I am making your Gyros this week! Thank you, Chris! I can’t remember the last time I had a Gyros because I gave up wheat 15-20 years ago due to autoimmune issues. It didn’t dawn on me until I read the comments on your flatbread video that I could potentially enjoy Gyros again! Being half Armenian, and the fact that Greek and Armenian food has a lot of similarities, I’m so excited to have a taste of “home.” Have a blessed week, and I’ll report back on the result! ❤
This looks really good. I am going to mix all of the ingredients up by hand and make a meat loaf....I do not have a food processor....so I will mix it all by hand. I am sure it will taste really good. You inspire me Chris!!! Thanks!!
Hmm, I use sour cream and some dill as well in my sauce. Also, some mint if I can find it. I've not had good luck finding a good mild-tasting lamb though. I take a torch to the top of my loaf before slicing. Also, cut up some and drop them in a skillet to get those brown goodies to form on the slices. :) Another great video.
I just watched the video, and once again, Bravo! It wasn't that long ago that carnivore recipes like this would be unthinkable. I do have one complaint however - with your increasing repertoire of recipes, I have no idea which one to choose tomorrow when I meal prep for next week :)

Looks really good. Spend a little time to grate the cucumber and salt it. Put it in a strainer and let the juice drain out, give it a good squeeze to remove as much liquid as you can, add a little Dill to the sauce. Your sauce will stay a little thicker. I made Gyros last weekend for my husband and the regular pita's fell apart.

Made the gyro meat yesterday, put it in the fridge overnight and the freezer for 2 hours then sliced on my meat slicer. Planning to make tzaziki and flatbread tomorrow and broil the meat to warm and crisp.

So dang good! Both the gyro meat and tzatziki recipes were easy to follow and turned out REALLY well. I used an electric knife to help make thin meat slices. Chris’s recipes have helped shift my mindset from “what I can’t eat” to “what I get to make and enjoy!” Thank you so much for these posts and recipes!!!!
I finally made this! It's great. I don't have a food processor anymore so I used my stand mixer. I didn't get the mixture to a paste but it didn't matter. I made thin slices (I didn't broil them) for my meal prep this weekend at work. Like a lot of commenters, I also put dill in my tzatziki sauce recipe. I'm definitely making this again! Thanks for all of your hard work. I still have to try the flatbread though. lol
I love knowing that this recipe is possible! One day I would love to make this. I probably won’t get around to making a lot of your recipes for a while as I keep things pretty simple for myself. Just cooled the loaf off enough to start cutting. Taste wise it is spot on. My only issue was not remembering I needed a food processor and did not have one. Did my best to really mix the meat week, but the texture isn't as fine as it should be. Next time I will combine the meat ingredients well, then put them thru the finest plate of my electric meat grinder. Maybe even twice. That should do the job... Can't wait to assemble and eat these at dinner

Actually, if you want to take it up a notch, I have some suggestions: 1) Add a little dill or mint to the tzatziki. 2) Forget the lettuce and use fresh sliced onions and tomatoes instead (for the keto version, of course). 3) No rosemary or cumin in the meat. Just 2 teas salt, 1 teas pepper, 1 Tabl oregano, 2 teas onion powder, and 4 cloves garlic (and you could also add 1oz ground pork rinds for texture). 4) And, as another commenter mentioned, salt the grated cucumber and let the moisture drain out before adding to tzatziki. Thanks for all the great recipes, tips, and ideas! 😃👏🥳
As a Greek I applaud you on your method of making this, but with the Tsaziki you want to use fresh garlic and make the sauce 1 day in advance to let the flavors combine.
So I just made the gyros and tzaziki. I used a different flat bread recipe than yours that just had 3 ingredients cause I was feeling lazy. Truth. 😂 But it was delicious and I went carnivore ish for the tzaziki and it was well worth it 😊 Thank you Chris!

Will give your spices a go, i just cant find what i like. However i have got texture pretty darn good. For every 500g of meat, 10g of milk powder and 125g of crushed ice mix by hand, then blend like you did. Bake at a low heat about 120c for about an hour. Then chill, freeze for about 30mins to slightly solidfy, then using a mandolin finely slice up, finely blow torch to char. Justneed to find the right spice blend and chilli sauce recipe.
I made this today. Super easy. Didn't have lamb so I used turkey and beef and it was still delicious. Don't leave the meat in the air fryer too long or u get jerky. It was still good tho 👍
So excited to try this out! It frankly is amazing what you pull off! 😂 Also I have a challenge for you if you’re familiar with and wish to take it on… Deep Dish Pizza! I grew up in Chicago, so this is something my (extended) family would love to eat regularly - it’d be awesome to be able to make a legitimate carnivore version of it. Or if it’s more interesting, another Chi-town staple… the Italian Beef! The bread is so key in that one though, so it might be really tricky.
Hey Chris, The title refers to a piece of electronic equipment that stabilises - a gyro. I think you are in fact cooking a Yiros! Its pronounced 'Yeer os' - its Greek. FYI. A Euro is a currency used in Europe. Great recipe!

Well done Chris, you continue to innovate and improve like no one else. Heres a challenge, the best keto carnivore bread maker bread. The current best keto, as I'm sure you know, uses vital wheat gluten and oat fiber. Whilst this bread always rises and looks great and tastes OK, the texture is never right, too springy? I have tried substituting but the slightest deviation results in bin fodder. So keto bread maker bread is good but not up there with the best and carnivore bread maker bread is impossible right?

I appreciate your effort however I can never figure out why Americans always want to use lamb for gyros. My family is Greek (Efstratiadis) and the best gyros gyros in Greece are pork. I think you did a fantastic job on the tzatziki however you need to use fresh garlic minced
try using pickles instead of a normal cucumber you can even add some of the liquid its stored in ,it is absolutely delicious you can thank me later and you will be grateful trust me i am from the balkans

I made this today. Super easy. Didn't have lamb so I used turkey and beef and it was still delicious. Don't leave the meat in the air fryer too long or u get jerky. It was still good tho 👍

I grew up in Chicago, so this is something my (extended) family would love to eat regularly - it’d be awesome to be able to make a legitimate carnivore version of it. Hey Chris, The title refers to a piece of electronic equipment that stabilises - a gyro. I think you are in fact cooking a Yiros! Its pronounced 'Yeer os' - its Greek. FYI. A Euro is a currency used in Europe. Great recipe!

Well done Chris, you continue to innovate and improve like no one else. Heres a challenge, the best keto carnivore bread maker bread. The current best keto, as I'm sure you know, uses vital wheat gluten and oat fiber. Whilst this bread always rises and looks great and tastes OK, the texture is never right, too springy? I have tried substituting but the slightest deviation results in bin fodder. So keto bread maker bread is good but not up there with the best and carnivore bread maker bread is impossible right?

I appreciate your effort however I can never figure out why Americans always want to use lamb for gyros. My family is Greek (Efstratiadis) and the best gyros gyros in Greece are pork. I think you did a fantastic job on the tzatziki however you need to use fresh garlic minced
