- Ol Cal, Chef Kevin, and Snort knock off work a bit early one day to hunt some of the last of the season’s Montana pheasants. With a couple plump roosters in hand they return to Cal’s place so that Kevin can show him a classic French dish that transforms the tough to use legs and thighs of the pheasant into a meal fit for a king; or at least a hungry upland hunter.

Kevin always makes a for a great episode, but throw in Cal and you've nailed it. My own cooking abilities hover somewhere between these two guys, so the opportunity to learn and improve is appreciated!
So much better than Turkey Hunting. Nothin like a good bird dog, open fields with water and some woodlands, classic double barrel shotgun and some beautiful & delicious pheasants!

A favorite episode… The way Kevin breaks down the cooking science is so awesome . And anything Cal is in, just fantastic! Perfect match for a hunting and cooking segment.
Hunting over corn and cooking pheasant legs for hours is really making the common hunter think this is the way ;)
Public land pheasant legs, some steak seasoning, cast iron with bacon grease, and finishing off with your favorite BBQ dry seasoning works well also.
The whole point of Meateater is to expand cooking game meat beyond that though, which makes it more fun and exciting to hunt more things. For me at least. Simple is always great too

Holy SHIT! I followed every little step and IT WAS ABSOLUTELY FUCKING AMAZING!!! Everyone was amazed, I had people tell me there were tastes they never experienced. Older people who have eaten all over the world. The women that didn't want any part of it, Loved it!! Thankyou for this video , this dish, this experience! I learned SO much. I will use this technique with other proteins other wines. Absolutely Wonderful!

Love watching you guys hunt, in the uk we unfortunately don’t get much to hunt like you guys in the US but pheasant hunting can be done with slingshots over here much quieter and can take more. But the recipes are ace you guys make

You have to build flavor. Celery is part of the mirepoix with onions and carrots. Love your guys work. Keep it up.

If you are adding lemon juice for flavor as well as the acid consider adding the lemon zest. It adds another level of flavor. Every time I add citrus juice I also add the zest.

I made this for supper tonight in the insta pot. It was amazing even though I got a little heavy handed with the lemon.

Any time I've got athletic bits and pieces, my wife and I reach for the French cookbooks. I get a fair amount of ruffed grouse and those old farmhouse recipes/techniques make for great dishes.

I’ve always felt that meat I’ve procured myself (fish, deer, pheasant, etc) tastes better even with simple recipes (like breaded and fried fish filets) than the same thing in restaurants. Even places that are halfway decent at preparing good food or use ‘fresh caught’ ingredients. And I think it’s psychological, you not only know where the meat came from but you put in the effort to get it. And so there’s what I call the ‘victory flavor’ to it.

Would love to get enough pheasants to can them. Not native to my area any longer. I have only cooked 3 and the hubby drove 3 days to hunt them.
Proper French farmhouse dish! imagine eating that by the fire on a chilly Autumn afternoon. Definitely going into my game dish repetiteur.
The wholy trinity of the game braise, not carrot, celery, onion, “mirepoix” that's the foundation trinity, No it's Mushrooms, shallots and lardons.
Don't forget the garlic. Not many better smells than shallots, garlic, and herbs roasting in butter
