Seafood is best when it’s at its freshest, preferably straight out of the water. If you can get fish like Red Snapper or some other similar fish like Grouper or Haddock season it simply and quickly shallow fry it, you’ll have a most delicious entree by itself. Now add a little authentic Sicilian touch with sweet and sour onions and some capers and you have heaven on a dish. Join Chef G.S.
