How to Make Gnocchi the Italian Way- The Pasta Queen

  • Let’s make a classic Italian recipe!
    - Homemade Gnocchi
    The perfect, cute little gnocchi you can use for tons of different delicious recipes!
    Ingredients:
    - 500 gr of russet potatoes
    300 gr of all purpose flour (we use flour zero zero from Italy)
    1 egg
    Pinch of Salt
    Gnocchi board (or a fork if you don’t have one)
    Recipe:
    1. Start with your potatoes pre boiled in salt water.
    2. Pour some of the flour onto a flat hard surface (I use my large wooden cutting board) and scrunch your potatoes into it.
    3. Mix the potatoes in with the flour and make a small volcano shape with the mixture.
    4. Crack your egg into the center of you volcano and add a pinch of salt.
    5. Mix it all together. I like to use a fork to mix the egg and then I continue kneading with my hands to get a good gnocchi dough consistency. (Add more flour if needed to make your gnocchi dough the perfect consistency.)
    Don’t over knead the gnocchi dough, you want it to be dry but not too dry and soft but not sticky
    6. Flour your pasta board and cut the dough into 3 quarters of an inch strips. Then roll them so they are smooth and round.
    7. Cut the rolled dough into one inch pieces (little pillows of love).
    8. Mix them in with the flour on the pasta board so they aren’t sticky.
    9. When you’ve done this with all of the dough, roll the gnocchi with a gnocchi board or even a fork. (This shape helps the gnocchi hold the sauce better.)
    10. Sprinkle some flour in a tray and put all the gnocchi in it. (Make sure they have enough flour covering them so they don’t stick to each other.
    Final tip: have someone gorgeous nearby. It makes it taste better 😂

    you should do a video about italian culture! when you were talking about how italians eat gnocchi on thursday’s because of the meat sauce, and then on friday move onto fish...it was really interesting!

      This tradition is because of the catholic beliefs.
      Jesus was on the cross and died on Friday so it's a sad day (and meat is for good days).
      Hope my English is ok.

    As an Italian, I really appreciate Nadia, her fun style and her way she’s keeping our traditions alive when abroad. The only thing I need to say, despite her cuisine and recipes and really authentic, but sometimes a little bit more “fat” than our (Italian) style of cooking, which has to be healthy and with less fats (less oil, less cheese, limiting the using of heavy creams, etc).
    I have no doubts her dishes are great and much more savory and tasty than the ordinary ones, but I can see them as quite heavy on stomach, especially for an everyday food diary

    We have something similar in Poland.
    We call these 'kopytka' but gnocchi has more finesse shape. ❤️ I love eating both though!!

    I shouls have seen your video last sunday, I made gnocchi and they turned out to be a disaster. I from Argentina, my grandma used to make gnocchi a lot. It's my favourite pasta. The kee is calculating the correct amount of flour.

    I really want to try to make these, though I'm wondering if potato flour (or rice flour) can be used instead of wheat flour? For a coworker who does have an allergy to gluten, this would be an amazing treat, to bring a pasta bake to work with homemade pasta.

    I've always called it a bench scraper. I love mine and could not live with it, but it never really sounded like a cooking utensil. Spatula of love, on the other hand, sounds like something I want in my kitchen!

    Gnocchi dough always ALWAYS ends up too sticky for me. I’m a good cook and my homemade pasta is great, so it baffles me why I have so much difficulty with gnocchi. 😢
