A lot of recipes aren’t very flavorful because they lack seasoning. So glad you added the spices to make this casserole so delicious!👍😋Jiffy makes the best corn muffins and breads!yum!

Wow Catherine this really looks so delicious !! The noodles , cream soups , and always delicious cheese. With the spices you guys so love added in . My wife uses the Jiffy but adds local honey. It has to be sweet or I won’t eat cornbread. Taste like birdseed to me otherwise. I am from KY believe it or not. Oh, my wife adds blueberries sometimes. Girl! That is delicious, if you haven’t tried!

Here we go --- I'll saute a medium yellow onion -- diced, a green bell pepper -- diced, two stalks of celery -- sliced, and a heaping spoonful of minced garlic to add to the casserole mixture. I'll also add a heaping cup of frozen green peas and carrots -- thawed -- to the casserole. In addition to the diced green chiles (well, sure -- you GOTTA use the whole can!) I'll add a 4 oz. can of sliced black olives to the cornbread topping...and I'll probably throw in an additional 4 to 8 oz. shredded cheddar to the cornbread mix. Hmmm...looks like I'll be making this for my partner this coming Sunday! Thanks, Catherine!

I love spuces & personally like smoked paprika. I'm sure it enhanced the flavor of the rotisserie chicken. Lastly your presentations are wonderful.

I smoke or grill all my chicken. My wife does get rotisserie chicken a Sam’s Club. Can’t beat a $5 chicken. I love cream of mushroom vs your cream of celery. No biggie, just a pref! LOL…

Your video recipe is fairly different from the recipe on your website (16 oz. of cheese or 8oz of cheese? 1 4oz can of chilies or 2 4oz cans?. Which one is right? Thank you.

Hi Catherine, I'm a Subscriber to your channel. I will Definitely be making this recipe. 2 of my Favorite ingredients, Cornbread and Chicken! I made your Potato Salad recipe using the canned potatoes, and I have to say, I was very skeptical at first using the canned potatoes. I will Never make it any other way. No peeling or cooking potatoes. It was Delicious! My husbands Mom made the best potato, but of course she had to peel and cook her potatoes. My husband thought it was his Mom's recipe. I think I’d add a bag of frozen peas or mixed vegetables into the noodle mix. I like to sneak in vegetables wherever I can for my vegetable averse boyfriend

Good morning from Florida 🌞🌴🌸 I was just looking for a jiffy cornbread recipe yesterday. My husband will love the jalapeños, I think I’ll add red pepper to the casserole for color.
I'm definitely going to make this. I'm partial to Krusteaz cornbread if I'm not using it in something like this. I'll try the Jiffy for this recipe.
That looks delicious. If I make it I'll use cornbread OR noodles. Otherwise it would be carb overload for me.
I would use unsweet cornbread instead of jiffy. I find it too sweet in savory recipes.

Too many chilis. I would probably make a creamed corn using the Del Monte Mexi-Corn that has just a little spice and red and green pepper pieces.

Catherine I have this cookbook for such a long time that I don't remember where or when I got it. I agree with you good book but needs help. Seasonings are up to the individual but I use the same as you. Great thing about the book is it can be put together quickly. Just mix it up and bake it. You always find the best. Kudos to you

Catherine, this is so funny. My husband wants salmon. I dont season it or cook it well, Im learning and to be honest I don't like it. We are at the seafood department at the store and Im waiting for him to get the salmon. He said, no I am going to watch that woman Catherine you watch and see if she has any videos and do it lol. I’m not able to eat corn. With whatever vegetable I replace it with, will I need to add more soup or some other form of liquid to compensate for the ‘cream’ of the corn ?
You can add a little more chicken broth.

Add a half of a box to one box or one box of vanilla pudding to 2 boxes of cornbread mix. It’s cornbread to die for
I use Green Giant, Del Monte Cream Corn is to sweet for my liking.

Was wondering if your casseroles can be portioned out for frozen meals for work ?? What to freeze it in for best freshness so I can grab it and go to work and microwave it ???? Also how long in your opinion can keep in freezer ?? I’m just one person but I can’t wait to try your casseroles and eat them for work lunch also..thanks for videos, enjoy learning new things ..

Some of my casseroles can be frozen in individual portions and some you can freeze incomplete and add the final steps when baking. So, I would need to know which casserole you're asking about.

Hey Catherine, I have a question for you. You said "put in two cups of sharp cheddar -that's 8 ounces". Is that a dry measure where it would come out to 16 ounces of cheese? Or is it 8 ounces? I'm so confused LOL. Looks like a great recipe, thanks! Ooh, I forgot. When you use Jiffy cornbread as a topping, I always stir in 2 tbs. melted butter. Turns out great, but that's just me!! Yours looks amazing.
I would check her recipe blog to verify. That package looks like 2 cups to me.
It's a dry measurement, 2 cups of cheese is 8 oz.

Use shrimp instead of chicken and Cream of Shrimp soup in place of the cream of celery. I have used some seafood seasoning (like Old Bay or J&O) and I have used Garlic powder, onion powder, salt and pepper. Rest is the same

I am from Michigan and, Jiffy cornbread was invented 20 minutes from my house,and as far as I know the only factory in Chelsea Michigan.My mama is from Mississippi and she would never ever use it in our house, she said it ain't cornbread it's Johnny cake.She only used white cornmeal.I have made the Jiffy for my husband because that is what he likes.I am like my mama I love my savory cornbread in my iron skillet.I recon we all love what we are use too.And I am 65 years old now and I still don't like Jiffy lol.And I was born and raised and live in this same town my whole life. 🤷🏼♀️
