raspberry jam... And you mentioned strawberry vinegar... I remember my granny making raspberry vinegar.. Years, ago she would always give it me as a child if I had a sore throat... Worked a treat... THANKYOU so much for the canning method as well.. Mind Jam never lasts long enough in my house.To need canning..... . I always make brandy marmalade at Christmas for everyone that is my signature preserve and there is so much brandy in it it keeps with out any refrigeration or canning. 😂😂😂Take care SWEET FRIEND💋

IM KIDDING seriously it's just an orange marmalade recipe you can find lots on line Probably MARY Has a recipe) and I do USE quite a bit of pectin so that it is quite stiffer than normal and then I add a LOT of BRANDY YOU KIND OF HAVE TO JUDGE LIQUID FOR BRANDY TO YOUR TASTE..AND CONSISTENCY .... EVERYONE LOVES IT FOR A STOCKING FILLER AT CHRISTMAS TIME AND MY HUSBAND LIKES IT ALL YEAR ROUND. 🤣🤣🤣💋♥️👍

    What an amazing tutorial. I was trying to find a jam recipe / technique because I’ll be making some jams for a person with diabetes and it was important to get good instructions. I’ve made traditional jams with lots of sugar but never low or no sugar ones. Now I feel confident to make them . Thank you sooooo much ! Can’t wait to check your other content.

      @@MarysNest It was a sugared jam. I think my issue was I used frozen strawberries, and did a double batch at one time. I haven't tried again BUT I am going to try your recipe for sure! My mango jam turned out perfect!

    Mary, I love your shows. A suggestion to crush the strawberries or any other fruit to make jam, I use a potato masher for this purpose and it works very well. Just put the strawberries one layer deep in a 9x9 glass dish and mash them as much or as little as you want.

      Just to clarify: No sugar in jams means that althought the jams will store for similar periods of time as sugared jams, once opened, the jam will go off faster, is that correct?

    I am excited to try this. I have not made jam for years cause I dont like jam super sweet and all the recipes call for 7-8 cups for like 2 quarts. I cant wait to try this. I froze my strawberries I hope this won't cause a problem. Thawing them and will make tomorrow. Thx again.

    Thank you for acknowledging a different way to make the jam for keto and strict sugar free diets! So considerate! I haven't canned jam since I've become keto in 2017 . Store bought sugar free jams are so terrible tasting and full of chemicals they aren't worth it, and I found a sugar free jam on Amazon that has stevia--its nine dollars a pint! Really appreciate this vid.

    I think the vinegar is more for the sterilization portion so that you do not get calcium on the lids/rim of the jar that could potentially break the seal. First time doing it without vinegar I noticed significant residue, but we have very hard water. Also a very nice tip with making your own vinegar - no waste is so much better

    I love that funnel and your canning utensils!!! We are doing this with none of that fancy stuff. Our house fire took everything we had aquired over the years 😭. With a family of 6 it's hard to get back on our feet

    Hi .. Mary 😀.. me again !
    I used some malta oranges as a source of pectin to a mixture of cherries , some dried craneberries and blue berries . No added sugars or added pectin . Stored it in the fridge later ..

    First, thanks for explaining the "new" rules and showing some of your "new" tools. I am going to purchase. My mom open kettle canned Tomatoes and my mom-in-law always did it with a Pressure Cooker. My Mom-In-Law started canning my tomatoes because she was in insistent that her son was going to die from food poisoning...(to which my mom laughed because, well, prior to pressure cookers this was the way it was done & my Mom was terrified of Pressure Cookers...(her grandma had one explode on her years ago, my mom was 8-9 yrs old when this happened. My mom's grandma was burned when that happened, but didn't require hospitalization, but nonetheless it still was a horrible memory for my mom...and she refused to use a Pressure Cooker...and I myself have never used one either ALTHOUGH I did purchase one of those Insta-Pots recently but have yet to use it) Anyway, my Mom-in-Law canned our tomatoes until the kid grew up and left home. (i don't can tomatoes any more...for just the two of us).

      When I was pressure canning something (can't remember what) a few years ago, the over pressure plug burst out of its seating and I had hot water raining down in my kitchen from where the steam had hit the ceiling! (I'm guessing that I had the pot going at too hard of a boil.)
      Couldn't use that pot again until I got a new plug because the eruption weakened the plug and it couldn't be used safely again. :/ I will say, though, that I have never had the weighted gauge blow off, so that is a good thing. :)

    A pastry blender works wonderfully too to crush the berries. I also use it to make egg salad.
