  • Shrimp Avocado Ceviche is insanely delicious, fresh, and easy to make! This is the perfect BBQ side dish or appetizer that your guests will love! You can make this ahead of time and not have to fuss at all. Just like all traditional and authentic Ceviche recipes, my ceviche is blanched in hot water and then cooked in fresh lime juices!     Ingredients
    1 lbs Raw Shrimp
    1 Lemon
    Water
    5-6 Limes ~ 1 cup
    1 Red Onion
    ¼ Red Pepper
    ¼ Green Pepper
    ¼ cup Cilantro
    1 Avocado
    Salt & Pepper to Taste
    Olive Oil

    Chef Zee, I am pretty new to your channel and all i can say is WOW!!! I love cooking and always looking for great recipes. I love your channel and website because you are so detailed and give the most amazing tips. I want to thank you for sharing your love and passion for food. I haven't yet to make one of your recipes but I will soon one of my first ones that i will be making is this yummy looking Ceviche. My husband loves it but I always intimidated by it, but thanks to you I have all the confidence to make this amazing dish. I do have a question for you and I hope you can help me out.
    AVOCADOS! they going to be the death of me because i never choose the right one. I either pick them to green and hard or to ripe that when i cut into it, it is black inside. whether I'm choosing one of the tiny ones or the DR big ones i can never pick them right. Please share with me one of your tips on how to pick the best avocado that my family and I can eat the same day. I heard all about the squeeze it and if its soft its ripe enough but for obvious reasons they very dark in the inside a its very mushy. then I pick out a hard one and people have told me to put it in the microwave for a few days until it is ripe. but who has time for all that if i want the avocado the same day. Pleaseeeee help me. I know this may seem like the dumbest question but not to me. This is by far the most annoying thing ever and i need help lol!!!! its embarrassing because I'm over here writing a essay about avocado lol!!

      Girl, no worries! Avocados give everyone a run for their money! I actually filmed a video on how to choose the perfect avocado and never shared it because I lost half of the footage -_- .... Now I'm inspired to refilm it lol. Ok, so first things first, not all avocados are created equally lol and recently (at least in my opinion) a lot of them are just coming up bad smh. Nonetheless, there's a few tricks to picking the perfect avocado.
      Tiny Ones- these tend to be Mexican Avocados. They're creamier and smaller. Great for guac. Easiest way to pick this one is by looking at the color. The skin will turn dark practically black when it's ripe. If you press your thumb gently on it, it should be a little soft but not too soft where it's mush
      The Big Ones-- these are usually labeled as Dominican/Haitian/Florida Avocados. They're my FAVE! These are also bright green in color and don't really darken like the other avocados. You can tell it's ready by pressing your thumb gently against it. It should be a little soft. These won't even soften to mush like the other ones. I personally think these are harder to pick but once you get the hang of it, it becomes second nature. Another trick is to shake it lol If you hear the seed rattling around then it means it's ready. However, this trick doesn't always work. I hope this helps!

    So ur informing me to undercook the shrimp because it will cook in the lime juice?

      Traditionally, people don't poach the shrimp or seafood when making ceviche because the acid in the lime juice will cook the shrimp. I personally like to poach the shrimp in water to ensure that it will fully finish cooking/pickling in the fridge.

    This recipe didn't work for us. The red onion was over powering and the lime was tart. Not sure what we might have done wrong.
