My Orange and Cranberry Granola - Dominique Ludwig Nutrition

  • This is my delicious orange bejewelled granola with cranberries, dried raspberries and pistachios. The best thing is you don’t need to weigh anything out. It’s so easy!
    You don’t even need to be very precise, you can make this just as you please with any seeds or nuts you fancy, so you can chop and change the ingredients, depending on what you have in your cupboard. You can use more oats if you like, I like to keep it higher protein.
    This is why I love making granola, because it teaches us that we don’t always need a recipe.
    As you can see, I didn’t really weigh anything, but I did use:
    1 1/2 cups rolled oats.
    One cup sunflower seeds.
    One cup pumpkin seeds
    Generous sprinkling of sesame seeds
    Juice and zest of one orange
    A good drizzle of extra-virgin olive oil.
    Pistachio nuts, dried cranberries, chia seeds, dried raspberries
    Method
    1. Mix all the ingredients together in a ceramic tray and pop into the oven for 25 minutes at 160°C.
    2. Turn the oven off and let it cool down completely in the oven. This way it gets super crispy, but doesn’t overcook the seeds.
    3. When it is completely cold add all the extras or the jewels, some pistachio nuts, some dried cranberries, Chia seeds, and perhaps even some freeze, dried raspberries.
    This is a fantastic topping for Greek yoghurt, especially with chopped up orange to add to the orange flavour. The orange taste is very mild, but it’s better than using cane sugar or honey.
    This is a fantastic granola for children too, it’s super easy to make, and you can make it up as you go along!

    🍊 it contains more nuts than oats, which makes it blood sugar balancing
    🍊 it is higher and protein than regular granola
    🍊 it contains more fibre due to the nuts and seeds.
    🍊 it also contains more iron, zinc, magnesium, vitamin E, and vitamins than traditional granola
    🍊 it’s completely beautiful!
