Pro tip: You don't need a meat grinder. You can achieve the same goal with a food processor. I do it all the time with my burgers. I use a blend of Black Angus 80/20 and short ribs. It's frigging beautiful!

As a former Shacker, can confirm they use the exact same Martin’s potato buns. Next time try green leaf lettuce! They use Roma tomatoes, which is why they’re so small.

Not gonna lie, the presentation of the burger was EVERYTHING I wanted from this video from the paddies to the fresh lettuce & tomatoes, but it was Batman opening up a can of WHOOOP-ASS on Robin that truly brought the whole thing home. Nicely done gentlemen.
Love the flex with the butter leaf instead of wilty wilty iceberg, but I have to stand up for the tiny tomato cuts, it keeps them from sliding out of the burg.
Can't beat a home made burger. Specifically the summer time when the gardens are putting out fresh tomatoes and fresh onions and lettuce. I buy local fresh beef thats grain fed. It makes a gourmet hamburger. This way you know forsure the quality of ingredients your using. So, melt in your mouth goodness!!
I was working in a fast food joint years ago, and order of condiments from bottom to top was: 1. Lower half of bun (buttered) 2. Sauce 1 3. Lettuce (to keep juices flowing down from saturating the lower bun and it all falls apart in your hands) 4. Ze Meat 5. Ze Cheeze 6. Gherkins, egg, bacon or whatever- additionals (if monster burger) 7. Then top half of bun, buttered, sauce #2 and tomato, packed onto lower tower as above. Thoughts on this process? Since then I always do it this way and the lettuce making a bit of a seal really works well for me. Great show guys! Robin got beat! XD

Dude - I had a restaurant back in the day with a secret sauce. We used house made pickled garlic 🧄 and its brine instead of relish and pickle juice - 🔥
my grandmother didn't usually grind her own meat, but the guy at the meat counter will generally do a custom blend ground meat for you. She would get sirloin and have it ground up for her when she bought it.
I have this theory that you're based in Austin. I've seen you say a few things in some episodes (I haven't watched them all) that suggest you are. IF YOU ARE... go to Jewboy Burgers, then do a video on how to make that burger. Would be incredible. Also I'd love to see you and Chud's BBQ do something if you're here.

The small tomatoes were probably intentional. Slices of big, thick tomatoes tend to be less flavorful unless you picked up some locally grown heirloom stuff. Big commercial tomatoes are bred for shelf life, not flavor. The big slices do photograph better, though.
Maybe just easier to get Roma's in the winter where they're at? If boss says 2 slices of tomato, you don't consider size or thickness, you put 2 slices.

Shake Shack - which I think is very so-so - started in a tiny hut in Madison Square Park that tourists would for unknown reasons wait on line for. It’s meat was sourced by Pat LaFrieda a local meat purveyor. So it’s a NY thing and I’ve never seen a jar of Duke’s mayonnaise anywhere in the region. It’s Hellmann’s all the time, bro.
I’m pretty sure they have a very specific brand of meat from a specific butcher. The butcher also supplies a lot of the top restaurants in New York. I really can’t remember the name or my source but it was a YT video that came across my feed one day. I want to say it had something to do with a large dry aging facility too.

I always use a blend of chuck, brisket, and bacon to cut on cost but not flavor. I also choose to smash them on an old fashioned kettle grill for ultimate flavor plus a grill can get way hotter than my electric stove
If yall get a paint scraper, be sure to take a look at the metal's surface prep. There could be some gnarly chemical on them which get toxic at high temp.

Love it! Recently Ive been pressing real (cooked) bacon bits onto patty. Cooking bits side down first. Finish is a nice crisp under cheese without having to cook bacon strips. Add a shot of worchestershire on non bacon side while cooking. It's better than most. All I need is the griddle pan and I'll never buy another burger!
That size was the medium grinder attachment I have the same set . I find my Kitchen Aid has an easier time if I go with coarse grind first and work it into a medium grind and if I also partially freeze it before hand so it doesn't lose its consistency.
A stainless paint scraper from the hardware store is game-changing if you want to make smash burgers more than once. They're like, what, $15 for a pretty big one?

While I don't think it does as good of a job it is close enough and does not require a new tool and is easier to clean.
@Ahglock I find that it actually does do a really good job. You just have to keep your pieces cold so the fats don't break down.

for burger sauce, I normally like to use a little bit of minced onion rather than the powered - but the bigger part is a bit of Worcestershire

You can get most stores to grind any meat you want. Try asking the employee working in the meat area if they will grind you choice meat.
In order for it to be "authentic" Shake Shack you need to use at least 4-5x more salt.
