Your video brought back a learning experience I had as a newlywed "town" girl who married a man raised on a working farm. My MIL gave me some Strawberries to make jam with instructions to cook it until it was done. This was the way that PA Dutch women give instructions... short and sweet😊. The next day my husband went to work and I started my first preserving experience. 8 hrs later when my husband came home, I was jarring my jam. Two weeks later, I opened a jar and it was like cement. 😢 I couldn't get a knife into it. I was never told about sheeting or length of time to cook, just till it "gets done. " My MIL and I laughed about that for over 40 years. I had the best mother in law a gal could ever have!!

Another way of protecting your jars on the bottom of the pot is to put old jar rings facedown covering the bottom of the pot. So say a pot the size you’re working with you put 10 to 15 rings down in the pot as though you were actually putting them on the jar, so the threads down. I’ve done it both ways with the rings, and with a towel both work. I also very seldom time when I’m processing. Meaning, I don’t set a timer. I make sure there’s a rolling boil. And it’s done when I come back to it. I’ve never had an issue. Shocker I know I don’t follow the rules. Oh what are we to do? Not following government rule? Lol when they start doing my canning for me, they can tell me what to do. 😮😊

I just recently checked my local Walmart for something to use as a rack in a pot I already own, but didn’t find anything. I’ve watched 2 of your videos where you just used a towel, and now I think I can give canning a try without buying a thing! I have some random jars, a pot, a towel, and probably some blueberries in my freezer! Can’t wait to try this! I have been making preserves for a long time and I never “can” it. All I do is have hot jars and hot berries. Put it in jars with lids and rings. Then turn jars upside down on cloth for about 5 minutes then turn right side up. Leave them sett until cold and check the seals. I have blackberry preserves I made in 2014 that is still sealed and absolutely wonderful.

We don't come to your home and expect it to be spotless. We all have lives and sometimes you have to set a priority for the day.
I haven't used pectin in years and depending on the fruit I'll only use 1/3 to 1/2 the sugar called for. If it's too runny, hey just call it syrup 😂

I love your videos. You don't waste a lot of time but give enough time to keep up with also. I have a lot of the same tools you use. Keep up the great work.

    I've been experimenting.
I found pectin isn't necessary regardless of the fruit. Evaporate the jam down like making maple syrup. After a few times you'll get used to the consistency and know when it's thick enough without testing it.
I made apple jelly with just apples. No sugar. No pectin.

Can I use even less sugar. I don’t like really sweet stuff and I try not to give my kids to much either
Love your honesty and channel. Happy Easter and blessings to you and your family

Hi Daphne, you are such a beautiful pup.
I just planted our first blueberries, and now I have a recipe for them (when they give us enough fruit in a few years).
Hi to you husband too (do I remember that his name is Todd? or did I just make that up?)
Never be embarrassed by your command of the language. I think that what you say is much more important than how you word it.
Thank you for sharing the fab videos, ideas and information that you so selflessly post xxx

Loved this video 😊 I didn't like that Sure Gel or something like it had to be used. But now I know I don't have to!

I never used pectin for making jam. Just cook down the fruit, add sugar, cook and then do the test on the little plate. That even didn't go in the fridge. Also I never canned jam... we used to jar it, let it cool enough and melt paraffine and poor that on the jam to seal it. When everything was set just screw a lid on and put it in storage. For jam some people bought matching jars with the cute red/white blocked lids but we just used pickle pots or mayonnaise pots and whatever we had on hand. Sometimes just a jar and paraffine and then cover it with a cute cloth or plastic wrap and a ribbon.
