I asked for your favorite soups and you did not disappoint. These were all so delicious. I received several more from you guys, let me know if you are interested in seeing more. These are absolutely some of the best soups for this cold season. I love soup on a chilly day.
What's included in this Favorite Soups video:
Tortellini Soup (Recipe Below)
Susan's Ground Beef and Barley (recipe below)

Tortellini Soup:
1 lb Italian Sausage
1 diced yellow onion
2 peeled and thinly sliced carrots
2 minced garlic cloves
1 TBSP Italian seasoning
2 TBSP flour
6 Cups Chicken Broth
1 Pk Cheese Tortellini
1 cup Cream
6 cups baby spinach
s/p to taste
*Cook sausage over medium heat. Add onion and carrots and cook until soft. Add garlic and Italian Seasoning and cook 1 min.
Add flour and cook 30 seconds.
Add broth and bring to a boil.
Add tortellini and cream and cook until al dente. Add in spinach and let wilt. Season with S/P as needed. Serve with crusty bread.
Susan's Beef and Barley Soup:
1½ lbs lean ground beef
1 small white onion, diced
3 stalks celery, diced small
1 large carrot, diced small
4 cloves garlic, finely diced or crushed
2 boxes beef stock
1 28 oz crushed tomatoes
2 bay leaves
1 cup Quick Cooking Barley
Salt and pepper to taste
Crushed red pepper flakes if desired
1. Brown ground beef in large pot. Salt and pepper beef. Drain.
2. Add onion, celery, carrot, garlic to the hot beef in the pan and cook for 5 minutes on medium
low heat, to soften vegetables.
3. Add 2 boxes beef stock, entire can of crushed tomatoes and bay leaves. Add red pepper flakes if
desired.
4. Bring to a boil, reduce heat, cover, simmer for 10 minutes on low.
5. Add barley. Continue to simmer soup for 12 minutes.
6. Taste for seasoning and adjust.
7. Remove bay leaves and discard.
8. Soup/stew is ready. Enjoy!

It was purely by accident that I discovered adding the can of crushed tomatoes to the beef broth makes the soup incredibly luscious. The crushed tomatoes kind of melt in with the other ingredients.
You must live in the UP to have to travel 1hr. for a big store… lol… me too

@Evelyn Warner We are in Central Lake. We live kind of equidistant between Traverse City, Gaylord and Petoskey. While it's not all that many miles to get to each of those cities, but it's all country roads and takes about an hour one way to any one of them. 🤣

You need to get the Green Pan slow cooker! You can sauté and brown all in the slow cooker so no extra dishes. I love mine so much

I’m glad to see you use jarred garlic! I felt I was getting lazy, not using fresh.
You know what's interesting about that, I watched Gordon Ramsay say one time that he loves using jarred garlic. If it's good enough for him, it's good enough for me. 😁😁

I’m ready to try all of these! I love your ‘theme’ for your show of making recipes that people send in. One thing I think of every time someone puts bay leaves in is that no one seems to know why and what they are for. I looked them up and they really are important! Would you look them up and explain to people when you use them?

First, thank you for the verse and spreading the word. I am fixing the first recipe this week and will try the other two in coming days. YES, do more soup recipes. That is all I want to eat. Could you cook the veggies on saute in the Instant Pot and then turn it to slow cook for everything else? I think that would be yummy and anything with heavy cream, I am on board, lol. xoxTX

Sooo coincidental, I found a recipe for tortellini soup, on Pinterest, just this week. I made it and it was very good. The only difference was, the recipe didn’t call for carrots and it had a can of diced tomatoes and a bit of heavy cream. I think the carrots would be great and, to be honest, I wouldn’t miss the tomatoes. Yum🤗

does anybody know if the barley will soak up the leftover liquid like pasta or rice would?
Hi. That's my beef barley soup recipe. I'm so excited that she included it!
The barley does absorb a little more liquid when the soup is stored in the refrigerator, but it keeps its original texture without becoming mushy. So, the soup thickens up a little more than when it was originally served.

So many of your recipes look delicious and I would love to continue watching your videos but I can't stand the music and it's such a distraction to me.
