Makes 6-8 servings:
1 medium onion, quartered
1 pound ground lamb
1 pound ground beef
4-5 garlic cloves
2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon cumin powder
½ teaspoon ground black pepper
Equipment: 9 x 5 inch loaf pan
For the Sandwiches:
Pita bread
Onion slices
Tomato slices
Tzaztiki Sauce
Lettuce
Crumbled feta cheese
Preheat oven to 325 degrees Fahrenheit, 163 degrees Celsius.
Place the garlic cloves in a food processor and pulse until very finely chopped.
Add onion and puree until smooth.
Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
Place the mixture in a loaf pan. Compact it as much as possible.
Bake for 45 minutes till 1 hour.
Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan.
Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches.
At this point the gyro slices can be placed in a freezer safe bag and frozen for future use.
To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides.
Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy!

Meat pastes are the original article from Pate to sausages to kebabs - many meat eating cultures figured out that stone grinding meat with aromatics and spices yielded an easy to digest, fully flavored and safe product that is beloved by all. Nice work.

This being Greek American gyro, which is what I've been craving versus the traditional whole meat shaved off the spit style, is EXACTLY what I've been looking for . Thanks, can't wait to try
When I had these in Greece, they called it souvlaki, the meat was pork and it was roast on a spit and carved off right into the pita. It had tatziki, onions, tomatoes, and french fries. So good I could eat it 3 times a day and not get tired of it.
Souvlaki is a dish just like Gyros is. They aren't the same thing, there both different dishes
In Athens and several other places, it's like Shawn describes it actually. The wrap is referred to as souvlaki and the skewer is called a kalamaki, after the greek word for river straw - kalami (before bamboo, river straw wood was used for the skewers).
PS: After a public health scandal with ground meat gyros a few decades ago, the ground meat version is sold as "doner/ντονέρ" in Greece, and therefore it has become less popular.
@@svw3734 Athens and some nearby cities use different names than the rest of Greece. In Athens, souvlaki is the gyro wrap, and the skewer is called kalamaki*(small straw) - from kalami (καλάμι), greek for river straw.
*Originally, the grill masters (in Athens at least) didn't have access to bamboo so they used regular river straw wood to make the skewers for souvlaki, which was called souvlaki kalamaki at the time to differentiate from souvlaki made with a metal skewer that was available in taverns and chophouses and was served on a plate. At some point they started calling it just kalamaki, to serve customers' orders faster or w/e.

Does anyone know the proper marinade or rub for a souvlaki? There is a local gyro shop nearby that has them and they are incredible. I want to try making my own.
I discovered gyros when I lived in NYC in the '80's. Now that I live in WV, fugitaboutit! I never imagined it would be possible to do this at home. Thank you for posting this.

Thank you so much. Until a couple of months ago, my idea of greek food was baklava and spanakopita. The little greek restaurant next to me closed so no baklava or spanakopita so i decided to look for a tutorial. Your spanakopita looked so much like what is was expecting so i made it. Almost a month later we had a greek day, i made spanakopita again and to it i added pita bread, gyro meat, zadziki sauce, salads all of them your recipes. We might not be greek but we discovered we love greek food so thank you so much for taking the time to make the tutorials. Lot of work for me but so rewarding to see my kids eat everything off their plate.

Dimitra, your gyros looked so good, that I had to try it. It made the gyros meat and the pita breads. I has absolutely no issues. They both came out perfectly. I did exchange half a cup of water for milk. I had no issues and they were both delicious! Thanks for the great recipes,

I made this yesterday for my son's birthday, both my son and husband loved it. I also made your tzatziki sauce, which I have made several times before also very good. Making the gyro was my first time, I thought I had compacted pretty good but it had some gaps in the center so few pieces didn't slice well, lesson learned for next time, as I wii use this recipe again to impress my relatives. Dimitra, thank you for sharing this recipe. I was driving about an hour each way to get a good gyro. A coworker shared this with me and told me it was hands down by far the best gyro he has ever had. I of coarse had to try myself. I do agree, thank you again for sharing.

One comment: when I did this I further compacted the loaf as one would a french pate. You know...wooden board and some weights when it goes in the fridge. YUM!

I just made the Gyro meat and it turned out fabulous. I also made the Tzatziki sauce and it will go in the fridge to build more complex flavor. This is a great recipe although I had trouble finding ground lamb meat. Finally found it at Global Foods Market.

I ❤❤❤ this recipe! There's a Greek restaurant not far from me that makes killer gyros, but this is way better... with a smaller price tag! I buy lamb when I can catch it on special, so I always have what I need for this. I've made it several times and it's so yum! Thank you for demystifying this for me.
I've never seen gyros made with mince before, only with slow roasted joints of meat. I like the look of this I have to say, definitely one to give a go :)

I made your chicken shawarma recipe last weekend and it was so delicious that this weekend I decided to try your gyro recipe. Just what I wanted for a nice summer prep idea. Just got a.vacuum sealer to process garden veggies and will definitely use it to put ahead some gyro meat sandwich slices. I use ground venison and lamb since husband and son filled the freezer with last years hunt. Also can use up some of the extra garden cucumbers for the sauce. Thanks again. With appreciation for your no nonsense skilled teaching techniques.🌺👍

I've had gyros in Greek restaurants in New Jersey and it was always beef and lamb on a vertical rotisserie. Here I Florida they always have the meat premade and they just grill it to heat it. Makes it kind of greasy instead of the freshly cut meat from the rotisserie. When in the navy I have gotten what looked like gyros at corner stands for $1.50 each. Here in Florida they charge around $8. One place said the traditional gyro is with only beef! Why would all other Greek restaurants prepare it with veal and lamb if that was so? I will try yours at home.

I can’t find a gyro anywhere where I’m from. I remember there used to be a place in a mall and served great gyros with a ton of meat not those gyro with mostly tomatoes or onions.

Seems more like uk donner meat, I’ve been to Greece several times and theirs is different, maybe layers of pork and chicken thighs
This is closer to the US version of Gyros. Donner is a Turkish version if I remember right and then there is a middle eastern version as well.....forgetting the word for now but they all revolve around the idea of meat revolving vertically on a spit and sliced when you go and order it. They are all delicious. This is just a way to make it at home without a vertical BBQ spit and infrared burners.
