- Steve Rinella and Chef Kevin Gillespie are back in the kitchen, this time to work some magic with meat from his New Mexico bull elk. Kevin shows Steve one of his favorite quick dinner fixes, Vietnamese Style Shakin Elk. The two discuss some of the mythology surrounding marinades and brining, plus Steve shows off his prized culinary possession, his citrus juicer.

PLEASE more Asian recipes! Everyone knows how to roast and pan fry- but there is a whole world of flavor that will blow minds between Vietnam, Thailand, Indonesia, India, Japan, China, S. Korea and India. My family and I have been delving deeper into asian dishes- and it's great because so much of it is so different from the western foods.

Enjoying these food related videos. It would have been nice to see how rare the elk cubes were on the inside and hear whether they were tender enough in that dish. On a side note there was an interesting dynamic going on in this video, couldn't put my finger on it.

I have watched hunters cook on meat eater for a long time. It’s funny seeing Steven see a culinarily minded person cook game. Sugar and fat content for restaraunt quality food will look like a lot( because it is a lot) but it’s to get to the desired taste and texture.

Elk hunter, son-in-law to an amazing Cambodian cook, and big fan of Meat Eater and Kevin. I just want to set the record straight, this dish is Cambodian, not really Vietnamese. You might get knifed if you call it Vietnamese in front of the wrong crowd. I'm sure the Vietnamese make it as well, but the name Lok Lak gives it away. That's a Cambodian word if ever there was one.

Vietnamese calls this dish/style Bo Luc Lac. Luc Lac is translated as shake shake. Bo is cow. Shaken beef.

Hunting and fishing are a racket. Nobody can afford to do this stuff for any real means of sustenance. Hunting and fishing have been taken over by the wildlife departments and become another way for the government to make money off us. You have to make good money and have a whole hell of a lot of time on your hands. Just not practical which is a shame.
You can totally get by with hunting/fishing without spending to much. You may have to curb your expectations though. You may not be doing exotic destination hunts, but hunting/fishing can be cheap. In Florida you can buy a 20 dollar hunting license and take 5 whitetails in a season. Hogs have no season and can be taken in alot of places with no hunting license. You can catch bluegill, catfish, etc from the bank with a cane pole and some worms. It doesn't have to be expensive, you just have to put the time in.
I will say one thing that cook is pretty stuck on herself

And here you are stealing plants to eat from the animals. How many animals have died during winter because of that? You are taking land away from the animals where they would like to live.

What happens to all of the life in a forest or field that is plowed over to make way for planting crops? All of the mice, moles, insects, small birds and nest are all killed. They are destroyed, turned over and pushed aside, crushed under the dirt and rocks to make way for the crop to be planted in the farmers field. You cannot avoid impacting other life forms, but you can approach your own life with respect. Animals hunted ethically and treated with respect live out their lives in nature, free and wild. These people aren't hunting for "sheer fun" but to feed themselves and their families, just as the rest of nature has done forever and will continue to do. Just my 2 cents. Cheers.
The word Kevin is looking for in Mandarin is 镬气 (Huò qì) anglicized from Cantonese as wok hei meaning breath of the wok.
Great to see MeatEater back, but it kills me to see so much refined sugar, the worst thing a human can eat, added to beautiful elk, one of the best things a human can eat.

It's not a sauce but lets use soy sauce and fish sauce but its not a sauce. Lets add lime before we make the sauce. I like to add butter at the end to make the sauce, but its not a thick sauce. WTF!!! it's a sauce

I lived in Cambodia for a bit and learned how to make Lok Lak from a Khmer woman. It’s interesting how Cambodia claims this dish. My recipe varies quite a bit but similar elements

Vietnamese and Japanese food are both clean and really good. I appreciate Steve wanting to use as much of every ingredient as possible
So you eat Pho and spring rolls on occasion and you think you’ve had all their dishes. Asian cooking in general is high high in sodium. That’s why a lot of Asians suffer from high blood pressure. This dish is no different. It just taste cleaner because it’s not as heavy and has fresh vegetables.

By far my favourite meat eater episode by a mile. I'm a german (no shortage of wild boar and roe buck) who lived one year in india and also traveled most parts of south east asia. since then i absolutely fell in love with the cuisine (which in india can significantly change by only moving 100 miles) and took it as a personal challenge to try wild meat cooking the asian way. the results differed from disgusting to absolutely amazing. will definitely try this dish! for all who feel the same as me (and are hunting pigs) and love asian cuisine, there is one wild-boardish i would die for: Pandi-curry. Originally from Khurr in India and it's very different from what you might associate with indian cuisine. Preparation is very easy and it actually reminds me of the german "Sauerbraten", just way more spicy...
Absolutely love this cooking content. Would love if you guys did some wild game dishes with an indian twist. Regardless, keep it up!
I am sure this is super good tasting BUT all of the sugar hes pouring in it makes it actually go from something good for you to something not so good for you. I suppose thats why dude is so fat in the first place its not from eating just meat Ill say that for sure. Oh lord even makes it worse when he says they are using a game meat and trying to be mindful about what they eat.... but throws a 1lb of sugar in it and cooks it in seed oil hahahah hilarious.

Steve was clenching his jaw but keeping his cool the second time he brought up the lime juicer. Kevin is educated and very particular. He knows his stuff, but I'm sure Steve held back from saying a thing or two to Kevin about that damn lime juicer 😂.
