I grew up eating my mom's delicious, Bosnian stuffed bell peppers and to this day think she has the best recipe hands down! But, when I have those days where I prefer a plant based meal, I make these vegan stuffed peppers instead. Add a little dairy free cheese on top and voila! 😊

📌INGREDIENTS:
◾️5-6 bell peppers, any color
◾️1 small eggplant, peeled and cubed
◾️1 yellow squash, cubed
◾️1 8oz package mushrooms, cubed
◾️2 tbsp olive oil
◾️1 medium sized yellow onion, diced
◾️2 large garlic cloves, minced
◾️1 cup organic, sugar free tomato sauce
◾️1 cup cooked rice (I used jasmine thai)
◾️1 tsp salt (more to taste)
◾️¼ tsp pepper
◾️1 tsp paprika
◾️½ tsp garlic powder
◾️¼ tsp cayenne pepper (optional)
◾️½ cup water

Thank you Sara, for this wonderful recipe. I made the stuffed bell peppers today and they came out to perfection! Didn't have zucchini on hand so, I used cauliflower instead and it was delicious. The best part is it's easy to make. Will defintely make this again. It's a keeper!

I agree that green bell peppers are not as sweet: that's why I prefer the red and orange ones, haha!

Hi Sara, My husband and I both like stuffed peppers but I usually make them with meat.I actually have a healthy version that I make with ground turkey breast. I might give yours a try for a change when I don’t want a meat meal either. Thanks for sharing, Dolores 🥰
The Baking Diva Hi Dolores :) We usually make them with ground turkey and cheese or my mom makes them Bosnian style, with ground beef and rice and bosnian seasonings. The Laughing Lion thank you!! So my mom makes it with rice and beef and puts a Bosnian seasoning in it called Fant. Plus various other seasonings and she doesn’t use bell peppers, she uses a different type :)

How did you get all the seeds out of the pepper? I was hoping you would carefully mention that. Thanks.
So sorry! I just cut the top of the pepper and pull out the seed core and wash them. To be honest I don’t mind eating the seeds so I’m never very careful about leaving them but if you rinse the peppers after cutting them, seeds will come out :)
What's a good substitute for eggplant? (I'm allergic)
I would use extra mushrooms or zucchini :)

Looks really good. I got a tip for you though. When you prepare mushrooms you should fry them by themselves in a dry pan on high heat first. It's really important that the pan is dry or the oil or whatever will add a coating to them which will stop them from drying out properly. Then when they're more or less dry (about 1/3 the size you started with, should be pretty quick) you can add in a good bit of oil to re-hydrate them for like 30 sec or so, I like to add some pepper to. The main reason for doing it this way is that mushrooms can become leathery if they don't get to dry out, they sort of get boiled in their own juices instead which tends to give them a not so good consistency. I know several people that don't like mushrooms because they think they're chewy, but this totally fixes that. Nice channel by the way.
