Chicken Apple Salad Sandwiches (Keto friendly version too!)

  • Ingredients:
    1 boneless, skinless chicken breast
    1 cup chicken broth
    1 tbls Italian seasoning
    1 peeled and cored Granny Smith apple, cubed
    2 tbls mayonaise
    2 tbls prepared ranch dressing mix
    3 scallions, diced (both white and green parts)
    1/4 lemon
    1/2 tbls dried tarragon
    2 foccacia squares or brioche buns (Or whatever you like your sandwiches on!)
    Slice the chicken breast in half along the equator, to make two thinner breasts
    Poach the chicken in a large skillet, on med-high in one cup of chicken broth for 7-8 minutes, then flip. Cook for 5-6 minutes more or until the internal temperature reads 165 degrees
    Remove from pan and rest for about 10 minutes
    Season with Italian seasoning and cut into cubes/bite size pieces. Chill chicken.
    When chilled add the diced apple.
    Prepare the dressing.
    In a separate bowl combine the mayo, ranch dressing, scallions, lemon, tarragon, salt and pepper.
    Add to the chicken and apples
    Stir to combine Chill.
    Prepare the sandwich
    Toast your bread, top with chicken salad mixture, top with romaine lettuce and serve! Serve with chips or grapes. ENJOY!!
    Keto version:
    Place chicken salad in lettuce cups. Serve with grapes or your choice of fruit.
