Vegan FRITTATA - no Eggs, no Tofu

    Would you believe me if I told you that this eggless vegan frittata with zucchini, made in 15 minutes with chickpea flour, is just as good as a traditional frittata? Probably not. Because before I made it, I didn't believe it either. This vegan frittata is crisp on the outside, soft and moist on the inside, and for some reason it feels like eating a regular egg frittata.
    🌱 EQUPMENT
    We use non-stick pan 12 inch or 28cm + Immersion hand blender or regular blender (optional - for best results)
    🌱 INGREDIENTS LIST
    For the batter
    130 g (1 cups) chickpea flour garbanzo bean flour
    240 g (1 cups) water
    30 g (2 tbsp) olive oil + 2 tbsp to cook it on the pan
    3 g (½ tsp) salt
    1 pinch pepper
    For the zucchini filling
    1 medium zucchini + ½ cup of water
    1 medium red onion
    1 pinch salt and pepper to taste
    🌱 INSTRUCTIONS
    - In a bowl, with an immersion blender, blend together water, chickpea flour, olive oil, salt and pepper for a couple of minutes till you have a very smooth batter. Set aside.
    - NOTE: if you don't have an immersion blender you can do this step in a regular blender, or you can even whisk the ingredients together with a whisk or with a fork.
    - On a pan add ½ cup of water, a finely sliced onion and sliced zucchini. Cook on medium heat until the zucchini is soft and the water is gone - it should take about 5 minutes. Season well with a pinch of salt and pepper.
    - Add the zucchini to the bowl with the chickpea batter and stir with a fork.
    On a different pan (should be non-stick and clean), add 1.5 tbsp of olive oil, let it warm up for 30 seconds, then pour in the frittata batter and cook on low heat for 5 minutes without touching it.
    - After 5 minutes, make sure the frittata is not sticking to the pan anymore, then flip it upside down on a plate and slide it back into the pan (add ½ tbsp of olive oil to the pan), and cook for another 3 minutes on low heat.
    - Flip upside down on a serving plate and enjoy as is, or sprinkled with some fresh herbs such as parsley, chives, or green onions.

    Any Indian here, thinking, wait did our "Cheela" just get repackaged as 'Vegan Frittata'?😁😁 We love it and it's amazing that Italia Plant Based tried making this. Please do try this one you all! Tastes yum with a variety of dips that we call chutneys but am sure it will taste great with ketchup/salasas as well.

      This is also a vegetarian pancake and can be made with different flours and a variety of spices. I like a plain yogurt topper.

      Yes, I was thinking same, infact I have tried this, like with thick layer baking version in oven with grated potatoes, Veges and vege cheese ,,,I love this, will try in pan too....

    Ciao, ti faccio un sacco di complimenti per questa ricetta semplice ma fantastica. La faccio praticamente ogni settimana e mi diverto a cambiare ingredienti. Ho provato anche a mettere metà farina di ceci, metà farina di lenticchie e devo dire viene molto morbida. Sei un grande!

    Mi piace molto come hai impostato il tuo vlog. In italia si tende a fare video di ricette condite con premesse e parole inutili il più delle volte. Invece la cucina è da sempre osservare ed eseguire restando concentrati. E tu con queste semplici ricette dai un ottimo esempio di come si lavora.

    If you want to give it an " eggy" taste chuck some black salt in there, also helps override the floury taste that you can get with chicken pea flour.

    In India we use chickpea flour a lot (its called besan in hindi) its super flavourful and very versatile.. roast to add thickness to curries or smoky feeling or use as a coat for stuff or this which is called cheela in North India . But myself I haven't used zucchini (not very easily available) before... Will try it.. Thanks for the idea 😊

      I make Cheela using every possible veggies 😉. I just grate some zucchini, carrots , broccoli 🥦 etc . In Besan and it’s done . It taste great 😊.

      As everyone said concept is same. But chickpea flour is different from Besan. Besan is made from kala chana while chickpea flour is made from kabuli chana. I think in abroad they prefer to use Chickpea/Garbanzo more.

      You have just more developed culture for veg.food! I am russian, so believe it or not, we have never had chickpease before:))) I mean there are and were some other alternatives....:)))

    Very nice! Dry roasting the chickpea flour slightly before would enhance the flavour and get rid of any raw feel in the mouth that someone people don't like. Thank you again.

    I made this today and it was FABULOUS! I used kala namak to get more of an eggy taste, but that's the only change I made. I can't wait to try it with different vegetables. It's definitely going to be one of my go-to recipes when I want something delicious and easy. Thanks for posting it.

    Ho scoperto questo canale solo oggi... E ho già preparato le meringhe in versione vegana proposte da voi, sono rimaste davvero buone. Grazie di cuore 🙏 Non sono vegana, ma sarei interessata a divenire, gradualmente, almeno vegetariana, per un ideale animalista, innanzitutto, e in secondo, anche per una questione di gusto, dato che ogni volta che mangio carne (quelle rare volte) non mi piace granché, anzi... Dunque sento di poterne fare tranquillamente a meno.
    Questa ricetta è super interessante e senza dubbio deliziosa, proverò a farla. Ed è incredibile come di aspetto sembri proprio una frittata di uova! Nuova iscritta, al tuo/vostro splendido canale! Complimenti :)

    davvero buona! di solito non amo la farina di ceci perché trovo abbia una consistenza troppo collosa una volta cotta, ma questa frittata mi è piaciuta molto - le verdure nella pastella aiutano davvero. grazie mille nico! 😊

    Years ago, I had a rather moist farinata in a little ristorante in Liguria with asparagus cooked into it. It wasn‘t even labeld vegan, just „farinata all verdure“. I have since unsuccessfully tried to recreate the right moisture/farinata de ceci ratio to get that frittata like consistency. Thanks a ton for the recipe!

    In India we call this Besan ka Chilla. You can put any masala into the chilla and cook in frying pan. We also make veggie fritters with this batter. We eat Chillas all the time.

    this is very similar if not the same of the "farinata di ceci" which is very popular in Tuscany.
