Couple of years ago I drove from Northampton to the Matra museum just to see the Espace because it was so iconic. I basically planned a whole road 10 day road trip around that one exhibit. The whole museum was brilliant. I was expecting to look at the F1 and be bored by the rest of the place but it’s a proper little gem. Loads of history and it’s obviously maintained by genuine enthusiasts, not just someone looking to make a quick buck.
To answer your question regarding the wheels, the answer is: those are exactly as they always were. That's because there were two Espace F1, the one with the wheel dishes, orange lights on the rear spoiler and partial blanking of the front air intake was a static model, the one featured on the video is the fully-functional one...which always wore those Ronal centre-lock wheels.
17:12 Smooth down the straight and just like him saying about how bumpy it was, that was from it binding up taking a corner too sharply, as the tyres were so grippy it wasn't slipping and boucing... you can see it getting air.

In this one you can find the engine cover, it kinda looks like a bubble. They may have LOST the one from the running Espace F1...
Actually spent quite a lot of time around the Espace F1. My father is a long time Renault collector and back in the day when the F1 was at Silverstone and Donnington park on display with other Renault’s he was asked to bring along two of his original mid engined 5 Turbos. Someone indeed did take a minivan racing, Peugeot Belgium built an 806 to SuperTouring spec in the mid 90s (mostly using 406 ST underpinnings, which the 806 road car was a sibling of the 406 road car), to race in the Spa 24h race back when that was a touring car event.
