I often make root veggies on the sheet pan. They taste so good after roasting. I do spread mine out over 2 trays as you mentioned, otherwise I won't get a char on my vegetable. They taste more like steamed. I like the idea with the hemphearts for the dressing. Everything looks so good.

I was excited to see root vegetable hash and then you talked about putting it in the fridge overnight but then you added in that amazing looking dressing. I have struggled to make a good vegan ranch dressing but I think your recipe solves my issues. Thank you.
If you’re not salt free I can surely tell you that the absolute best vegan ranch dressing you’re going to find is Plantiful Kiki’s vegan ranch dressing. Even the non vegans would love it and won’t even know that is vegan lol. My son who never liked ranch dressing before, loves Kiki’s ranch dressing! 😋 If you wish I can share the recipe. I am salt free now, so I no longer use the dressing for myself, but it is truly the best vegan ranch dressing that you can use in so many different ways 😊
So much easier to blend your dressing ingredients together and then pour it on the veggies. Also really easy if you get someone else to chop those hard veggies for you, put them in cute little dishes and then all you have to do is combine everything!🤣🤣
I always wonder about that too. When I add dry ingredients AND a wet ingredient to a mixture, I always first stir the dry ingredients into the wet, mix them well, and then add that to the other mixture. Seems to me it would give a better spread throughout the dish. But I never see RUclipsrs do this, and I wonder why.

Good recipe. Maybe add a little olive oil to the mix before baking to help browning? If not, I'd probably prefer to eat it cold.
