How to Make Classic Italian Meatballs - The Hidden Ingredients

  • Classic Italian Meatballs. A quick and easy traditional Italian recipe.
    Meatballs ingredients, to make 30 approximately:
    Note: To ensure the eggs are fresh dip them in a deep bowl filled with water and if they float then they are old! Fresh eggs should sit at the bottom.
    400 gr of beef mince
    100 gr of parmesan cheese
    100 gr of bread crumbs
    1 clove of Garlic
    2 eggs
    1/2 tbs of salt
    a bunch of parsley
    a pinch of black pepper
    Happy meatballs making!!!!

    I'm a German/Irish woman and I was upset yesterday and I did not pre heat the oven properly and mine did not come out as good as last week, so I understand you saying don't upset an Italian woman! LOL!!! They still came out edible and my husband liked them. I'm just VERY fussy!

    Authentic Italian meatballs are made different then that. We use a mix of ground beef, veal and pork. And we soak our breadcrumbs in milk for the. mixture. We also put a bit of sauce in them. The salt, pepper and cheese is on point though.

      It needs spicy Italian sausage(1/2 of beef.. So 1:2 ratio sausage to beef), 1 cup milk per lb of meat( I use almond milk), much more pepper, a pinch of cumin and Italian seasoning, onions finely cut and sauteed for 2 mins before entering mix. Perfect meatballs. Don't settle for dry round hamburgers.

    I do these every Wednesday, exactly like this and they are AMAZING! The golden brown sear on the outside and the soft, moist, tasty on the inside! I make my own tomato sauce too. I make spaghetti and these with the red sauce and WOW! Love it!

    Okay, I have JUST tried my meatballs your way and you know what? THEY ARE AMAZING!!!!!!!!!!!!!!!!!!!!!! AMAZING!!!!!! Nice and fluffy and tasty!!!!! I always do my ingredients like yours but pan cooking nah! The way you do it, you still get that nice brown sear! hahaha I love it! Thank you so much!!!! From now on, I do mine this way!     I just can't thank you enough! When I presented them for dinner, I told my husband, I did half in the pan, like I have been doing and half in the oven like you showed me. The oven ones are SO much better, light and fluffy but so tasty! I followed you method exactly. What gets me is that it is so much easier too! He liked them better too. I have seen some nice recipes on line but I don't have a rondu pan. These cost $300.00. They seem really nice and are made well but I just can't afford that right now. I have Pyrex oven bowls to bake in already so that was no problem! You're a doll! Thank you so much for helping me!!! XXOO

    When I worked at the Italian Restaurant we used pork shoulder, Ground Beef, Oregano, Basil, chopped onion, garlic, Anise, Fennel seed, bread crumbs, grated Parmesan Cheese, Eggs, a little sugar and some spaghetti sauce. Used an ice cream scoop to make the meat balls and baked them in the pizza oven until crusty.

    I put exactly the ingredients that you do. The only difference is, I do mine in a pan with a small bit of light olive oil. I used to put onion but I discovered that was not needed. I use all fresh ingredients too, like you. I use the fresh parsley and the Parmegiano Reggiano. These come out delicious!

    Not so authentic. You need to use pieces of day old bread soaked in milk and pecorino cheese instead of the parmigiano reggiano. the rest of the ingredients you used are correct.

      Hi, NF, what does pecorino taste like, is it similar to the reggiano? The recipe you mention, I've seen someone mention this kind. Please elaborate. I know a lot of people use bread soaked in milk or water and use that instead of dry bread crumbs. I use the crumbs but I put water and let them sit in that until it's a slurry to add moisture. I feel that pan frying can make them a bit dense and I don't like that. They should be light and fluffy. On my oven, I have bake and broil. The broil heat comes from the top, should I use that or the bake? I'm not very experienced in the kitchen.

      Hi Jean. Pecorino cheese is stronger than parmigiano reggiano. It’s a little saltier too. And it adds a great taste to the meatballs. I fry my meatballs like my mother and grandmother did. They’re tastier that way as opposed to baking them in the oven. Because when you fry them they develop a crust of deep flavor. My mother was a great Italian cook. She didn’t have recipes for anything and it all tasted great. She taught me to soak day old Italian bread using just the inside part not the crust in milk. Squeeze the excess milk out once the bread is soften and mix into the meat mixture. This creates really soft meatballs. Let me know if you need more info.

      Jean, using soaked bread in milk will make the meatballs fluffy, light and moist. Breadcrumbs make the meatballs dense.

      You’re welcome Jean. Hope your meatballs turn out better this way. Don’t use too much soaked bread. They’ll get too soft and mushy. Just a handful.

    I haven't tried this recipe yet but I am sure it is fabulous. I just can't get past your bright and super homey and cheery kitchen!!     Not everyone uses pork and veal. I've seen lots of recipes with all beef. I make mine just like hers in that I use ALL the ingredients she uses. I don't want them over done. Mine come out tasty. Tomorrow, I'm gonna try baking with a Pyrex instead of putting them in a tin pan. I did not use spray olive oil too so I'm gonna do what she did with hers. This recipe IS good.
