These stuffed Bell Peppers are 100% plant-based (vegan), and so free of milk, free of butter, free of cheese, and free from any animal based products.

INGREDIENTS
🌱 Vegan Stuffed Bell Peppers
1.5 cups rice (280 grams)
5 whole red bell peppers
4 whole tomatoes
1 whole onion
2 cloves garlic
2 tbsp tomato paste
3 tbsp extra virgin olive oil
2 tsp sea salt
1 tsp paprika
1 tsp pepper
1 handful flat-leaf parsley (40 grams)
1 handful cilantro (40 grams)
0.5 handful dill (20 grams)
2 tbsp vegetable bouillon powder
1 litre water for the vegetable broth

Nice I was looking for a new way of doing stuffed peppers.. The girl I date is a vegetarian so thanks..! & The way you put it on the pot instead of the oven my grandma use to do the same thing ☺️ use Puerto Rican style rice it comes out amazing without the meat now🤦

I do almost the same but I use precooked brown rice which again is cooked with the bell pepper. Adding a small table spoon of ground coffee and pomegranate molasses adds a different dimension to the taste 👅

Can you give me an idea of the time/temp that I should cook this at in an oven?
Sure Akansha! You will need to add some extra vegetable broth into the peppers half way through the cooking. Cook at 200˚C / 390˚F for 45 minutes.
