    I would imagine that perfuming lion meat with dandilions or some berries would also make a tasty meal. I have a hard time believing that any of the lion meat's flavor came through the bacon, cheese, breakfast sausage, slaw, etc.

    Mountain lion is delicious. Ive tried it. Doesn't need all that. There are several mountain lion and bobcat videos on RUclips and you definitely don't need all that. Its delicious on its own but to each his own

      I agree that the game in game meat is what meat is supposed to taste like! I've eaten many different game meats, exotic and native here in South Texas! Come to find out the that's why I'll take a deer steak over a beef steak every time! Cause of the natural good flavor or game flavor.

    Love the show, buuuuut. This one felt like all the ways to cover up the flavor of mountain lion. I guarantee you that lion flavor didn't come through at all. So many strong flavors mixed around in there. I love lion meat and it has a very distinct and unique flavor that has a place of it's own. But all those dominant salty and savory flavors with swallow it right up and you wouldn't be able to tell the difference between lion and a pork loin. Great looking dish and I bet it tastes amazing.

      The fact that he used pork sausage and cheese to stuff it already did a lot to cover it up. Then he decides to cover it in bacon which will leach the flavor of the bacon onto the meat. I don't eat pork anymore but anytime I order a burger and they put bacon on it I take the bacon off. Guess what though, I can still taste the bacon flavor onto the meat. Now imagine something being cooked with the bacon, that bacon flavor will permeate that thing even more.

    My cousin once got a lion and knew that I liked to cook and gave me a pound of ground mountain lion meat to do something with. I ended up doing a simple Italian meatball mixture with day old bread chunks, milk, egg, parmesan cheese, onion pwdr, garlic pwdr, dried parsley & basil & oregano, salt, and pepper with a bit of red chili flakes for some spice! Cubed up some mozzarella cheese to about 1/2" squares and formed the meatballs around the cheese. Pan fried in olive oil until were GBD all around and then into a 170 degree oven for about 10 minutes just to make sure that all was safe and served as appetizer with a simple marinara sauce. Definitely delicious and even had 2 people that we didn't tell what the meat was that were raving about how good it was. It was cool to be able to make a good use/cook but even better to see that everyone honestly loved it. Like they said, it is alot like pork but I also thought of rabbit as well and was not strong flavored and really kind of delicate considering that it was from one of the only pure MeatEater species that we hunt. If people are throwing this meat away its a crying shame and if there are folks out there who don't want it then they should find people like me who would gladly take it. I do agree with most about this recipe is that there is no way in hell that you would ever be able to taste the lion meat after all of everything that went on. I kinda wish Kevin would have just cut a small trim off of that loin and cooked it up simply to taste/test the meat flavor before totally hiding it behind this recipe.

    This is an amazing recipe that I'm sure anyone (who's not vegan) would enjoy tremendously !! I do appreciate you saying that you would've preferred a mountain lion sausage in order to get more of that flavor. Great recipe none the less :)

      I live in California where we have tons of mountain lions but can't hunt them anymore because of political reasons.
      It is said because I always wanted to go on a mountain lion hunt. I have seen a good amount in the woods and get to hear them mate every so often.

    i would at least think a constant of something like a dusting of flour, brown butter, and sear to temp...or what ever version you prefer to highlight the meat differences would be nice throughout the series, at least as a side segment. there are many shows for chefs to get high on their own creations. sausage and bacon are a staple, but i learned nothing about the flavor of mountain lion or useful ways to prepare other than the temp.

    I had some cougar back strap given to me years ago. I slow roasted half of one in the oven and it turned out great and the rest I cut into minute steaks.

      Over here... Got wild boar, red deer, roe deer, muflon sheep, fallow deer, rabbit, hare, fox, badger, patridge, ducks, pigeons, quail... I would go for red fox, as a lion substite... No need to shoot the cat!! 😊😊😊

    We had mountain lion burgers a couple weeks ago.
    Tasted like ground chicken but more bland.
    Could have used some more salt and seasonings but other than that it was good enough.

    I guess that a nountain lion recipe but seriously make the ML the star not a back up singer. A chef who is unsure of his dish will slather on a ton of sauce or in this case slaw.

    Need to put the lion up against pig comparison sometime. Dude did not want to taste the lion but he is not alone. Friend just got one in my backyard by accident and loved it. Said he would take it over bear all day. Someday I hope to eat some.

    I might give this a try. I killed a big tom this year and I’m not a fan of how he tastes. I need to cover up the tom taste. The female I killed a couple years ago was phenomenal table fare. This tom is kinda gamey.

    Let's see: layers of pork sausage, pepper jack cheese, and bacon. You could wrap up a piece of cardboard and it would taste good with those ingredients. How about focusing on how to bring out the flavor of the meat you harvested?

      Im assuming you didnt watch it? It has to cook to over 165 so it will dry out the pork stops it from drying out if you cook it by its self wont be very good

      @@D_Boone True but the point of the episode was mountain lion. The star of the show really seems to be the slaw with meat somewhere in there. In the end I think his thought of doing a sausage probably would have been a better route.

      @@brianreddeman951 I understand that. It was a good dish though, and I don't see any reason to hate on it just because the wild meat wasn't the main ingredient. This was basically just a fancy way of making sausage or burgers. AKA anything you would cut in fat to make.

    I would just make sausage like real simple. Garlic onion pepper salt maybe nutmeg parsley and enough pancetta (unsmoked bacon) for moistness.

    I feel like that ground sausage would be enough to totally cover the taste of the lion meat. By the end there's no way that meat was done justice.

    Give Janis a pat on the back poor guy. Disappointment all around. You know he was saving that piece of meat like it's the last gold bar in the world and for him to keep it together bravo. Kevin even said it's like pork.... so keep it a simple pork recipe. Learn from it, Love the series. Maybe Kev can make up and send some other crazy wild game back to the Latvian Eagle

      It wasn't doing well. It was dropping views each episode, and they never performed as well as any of the other episodes on their RUclips. Either that was the whole run or the chopped it because it was underperforming.

    I just wish they would have at LEAST just pulled a piece of lion meat out of the middle of the roll and tasted it on it's own. OR just cut one steak off that tenderloin, S & P it, and cook it to temp somehow so they could really share what the TASTE of lion is...

    Horse Meat taste delicious , USA needs to start consuming Horse meat and Guinea Pigs. Felines have an off taste, Mountain Lion , Bobcat , and eastern panther just has that cat urine accents .

    Staying for the Janis energy. But definitely not crazy about this farce of a recipe (no pun intended, as in french farce means stuffing fyi). Reminds me of hunters who shoot wt deer and make sausage out of the whole deer cutting it with beef and pork fat because they think wt deer is too gamey, and then they believe they are eating what they harvested lol. Call me snobby, but as more and more people are interested in mountain lion as meat source in the West, this feels like when chefs in the 2000s went towards molecular cooking because plain old regular ingredient cooking was not cool enough. Kevin Gillespie's take on that was a bit disappointing, and really not honouring the game meat he was gifted. Probably needed a few more attempts and more research before making this video, but whatchagonnado... Social media content needs to be rollin' !

    It’s interesting how people shoot animals just for the rugs. I thought rule number 1 as a hunter or fisherman is if you kill something you eat it. It’s hard for me to justify to non hunters that it’s ethical.
