The Sushi Chef: Culichi Town

- Mexican sushi might sound like a made-up term, but we can assure you that it's a real cuisine coming out of East LA (with origins in the Sinaloa region of Mexico). We visit Culichi Town in Bell Gardens, a restaurant considered the leader and originator of Mexican sushi, to see what they are all about. From deep fried crab and shrimp rolls to a live Norteño band to covering almost everything in cream cheese, this is definitely not your typical sushi restaurant by any means. Take note, because their head chef believes Mexican sushi will soon take over the US.

Are people downvoting this because it's 'inauthentic?' Who cares. It looks delicious, and it's not like modern sushi hasn't evolved to adapt to new ingredients and tastes.
+Strand no, people down voted because they are idiots who are trapped in their little cage of retardation.
+Michael Jeremy strong argument ahahahah
+Michael Jeremy I disliked this because I really can't be bothered reading subtitles, left a dislike and turned it off.
Motorhead well that's something else
+Motorhead You prefer dubs? Or you don't bother with foreign language videos?
I actually live in this area. South Gate to be exact. Little sushi spots like this one have been popping up all over. I have had sushi from sushi bars in little Tokyo and fine sushi restaurants in big cities. I recently with to this new Mexican Sushi spot a couple of blocks from my house and I can honestly say that it was the best Sushi I have ever had. One thing people need to know is that they do serve their own twist on sushi by adding local ingredients, but they also now how to make traditional sushi as well. Food is Universal and ever evolving. Don't limit yourself.
In japan sushi is all about using japanese ingredients to make the sushi they like there, but there is no reason why these guys cant make sushi the way they like with their ingredients.
after all when japanese chefs came over to california and started making sushi with local ingredients one of the most famous sushi rolls was born, the world renowned "california sushi roll".
+How To Make Sushi nice to see u here.
Chef devaux you know about fusion, using any ingredient it's ok.
#SayNoToRolls
Actually the "California roll" wasn't even invented in the US, it was invented in Canada...
Exactly.
I guess this for some japaneses people is like "Taco Bell" for mexicans.
I'm mexican but I don't mind "usamericans" or other people making mexican food in their styles.
*Fun fact:* _actually no japanese has complained about this but "americans" (US) are complaining and hating for this._
u:< yea freaking Democrat socialist Retard warriors. . Divide and conquer.
considering they said, where it was originated in mexico. Then brought to the USA is what makes your statement kinda comical. There are so many recipes & u shitted on mexicans with that back hand comment. Taco Bell isnt founded by Mexicans. Unless, I stand corrected? Its practically "boxed food" as most corporations are &controlled by more corporations of distributions.
I’m from Guadalajara and I think it’s pretty rough what we do to sushi here.. you can Pay for good fish just to hide it with a bunch of crap all you want but at least make the rice right.
Holy shit. If you guys are so in love with "authentic" sushi just live in japan. USA is a place where different cultures mix and the food changes along with it. No food should be immune to change just ,cause of tradition or other non sense.
“Just live in Japan” this some braindead shit lmao
I don't get why people get offended by him calling this Mexican sushi. ''Oh that's not sushi, oh that's not mexican'. There are no rules to food people when you find inspiration in two different styles and make it your own it's beautiful. This is Mexican sushi, and it looks damn delicious. I think we people should be more open minded in mixing because the kitchen we call ''authenthic'' is a mix already to start with. :)
Well no, it's like copying one thing and replacing some aspects and attempting to rebrand it as the original.
+Sync Conan It's not trying to rebrand it as original. It's just bringing different food options, like the guy in the video days " you don't have to stick to traditions." i think mixing the two was a great idea, and it is not always being mixed. he made traditional sushi dishes too.
Exactly. Americans also call non-Mexican food Mexican all the time. I don't remember what it was, quesadillas I think, that has no relation to Mexico whatsoever.
Quesadillas are mexican, they call them mulitas two tortillas. I think you're talking about burritos they were invented in the us
+Nora pls he can call it mexican rice rolls, technically u can call a winner a "not loser", and vice versa, but why would you? moreover, the rice is not even sushi standard. and in sushi, the rice comes first, so why cant sushi lovers hate on this?
why are people getting mad? who cares. it's the 21st century. fusion, people! why did no one get mad at Roy Choi who came up with the Korean Tacos.. Japanese people have their own version of hamburger steaks. chill out. These chefs are laughing their way to the bank while making food for people that actually enjoy them. while haters writing comments with nothing in your bank.
+Caron Tan Cheers.
+David cisneros ;)
Agreed; if it's successful, then that's great and more power to them, but it should be called "Japanese-Mexican fusion food", not sushi.
WHOS hating dummy?
Thank you, who the fuck gives a shit if it tastes good and people like it. Old heads 100 years ago probably said the same thing about sushi.
Damn Culichi town on Munchies.
"Compa we made it"🇲🇽🇺🇸
That’s right! Lol 😂
i dont get how people get mad saying "this aint real sushi" but if we were calling this something else and claiming we came up with the idea and not give japan credit you guys would still be talking shit
Honestly, this Mexican sushi is just about as authentic as most sushi that Americans eat. Things like a California roll, or a spicy tuna roll are just as bad as these. American rolls usually have loads of different colourful and sweet sauces, but in Japan, the only sauces used are usually soy based. Also the ingredients are sometimes different. No one uses avocado or tempura inside of sushi in Japan.
There really isn't any reason to get upset about this video and complain about authenticity when you think a spicy tuna roll as authentic.
it's fusion cuisine, I don't think they're passing it off as authentic Japanese sushi...
I thought the only racists and people full of hatred left were old people. I guess I was wrong. Reading the comments shows how many young people still only have love for their own race/culture but none for others. Why can't everyone just appreciate everything other cultures have to offer? And appreciate the mixture of all of them! We are all in this world TOGETHER for a reason. There's no need to hate each other so much! Plus. It's FOOD! Food is awesome and through food, we get to know other people's cultures and incorporate them into our every day lives.
I live in Sinaloa, Mexico, and here you can eat traditional raw sushi (japanese) from japanese masters of sushi, but you can also eat this so called mexican sushi, and let me tell you, both are delicious!
lol so many non Japanese talking about "authentic sushi." Sushi varies in different regions because the ingredients are different. Even in Japan they have different styles of making them. Also, it was the Japanese chefs who brought roll style to America because westerners were intimidated at first by the raw fish presented in edomae nigirizushi. Thus, the origin of Sushi in America is already completely different from the traditional Japanese method. So why bash on this guy for trying something regional and different? I bet if these people saw a non japanese chef making real authentic Narezushi and osaka style oshizushi, they wouldn't even consider it as sushi.
Can you imagine Jiro Ono getting there and having a heart attack after seeing this sushi?
Looks delicious though.
Who cares
Although I like traditional sushi better, I've been to this place and their food is pretty good! Never thought I'd see them on Munchies! Keep up the good work!
though it's not a traditional sushi, still respect for the creativity and this could be in the group of modern sushi and kinda true that not many people in this kind of place would like fish especially raw ones . . .
you guys should really do more sushi chefs episodes its one of the most interesting things to watch on your channel
I’ve traveled all over the world and my personal experience the seafood from the pacific coast of Mexico has the best seafood in the world! You can find fresh authentic Mexican seafood in Southern California like Los Angeles. Reason is because there’s a huge population of Mexicans from the pacific coast living in Los Angeles for example people from Sinaloa Mexico. I’ve also tried seafood all over Mexico and you can’t compare it to the pacific coast. Also one thing I notice is the people from there are very outgoing and very happy people compare to other parts of Mexico. If you ever go to the pacific coast of Mexico or Los Angeles you must try a good authentic seafood restaurant 👌🏼 they have like 10 different styles of ceviche. The Peruvian ceviche has nothing on the Sinaloense ceviche💯
Two of my favorite foods combined in a restaurant... I love this concept
wow, all these people are butthurt over it not being "authentic" yet this is exactly like when sushi was becoming popular in the states, especially california where they made the cali roll to suit American tastes, I don't see this as any different to any number of "fusion" restaurants that are around these days, people adapt to the tastes and styles they are used to, that's just life.
i must say i usually dislike this type of fusion attempts but the other day i had sushi with cebiche in it and it was amazing
I've been here so many times, and it's really good.
the owner of that place is getting richer and richer everyday😂 I'm happy for him and the delicious food they serve
Yup I live close to the Bay Area and culichi town made it up here and everyone that has ate there that I know have loved it and keep going back. 😃
Eel sauce on EVERYTHING!
Looks like something I'd love to try. The flavour profiles seem as exciting as the ambience!
I like the concept. Fusion works, when the ingredients and talent are correct. Here, it clearly is. If it wasn't an 8 hour drive, I'd eat there tomorrow. Thank you for sharing these talented video's. Blessings ChefMike
wow people are so mean in the comment section :/ his sushis are not "traditional" but they still are sushis
+AE OE are you an expert on sushi?
Quincey Z lol i think i misunderstood ur first comment, yeah i agree that it's still sushi, not rice rolls
+purelywild rice looks like shit, its not even glistening, meaning its not season
enough to be called sushi rice. on top of that they still breaded one.
if you watched the sushi chef series, you notice that you dont ever fuck
with the rice, sushi is always rice first
Definition of sushi in English:
noun
[MASS NOUN]
A Japanese dish consisting of small balls or rolls of vinegar-flavoured cold rice served with a garnish of vegetables, egg, or raw seafood.
Oxford up your anusses. Nice to get attacked by a fanboy/girl wagon ;]. I respect his work btw. Its my opinion you fucking ghouls.
I'm shocked, you can't argue without insults:(
Stop 'crying', that this doesn't look like Sushi. There is NO RULES for Food. And you know why? Because Food is like Art. It's all about what People wanne create and what they enjoy. All this 'Japanese-Sushi-Defenders' here, doesn't have to like it or eat it. But we all should respect, what others like to do. I don't eat Sushi, just because I don't like raw Fish. But I am pretty fine with it, when they wanne try out something new, some Fusion or something interessting. Some will like it, some not. It's like looking at the 'Mona Lisa'. Some think this is a Masterpiece. For others it's just a Portrait of a Woman. In the End, we all decide, what we wanne eat and what makes us happy. So why can't you stop 'bitching around', because he combines Sushi with mexican Cuisine. Especially in the USA, a Country with such a huge Viarity of Cultures, this is just something, what brings some People together. This is called: Multicultural! People go to this Spot, because they wanne have a good Time. They enjoy the Dishes or maybe they just wanne try something completly new. Honestly, if I would love Sushi, this would be something, I wanne try out.
Culichi town out here in here in the Coachella valley closed its doors after a few months.
First of all. I was raised in bell garden. I been here once it’s great. Something that I’ll definitely go again. Respect to sushi and how many cultures put their taste
This place is just like "Sushi Loco" with their Mexican Sushi lol. They have two locations, Downey and La Puente.
The cream cheese in almost every roll does kind of give it's own distinct taste.
Nadie.
Thats really creative and looks delicious! Props to him!
That looks gorgeous! Shame that it's hard to eat arranged sushi here in Japan...I really want to try it out.
My mom loved this place and I have heard a lot of ppl that have said the food is outstanding. I need to try it out for my self. I already love Mexican and Japanese food, so I am pretty sure I am going to like it🤗
A mix of Mexican and sushi. Two of my favorite things to eat.
love the merging of cultures! :)
This is actually really good. I tried them before in Arizona. Though it looks different here, its basically just japanese sushi but thoroughly cooked. .-.
Oh I've been there before, it gets so packed sometimes because they have live music. The food is really good though. I always get the sushi.
is this Series still ongoing?
I am not the biggest sushi fan. I just enjoy it. And I think this looks amazing. Also look at the speed he makes the sushi. No waiting 20 minutes for a roll. Granted, it won't be as pristine and precise as Japanese sushi, but I think it would be more than great.
the best sushi is a equilibrium of ingredients used, sometimes less is better
How many Sushi warriors in the comments here are even Japanese?
i'll give you a hint... none of them
I can't believe I live near here and didn't know there was a video for this place.....
This is not The Sushi Chef, it's The Roll Chef.
+ThiRiel Very true mate. That'd solve all this uproar in the comments.
+ThiRiel This is the only accurate comment here. So many autistic weeaboos are up there losing their shit over their own racism and Mexican hate and really exposing the fact that they themselves are ignorant to what "Sushi" is.
+ThiRiel roll is called "maki sushi" so it's sushi. What you think as sushi is actually called "nigiri sushi". So both maki and nigiri are sushi
I live in south korea now. its funny because when i see kimbap it reminds me of those burrito joints . sushi and burritos are quite similar.
my life has changed, I must dine at this place!
next time I go back home..I gotta at least try it cause I love sushi and Mexican food
To everyone in the comments going on about "real" sushi, when I was in japan sushi was also made with egg, nattou, canned tuna and corn. What it really is is do you wanna pay a shit ton of money to see a sushi master prepare it or do you wanna enjoy some good, cheap food. Hell even sushi masters serve tamago sushi.
AHHH!!! My ideal fusion cuisine! Asian/Latin fusion cuisine!!!
interesting; I'm definitely going there
And all of a sudden, everyone is a food expert.
I don't care what you guys call it. It just looks freaking delish
please tell me that there is a segment on Corazon y Miel the next door restaurant as well.
I would love to try that, it looks delicious!!!
What's next? A Munchies on McDonald? Bring your game up
Please make an episode on master sushi chef Hiro Terada! His videos are all over RUclips! By far the most skilled sushi chef I've ever seen.
Damn it's hard seeing sushi eaten with a fork.
I feel like people dislike this new creation because it's Mexican. It's different and a new way to taste sushi components.
Would you like some sushi with your sauce?
This "Sudshi" looks kinda nice, sauce overload. :)
The presentation, the colors and proportions are fucking amazing I have to try it
It looks more like a Korean kimbap because there's not much raw fish in it, it's more meat like chicken and beef or even shrimp, so it's like a mixture of sushi and kimbap Mexican style :D
>Located in Bell
"We're in Bell Gardens"
Shit take all around.
They should've gone to the original culichi town in rialto California. that's where they started.
bell gardens came years after they got established out here
Everyone’s mad this isn’t “ sushi “ but no one talks shit when you see sushi “ burritos “ lmaooo
What the name of the song playing at 2:50
I was fine with all of the sushi until the band started playing I'd be like hey I'm trying to eat no mames lmaoooo
Te falta barrio
I love that cream cheese translates into "queso Philadelphia"! Mind you, I assume that we all know that "Philadelphia" cream cheese was born in New York, not Pennsylvania.
The thing is, I feel like this restaurant is taking the complete opposite approach to "Mexican sushi" to what I would dream of. Rice, nori, and some sort of meat make a great snack at the 7-11, but if you want to combine the best parts of both cuisines, give me a pristine slice of raw fish paired with a complex and fascinating móle!!
This is probably the dopest thing ever
Although this sushi isn't "traditional" (no shit) I find it nice to see that people are making their own renditions, expanding the culture of sushi itself, and enjoying these meals. I don't see any point to hate on the fact that this isn't what you're used to since nobody is forcing you to watch this informative video about a NEW food scene or even DIGEST this food. Times change for the better or worst, depending on you of course. However, using the excuse of "Mexicans say taco bell tacos aren't real tacos'' is not only racist but profoundly ignorant because one person's fallacy doesn't justify you getting to say the exact same thing vice versa about sushi, especially if you know it's incorrect to do so.
they need to open a location here in Vegas!
This is not sushi, this is suchi
Might be far away from tradition and such, but this looks great! Don't get too hung up on traditions, instead make something new and innovative, negative people in the comments!
I'm Mexican and I love sushi. A lot...I'm not digging the rolls simply because of the prices. You are being charged the same price for a prepared roll that has cheaper ingredients. They're just glorified California rolls with Latin additions. I'm glad the business is making it and people are trying rolls. It just seems too expensive for me. I'd rather have sushimi for the prices. I also don't live too far away from this place.
For the record if anyone is curious, Tuna is not Tuna in spanish, its Atun.
like it or hate it, watching this makes me hungry
Don't get me wrong, I think there is always a justification for a restaurant, when it is popular and maybe novel.
However this series is called The Sushi Chef - and honestly I didn't seen any.
Yes, there are "cooks" which are churning out a lot of fusion-sushi, but I could not see anything, which resembles are "philosophy" or what is product driven.
Would have been nice as a different "Munchies / Vice documentary" but as "The Sushi Chef" it is just off topic!
This looks awesome. I hate raw fish but really like sushi. Gotta find this place.
this reminds me of Eastbound and down for some reason.
Not gonna lie, this looks so fucking tasty..
+Kattbjörn Deluxe it is (:
+Kattbjörn Deluxe really? i think its okay. far from sushi but i bet it wont taste bad. but not impressive either
Dynn I dont eat sushi anyway, and besides.. i dont care if its "sushi" or "not sushi"... it's food.. and it looks good.
Kattbjörn Deluxe
well said
i have been there i love the music and the environment. but the sushi is ok i like the traditional better but there there michladas are bomb
Looks so delicious, I don't like to eat raw meat, but what they do is amazing. I would love to try deep fried Mexican sushi :)
Cómo hace La Jaiba rayada que le ponen arriba al Sushi y Qué contiene
interesting
the thing about food is there will always be innovation and people want that
For information chicken maki already exist from a long time in japan you can put anything you like in a maki and even fried it.like sandwitch eat it how you like so its not new just didn't take the time to google it or even search a little bit. -_-
is this restaurant in new York?
"El Sutshi!" lol
I love the idea the only problem I have is I hate family orientated restaurants with bands, if they did this but a bit more high brow in the UK it'd be a smash hit.
looks good, i like it, its more casual, like fast food style
This place is legit ! Don't knock it till you've tried it !
I really want to try this Sushi. I went to Yelp to find out the rating. It seems like only Latinos are welcome. I really want to try your food, maybe you could talk to your staff.
fuuuuuuuuuuck it's like the middle of the night and I'm starving, why am I watching this
I'm definitely going here ASAP. whose down?
yum i want this now!
How do they make hot rolls??
at 7;55 is that vanilla ice? getting his hand rolled up by someone else?
Usually, we don't see mexican restaurant as high class. This might give mexican food the inspiration to be a little "sexy"
This would fit right in with the sushi you could find in Australia. It's not necessarily authentic japanese sushi and reminds me more of korean style sushi but it looks good and is fusion. Mexican sushi looks legit and tasty. Nothing wrong with it from what I see.
