These vegan stuffed bell peppers are easy to make, tasty and fulfilling. You can fill them with your favourite grain and legumes, we show you several combinations below. While there's no meat or cheese, these stuffed pepper are packed with protein and flavour.
INGREDIENTS LIST
5 bell peppers
🌱 For the filling
200 g (1 cups) rice
200 g (1 cups) red lentils
2 tbsp olive oil
1 onion
400 (14.5 oz) canned tomatoes
30 g (1 handful) parsley
½ tsp salt
1 L (2 cups) water
2 tbsp vegetable stock powder
🌱 For the topping (you can use your favorite vegan toppings)
100 g (1 cup) vegan ricotta
100 g (½ cup) soy yogurt unsweetened
1 tbsp olive oil
1 tbsp parsley
STORAGE
In the refrigerator
Our vegan stuffed bell peppers are the perfect food for meal prep as they can be stored in the refrigerator in the pot in which you cooked them and covered with a lid for up to 3 days. Their flavour will be even more intense the day after you cooked them.

I can almost smell the heavenly aroma from here in Texas! Yum!! I’m not able to eat bell peppers so I’m thinking about using a hollowed out zucchini instead. Heyyy! I make a very similar recipe for years! My grandmother taught me! The only difference is that she uses white peppers instead of bell peppers (those are way too expensive in my country) and she stuffes them from the top. Another difference is we use mushrooms (porcini) instead of legumes. But otherwise the recipe is the same. Is this your own recipe, or is it italian classic? 🙂 Bless you for your italian plant based recipes Nico, we send greetings from Czech republic!
Hi Broccolita, thanks so much for the message. It's good to see that in Czech Republic you do a similar recipe. This is my recipe, but is based on what I remember from my grandma's peppers. White peppers are not so popular here in Italy and usually here they put meat and cheese in the filling. But the concept is an Italian classic, yes. ❤️🙏
@@ItaliaPlantBased Yes, the white peppers are slightly bitter and not as flavorful as the bell peppers, they are not popular in here either, but definitely used more for cooking as they are cheap. Most people here would eat them stuffed with ground meat too, but my grandma remembers times when meat was only for rich and so she makes tons of vegetarian recipes. She traveled to Italy too, so maybe she was inspired. I am glad I found your channel! Keep the good work! 🌻🍀

Hope u can explore lots recipe from tempeh that u can mixed with italian food cause for our recipe,half is involve oil😆,so not too much healhty n not in accordance with the concept of healthy that u share in your youtube. (But our original many salad with peanut sauce is great for vegan ppl)

@@liviacotto7647 👍 i reccomend tempeh than tofu,,ppl say that if u eat 1 slices tempeh that mean u eat is 10 slices tofu. If u vegan,try indonesian salad too,our basic is from peanut sauce (pecel,gado-gado,ketoprak,rujak)
