    As a classically trained French Chef and avid elk hunter here in Colorado, I have to say I really liked your video!! I happen to have a elk front shank in my freezer as we speak. I may have to cut it into sections first, however. I am a big fan of getting all the marrow!! Keep doing what you do, buddy!!

    Came here looking for ways to prepare my next season's elk (son, wife, and self are hunters). Liked what I saw here, so I started looking at your other videos.
